Established in 2017 by Executive Chef, Thomas Cauquil and Brewery Director, Vincent De Soyres, Frenchies Bistro & Brewery specialises in creating food and drinks for friends, all in a relaxed, casual, and unique setting, where customers have the option to dine surrounded by brewing tanks.

Leaning on fresh, local, seasonal produce, the duo create all of their products in-house, from smoked and cured meats and hand rolled pastas, to Frenchies' award-winning beers and spritzes.

Thomas and Vince first met at Albert de Mun Hotel and Catering School in Paris in 2005. From there, Thomas went on to work at Michelin star restaurants including Le Violon d’Ingres* in Paris and El Chaflán in Madrid, meanwhile Vince set his sights on Australia, and moved from Ninkasi Brewery in Lyon to the Little Brewing Co. in Port Macquarie in 2010, followed by the Flat Rock Brew Café.

Thomas joined Vince in Australia in 2013, and they transformed their dream into a reality with the opening of Frenchies.

It’s a nice set up and the food was good. It’s Australia so the ingredients were fresh. The preparation was good too. But They did not have the wines on the menu. When we tried to order they had to check. Why not know in advance that it’s out of stock. We were given choices of comparable wines. It happened both for the red & white. After we were served food no one came to check at all and they started closing the restaurant well before we were half way into the meal. No one came to ask for deserts. This has never happened to us until this day. Just bad service. So we asked for the bill and then had to ask twice for the machine to pay.

We enjoy our meal at Frenchies every time we dine here. The Valentine’s Day dinner set menu was so delicious. We wish some of the courses were staples. Drinks menu is really good. The Frenchies beers are great (their pale ale is my boyfriend’s favourite beer and we regularly buy cases of it). I would love to see a more everyday drinking sparkling on the menu. The staff are always lovely and attentive even when they were as busy as they were on Valentine’s Day night. Overall loved our experience at Frenchies for dinner.

Try thr new kinh fish civiche along with my favourite the chicken liver parfait followed by the new truffle sausage with white beans and the new risotto. It was all lovely and we finished with the chocolate fondant 😊
