This was such a disappointing Mother's Day brunch. The food was mediocre at best, some had no flavor at all. The dessert pastries were very limited and we could not tell what flavors they were supposed to be because they were tasteless and the fillings were dry. The service was horrendous. Our server kept disappearing, especially when it came time to pay the bill. He finally dropped the bill off and did not seem to be planning on returning until we asked the bartender to get him. Overall we were very disappointed.

This place was awesome! Great service, the food was very tasty and very nicely sized portions. The ambiance is relaxed and fun, not too noisy with music piped in, but loud enough that it’s not awkward. The overall value is fantastic. Especially for a downtown restaurant. We will definitely be back!

Food was great, wine was great. Service was sub par. Our waiter was super nice but seemed like she might of been new. Could of played the music a little louder, couldn't tell if the restaurant was modern social place or more of a quite intimate place. Would recommend though.

We dined at the Former Saint Craft Kitchen during restaurant week, both the food and the service was not up to the standard of a fine dining establishment. The prices were exactly the same as the standard menu, defeating the purpose of restaurant week. There were no specials offered on wine from our server whom we had to chase down to get refills on water or another glass of wine. All the appetizers except for one was cheese, maybe a meat and cheese plate would have been a better fit. Unless you are from Wisconsin, I wouldn't consider cheese curds fine dining. When booking the reservation, I wasn't aware the Former Saint was a hotel restaurant (this should be disclosed on the description). This establishment is what I would expect from a hotel restaurant when I travel for business, however, this place should not be considered fine dining in comparison to other restaurants in Downtown Denver.

The booth we were seated in had crumbs on the chair. The chicken that I ordered was overcooked and dry. It was restaurant week and the bill was $160 for 2ppl. Overpriced for what we ate.

We enjoyed our time at the Former Saint Craft Kitchen. The waitress was nice and attentive. The appetizer and salads were delicious. Unfortunately, the drinks were extremely weak especially for the price and the the squash in the squash risotto wasn't even cooked.

One of us had the restaurant week menu and it was unsatisfactory. The salad was was inedible. The leaves were not cut, very little dressing, etc. The entree short ribs were fine, the accompaniments were not good. The person who ordered from the regular menu had a good inner...the regular menu was good. If the restaurant cannot do a satisfactory restaurant week menu, they should not participate.

The food was excellent and the flavors were very complimentary. We enjoyed the short rib and the butter thyme chicken. The portions were on the small side for the cost. However the tastes were wonderful. Kyle and Ester were very attentive and kind. The entire kitchen is visible which was cool. It looked clean, well organized and calm.

We ordered the chicken and it was very dry. For the price point the food amount was very minimal. We asked the waiter what she recommended and she said the chicken and the bass were really good. Overall we were very disappointed mostly on the dry small chicken with no sauce.

Food was ordinary. It was loud and ambience was not something i wanted for my valentines day date.

Vday! Big disappointment! Got put in the back room which was disappointing because the interior was cool in the main restaurant. Food was cold, service was mediocre. Ehhh, to many other restaurants to try, don’t know if I would go back or recommend.

Wonderful experience! Great service and care and attention from our server Jordin. My husband and I have strict dietary restrictions which include gluten, dairy, and egg. Our meals of scallops and chicken were delicious and safe! Even had pomegranate pie for dessert- a real treat!!

Service was great, the whole crew worked together as a team assisting each other which made the experience great. Food was also very good. I would recommend to a friend and would most definitely eat there again.

They were able to accommodate a group of 7, no problem. They were out of a few entrees and a few deserts. Took a while for the food service and to get the bill squared away.

Service was SO slow for lunch. It took over 40m to get a burger. The lunch menu is very limited. I cancelled my other lunch reservations. I will say that Breakfast was good and much faster.

Chose this due to attachment to our hotel. Eclectic and delicious menu. My daughter had a burger and I had scallops. Both perfectly prepared and delicious. We also shared a charcuterie plate and a mixed greens salad. Attentive service. Nice course spacing. Great views of the Blue Bear and the Colorado convention center. Dessert choices ho hum.

We went on New Year's Eve and the place was busy! Our server was great but she was running hard! She definitely needed help! We are easy so it wasn't a big deal for us but it could have been a problem! The food was just ok, definitely don't go if you aren't up for trying new cuisines and if you are looking for "normal" food. The cheese curds were amazing though! Pretty much the only "normal" appetizer we could find. The drinks were also AMAZING!!!

Unfortunately our server started out wonderful, once our food order was taken she disappeared and it took forever to get our food. When we got it, it was cold and burgers were undercooked. The restaurant only had maybe 10 tables occupied. If the place was packed, I could understand the wait. The manager tried to make it up to us, but it still wasn't worth it. This is not up to Hyatt standards.

The waitress seemed new and flustered. The food came to the table quickly and was only luke warm. The flavor was good and a decent price for Prime Rib. We will try again when not so many Holiday Parties.

The apple variations salad is a sublime dance of apple and cheese, lovely and soft flavors to open the palate... then the local bass was delicious! A good cut of fish with a lovely stew, perfect for the cold weather. I am in love with their use of fennel and sweet potatoes! Topped off with a flourless chocolate dessert, and my taste buds were in heaven!

it was very nice. The only complaint we have is in regarding the chairs. They are very uncomfortable.....both low and no back. My Dad always said if you have uncomfortable chairs, people wont stay long. Other than that we loved the food and service.

Had a great pre-theater meal here. The space is beautiful and the food is excellent, especially for the price point! Great wine list, as well. And you can take your drinks anywhere in the hotel, including Peaks Lounge on the 27th floor for great post-dinner views! Usually hotel restaurants are a little boring, both in food and decor, but not Former Saint. Will definitely be back!

Was there for Thanksgiving dinner. Absolutely delicious!!! The server, Mike, couldn’t have been any better. He was very attentive and polite. I was a little skeptical at first about how dinner would be here for a Thanksgiving meal. They super exceeded my expectations.
