The early gauchos of Brazil and South American countries had no way of preserving meats; therefore, they gathered together in large groups and skewered different cuts of meat from a freshly butchered cow or other animal. As they gathered, they would slowly cook large portions of the meat around a wood-burning fire, seasoning the meats with their own blend of savory spices and bastes. As a result of the slow-cooking and special seasonings carefully prepared by the early gauchos, we are able to enjoy the tender, flavorful cuts of meat as they did, and still do, in Brazilian and South American cultures. Likewise, Guri do Sul’s gauchos patiently prepare, and slowly fire-grill only the finest cuts of seasoned beef, lamb, pork, chicken and Brazilian sausage.
