Gilley’s Bar-B-Que restaurant is open for dinner featuring a show kitchen, views of the world-famous Las Vegas Strip, custom saddle seats at the bar, ambient music and the world-famous Gilley Girls.

We had a 9:15 reservation and when we arrived we were told it would be at least an hour wait! That is 1 hour AFTER our reservation.
Food was dry. And very hot in there.
The food was ok, it sucked! Won’t be back. The salad had a funny taste to it. The half chicken is really small. The Mac and cheese was blan no flavor.
The nachos were incredible. The overall restaurant atmosphere was very nice. It was by far one of my favorite meals on vacation. I am looking forward to going back.

My table of 4 reservation was at 7:45pm. (We are local The other couple was from out of town)
On this specific visit it is 30 minutes to get it a margarita & a Pacifica. When the other couple arrived it took 20 min for them to get a drink order of a Corona & a Modella. It took almost an hour before we had the opportunity to order food. I did notice the manager was seating people so maybe short staffed last night July 3rd, 2021.
I would recommend the bartenders making drinks properly without over serving alcohol in a drink. My margarita was pretty much straight tequila (with my dinner). I’m not trying to get drunk & heavily intoxicated when in a family restaurant. I drank 1/2 my drink. For others they may enjoy the extra pour but not all of us are trained alcoholics. There’s a reason why there’s measurements of alcohol in mixed drinks. Psst… it’s called “Safe Serve”
The week before we ate at this restaurant as a dinner date and even with our reservation we stood outside for over an HOUR in the heat! Everyone coming up ahead of us was sat and we had to go ask “what is going on”. We ended up getting 2 seats at the bar. The hostess found us at the bar and asked if we wanted to cancel our reservation for a table. (What do you think).
This restaurant has great great food. The Gilleys Saloon is a lot of fun. I just wish the bands would play a little more modern country instead of backwoods West Virginia country songs back to back. But I guess it’s a tourist city. People come from all over.
For a good fair deal on food prices family restaurant I would def recommend Gilleys.

We tried another restaurant and was disappointed with luke warm, bland tough brisket. Gilley's brisket was hot, very tender and full of flavor. When in town again we'll for sure eat here again.
The brisket was impossible to eat. Just a chunk of fat with bones. Not recommended. The ribs were good but the bbq tasted funny. Didn’t taste like regular bbq sauce.
Have to say that this is the first sub-par restaurant that we ate at in Vegas. Somehow the kitchen was able to make half our appetizer (onion rings) warm, and the other side ice cold and chewy. When we got our food, the fries were exactly the same way, a mixture lukewarm and cold and chewy. I would have said something to the waitstaff, but they were MIA. We got no drink refills and the only time we saw our waitress was when she took our order, then when she dropped off the bill. I can't think of a single redeeming thing about the experance.
Dinner was good, drinks on the restaurant side not so hot, bar side was better, waitress’s need more athusiam, seem like they were not interested in helping the customers, my waitress and watching the the others around the room, I know we just opened up here but they need to happy they behave a job other than that the bar was great , good entertainment and service
The fries were bland and the pulled pork burrito was bland as well. The wings were pretty good though

Didn’t know how to make a gin and tonic. Drinks were horrible. The food was awful. Staff was very friendly and accommodating.

they also sat other people that did not have a reservation before us cause they were standing outside with us and the gentleman came and told his group to hurry up and get inside he had worked a deal with the staff to get in sooner The food was great ,we also only seen the waitress to take our order and we had to flag her down to get our bill

Portions were a bit too much. Smaller portions at a lower cost would be nice even though the value now is pretty good, just do not need that much food.
Waitress took forever to service us at all points if the meal.

The burger wasn't well done. I sent it back. It was still pink when it returned. Bartender was nice and gave a discount on meal but that's ridiculous
First off, they could have told us before they sat us that they didn't have a kids menu and we would have gone somewhere else. Second, the hostess and servers were completely unfriendly. And third, the food was extremely overpriced and bland. We had to add salt and pepper to EVERYTHING just to make it taste edible. The fries said seasoned fries and yet there wasn't even a drop of salt on them.
Took a long time for food which I’m sure was forgotten then my husband was brought a basically raw steak and my ribs were so well done I could not chew them.

Server was rude and not helpful when it came to menu questions. We ordered the full rack of ribs, they were very dry.
Please bring the following back: the hot pretzel, hot food and knowledgeable staff. That’s all.

Food was horrible I had the rack of ribs they were over cooked the bbq sauce was nasty !! The Mac and cheese was dryer out my daughter had the pulled pork sliders that as well was awe full I was not happy at there
They removed the Country Chicken Fried Steak from the menu. That was my favorite entree. My friends and I were disappointed with the removal and had to settle for other entrees. My friend ordered the brisket sandwich and found the brisket to be a little over cooked. Hopefully when we return they’ll have the full menu back with the Country Chicken Fried Steak.
Being from Texas, this isn't quite BBQ imo. Having said that, the food is pretty good! You get nice large portions & a decent number of options & a cool boot souvenir drink. Not bad.
it was not a good time. the waitress checked on us once. food was not hot. corn was too spicy. meat was very fatty and tough
