The waitress seemed new and flustered. The food came to the table quickly and was only luke warm. The flavor was good and a decent price for Prime Rib. We will try again when not so many Holiday Parties.
The apple variations salad is a sublime dance of apple and cheese, lovely and soft flavors to open the palate... then the local bass was delicious! A good cut of fish with a lovely stew, perfect for the cold weather. I am in love with their use of fennel and sweet potatoes! Topped off with a flourless chocolate dessert, and my taste buds were in heaven!
it was very nice. The only complaint we have is in regarding the chairs. They are very uncomfortable.....both low and no back. My Dad always said if you have uncomfortable chairs, people wont stay long. Other than that we loved the food and service.
Had a great pre-theater meal here. The space is beautiful and the food is excellent, especially for the price point! Great wine list, as well. And you can take your drinks anywhere in the hotel, including Peaks Lounge on the 27th floor for great post-dinner views! Usually hotel restaurants are a little boring, both in food and decor, but not Former Saint. Will definitely be back!
Was there for Thanksgiving dinner. Absolutely delicious!!! The server, Mike, couldn’t have been any better. He was very attentive and polite. I was a little skeptical at first about how dinner would be here for a Thanksgiving meal. They super exceeded my expectations.
Great ambiance, food selection, and service
Great food! Omelet was amazing, service was horrible. It’s almost as if they were not allowed to smile. My server was pushy and you could tell she wanted me out. Frustrating, since the food was pretty good!
The food was outstanding! The table we sat at had a couch and was so comfortable and cozy. A perfect date night and some of the best food I have ever had! Highly recommend!
Food was reasonably priced but pretty boring.
Warm beet salad with Feta was just that, a beet cut into quarters and cooked, sprinkled with cheese crumbles.
Roasted Half chicken lacked flavor.
Seating at the tables is on soft love seats, so you sink down and the tabletop is level with your upper chest, not so great for dining.
Could be a nice restaurant buts needs a menu redo and chairs.

Cocktails were overpriced for a meager volume. Service was terribly slow even though Restaurant was nearly empty. Food was unremarkable for the price. Would not be surprised if restaurant is gone in next 6 months, rightly so.

Former Saint had some great ambiance and with all the windows, they let a lot of natural light in. I think their dishes are really creative and flavorful. Great restaurant for a business lunch.
The local bass was amazing! The chicken sandwich you boyfriend said was average. The decor is trendy. Our drinks took a long time to come out but our waitress was very nice and helpful. Average prices
thankfully we had time for a leisurely dinner as service was VERY slow. The food was good but I would not say amazing and so the prices seemed a bit more than I would have liked. I'm ok paying a lot in a nice restaurant for an amazing experience with fantastic food. However, here I felt a little overcharged for mediocre service with just slightly above average food.
Food was amazing and presentation was on-point.
Came here before a show, it was maybe 35% full. Really nice ambience. Server came by one time to get drinks and we never saw her again (we did mention we were catching a show and had about an hour and ten minutes till we had to leave). Finally had to wave down someone to take our order, food came out with five minutes to eat before we had to leave. No idea why it could possibly have taken 45 minutes to prepare after putting it in. Food was tasty but service was so disappointing! They attempted to remedy it by giving us a hefty discount which was appreciated. In a rush, forgot my credit card and they called to let me know the next day. Said i would come by over the weekend to get it...get there and they had destroyed it!? What a bad experience overall. Unfortunately, can’t recommend.
Customer appreciation dinner
Very creative and beautiful presentations. However, my entree was overcooked and dry.
I love trying new restaurants and was excited to try this one based on some delicious looking photos of their food I saw on Instagram. I’m sad to say that the best part was sitting on comfy couches while dining. The food was not very good and there were loud TVs playing over us with football and obnoxious commercials. Our server did a good job but based on the quality and experience we were very disappointed and felt like it was a waste of money. Definitely do not recommend. I make many more high quality meals in my own kitchen for much less than 100! Even the cocktails were sub-par. Too bad but I should’ve known when I realized it was a hotel restaurant.
I have been wanting to try Former Saint for a long time since I read their "our story". I felt connected because my kids went to St. Mary's. The second reason for going was a Brunch Buffet was on the menu and I thought this would be nice before the DCPA Sunday matinee.
However, we discovered breakfast is only served until 11am. (I mean ... who ends brunch at 11am on a Sunday!) Nowhere on the website's menu did it indicate an end-time. Disappointed, we had to turn our appetites to the lunch offerings.
My husband had fish and chips which were awesome. Great crunchy breading, yummy flavors. I had the Globeville Hot Chicken. Again, flavorful and crisp. Had it with a side salad and the house dressing was very good too.
Food was great but service SUCKED!!! The restaurant was not busy at all (maybe 5 other tables) but our server kept disappearing -- not attentive at all. My husband finally told him we were going to the show and didn't want to be late. This made him hustle but only for a brief moment.
I ordered a glass of wine after our food arrived. After 5 minutes I noticed the bartender was just moving things around, slowly cleaning the bar. Suddenly I saw our server rush out of the kitchen towards the bar, grabbed a wine glass, and apparently asked the bartender to pour the wine. He obviously forgot. Seriously? We were his only table and he immediately forgot after I ordered?
The food was delicious, from the appetizers, to the entrees, to the desserts. The ambiance is a little weird - since it's in a hotel, it feels as if that's where all the guests go to eat their complimentary breakfast or something. There's no real distinct designation between the start of the restaurant and the start of the hotel lobby, so that was a little weird. Overall though, the food was great, as was the service. I highly recommend it!
The scallops were super salty and the burger was over cooked and poor quality meat. This is basically a hotel restaurant and not someplace one should eat unless there aren't any other options available.

Service was fine though waiter was a little confused about our order. Bartender was talking to a waiter on other side of restaurant. Not necessary. The atmosphere was great. I liked the decor very much. I probably would not go back, because there are other restaurants with better food for better prices.

Had show tickets for 7:30, so I booked a reservation for 5:30. We got there on time, but had to go back up to the host stand after almost 30 minutes because a waiter hadn’t been by yet to take our drink order. The food was quick, but any drink orders took 15-20 minutes to get to the table. They weren’t even busy. Ended up having to ask for the check while we were still finishing everything up and run to get to the theater before the show started. Not sure if I will be back, but I know I definitely won’t go back before a show.
When we arrived at the time of our reservation, they said they were closing (without even an apology), so we left. Beware!
I loved the fact that i was able to find a vegan option in the menu. However the kale in the dish wasn’t fresh, it was yellow and wilted.
The restaurant is nice, overall nice menu and good service.
weekend trip to Denver and were staying at the Hyatt. Stephanie was great, and attentive to us. The snack attack was yummy. Enjoyed the chocolate covered bacon. Our drinks were perfect and the dinner was great. The prime rib was huge and we ended up sharing. Would have loved dessert but we were stuffed. Would definitely recommend and go again.

Lovely service with knowledgeable waitstaff. Food was solid—interesting flavor combinations but not too crazy—with exception of skin on duck breast. The meat was perfectly prepared, but the skin was not crisp and still very fatty.
You'll find the same selection at a holiday in....embarrased that I brought my Mom here for mothers day
