Here Former Saint chefs tempt with adventuresome, Colorado tastes and experiences, giving a nod to the bond shared by food and spirits. Copper piping from a glass enclosed keg room draws local craft beer on tap to the center, focal-point bar, back dropped by a Denver Urban meets Colorado Wild locally inspired 16 foot mural. I love trying new restaurants and was excited to try this one based on some delicious looking photos of their food I saw on Instagram. I’m sad to say that the best part was sitting on comfy couches while dining. The food was not very good and there were loud TVs playing over us with football and obnoxious commercials. Our server did a good job but based on the quality and experience we were very disappointed and felt like it was a waste of money. Definitely do not recommend. I make many more high quality meals in my own kitchen for much less than 100! Even the cocktails were sub-par. Too bad but I should’ve known when I realized it was a hotel restaurant.

I have been wanting to try Former Saint for a long time since I read their "our story". I felt connected because my kids went to St. Mary's. The second reason for going was a Brunch Buffet was on the menu and I thought this would be nice before the DCPA Sunday matinee.

However, we discovered breakfast is only served until 11am. (I mean ... who ends brunch at 11am on a Sunday!) Nowhere on the website's menu did it indicate an end-time. Disappointed, we had to turn our appetites to the lunch offerings.

My husband had fish and chips which were awesome. Great crunchy breading, yummy flavors. I had the Globeville Hot Chicken. Again, flavorful and crisp. Had it with a side salad and the house dressing was very good too.

Food was great but service SUCKED!!! The restaurant was not busy at all (maybe 5 other tables) but our server kept disappearing -- not attentive at all. My husband finally told him we were going to the show and didn't want to be late. This made him hustle but only for a brief moment.

I ordered a glass of wine after our food arrived. After 5 minutes I noticed the bartender was just moving things around, slowly cleaning the bar. Suddenly I saw our server rush out of the kitchen towards the bar, grabbed a wine glass, and apparently asked the bartender to pour the wine. He obviously forgot. Seriously? We were his only table and he immediately forgot after I ordered?

Disappointing experience.

The food was delicious, from the appetizers, to the entrees, to the desserts. The ambiance is a little weird - since it's in a hotel, it feels as if that's where all the guests go to eat their complimentary breakfast or something. There's no real distinct designation between the start of the restaurant and the start of the hotel lobby, so that was a little weird. Overall though, the food was great, as was the service. I highly recommend it!

The scallops were super salty and the burger was over cooked and poor quality meat. This is basically a hotel restaurant and not someplace one should eat unless there aren't any other options available.

Service was fine though waiter was a little confused about our order. Bartender was talking to a waiter on other side of restaurant. Not necessary. The atmosphere was great. I liked the decor very much. I probably would not go back, because there are other restaurants with better food for better prices.

Had show tickets for 7:30, so I booked a reservation for 5:30. We got there on time, but had to go back up to the host stand after almost 30 minutes because a waiter hadn’t been by yet to take our drink order. The food was quick, but any drink orders took 15-20 minutes to get to the table. They weren’t even busy. Ended up having to ask for the check while we were still finishing everything up and run to get to the theater before the show started. Not sure if I will be back, but I know I definitely won’t go back before a show.

I loved the fact that i was able to find a vegan option in the menu. However the kale in the dish wasn’t fresh, it was yellow and wilted.
The restaurant is nice, overall nice menu and good service.

weekend trip to Denver and were staying at the Hyatt. Stephanie was great, and attentive to us. The snack attack was yummy. Enjoyed the chocolate covered bacon. Our drinks were perfect and the dinner was great. The prime rib was huge and we ended up sharing. Would have loved dessert but we were stuffed. Would definitely recommend and go again.

Lovely service with knowledgeable waitstaff. Food was solid—interesting flavor combinations but not too crazy—with exception of skin on duck breast. The meat was perfectly prepared, but the skin was not crisp and still very fatty.

It certainly would have helped to know that this restaurant is located in the Hyatt Regency. We were seated promptly, but were invisible to the wait staff who bustled by us with no acknowledgement. Finally, we moved to the bar where we were warmly greeted by the bartender. Our pastrami sandwich was outstanding as was our salad. We watched the tables around the room and noticed many frustrated diners. Gotta say the weight staff did not appear to be very well coordinated. It's too bad that the table service is not good, because it will prevent us from meeting friends there. We will return to the bar!

Drink were great, service and food as well. Very cool architecture and tap lines for beer. Very unique menu, not your standard American food which was refreshing

The food was very good but the service was terrible. It wasn't very busy, but we saw our waitress twice in the 1 1/2 hours we were there. It took over an hour to receive our food. We had to ask other employees to check on food and find our waitress.

Overpriced, overcheffed food in a weird setting. We had an issue with almost everything we ordered except the bass crudo which was really amazing (and the only thing not actually cooked). Would not go again.

Not good. Disappointed. Drinks ok. But super expensive for mediocre. Service was very disappointing. The Madre tried to serve our meals before our appetizers...I said it was fine I rather it be warm than sitting under a lamp but he took it away and said it was for a different table...it was not so yummy when it arrived. Unlikely to return. Typical hotel place...

Extremely disappointing. Took a work group of 9 for dinner. Not only were they out of 1/3 of the items on their menu, including different drinks but they took it upon themselves to substitute drinks without telling us. Service was slow. I understand being busy for a convention but you would think they would comp a few drinks or a dessert. No, charges us full price. Sadly we are locals and we won’t be back.

I’d give it a zero star if I could. TERRIBLE service and sooo slow - I had to go to bar to get drinks twice. Mike was the worst server ever.

Had reservations for six people, called to inform them we were running late, no problem. Meet the hostess she recognized that we had spoken 3o minutes before sat us with no hesitation for what I considered a fantastic meal. This is a restaurant we will be going back to. Thanks to all the staff.

Service was great! Loved the Cesar kale salad and the apple/fig bread pudding dessert ! The tortellini was mediocre. Great ambiance and it was super quiet because there wasn’t but 5 other humans in the restaurant.

Great for drinks and food and business or business casual... Even casual. But it's not a place for a relaxing evening dinner for two. I actually would have rather been at the Peaks lounge, which are from where the photos on open table show. Peaks is 27th floor and Former Saints is ground level. Breakfast, however, at FS was a great experience.

I wish they would serve Sunday brunch instead of breakfast till 11, then lunch. That being said, I had the beet salad. It was beautifully prepared and the flavors were excellent. The serving was small so I ordered toast on the side. The restaurant is very large and nicely decorated, but not at all intimate. Service was very good. Convenient to get to a DCPA afternoon performance.

We celebrated my mother's birthday at Former Saint and had an absolutely wonderful experience. When you walk in you're immediately drawn to the copper pipes above the bar, it was so beautiful. Our waiter was friendly/upbeat and was making jokes back and forth with us through the evening. He also recommend a few things that we ended up ordering and loved. Our drinks were fantastic and the food was delicious. Our group has some specific dietary needs and the menu offered something for everyone without having to make changes/substitutions. Overall, we had a memorable experience and would absolutely recommend the Former Saint!
