The food was very good but the service was terrible. It wasn't very busy, but we saw our waitress twice in the 1 1/2 hours we were there. It took over an hour to receive our food. We had to ask other employees to check on food and find our waitress.
Overpriced, overcheffed food in a weird setting. We had an issue with almost everything we ordered except the bass crudo which was really amazing (and the only thing not actually cooked). Would not go again.
Not good. Disappointed. Drinks ok. But super expensive for mediocre. Service was very disappointing. The Madre tried to serve our meals before our appetizers...I said it was fine I rather it be warm than sitting under a lamp but he took it away and said it was for a different table...it was not so yummy when it arrived. Unlikely to return. Typical hotel place...
great location near hotels and the Colorado Convention Center
Extremely disappointing. Took a work group of 9 for dinner. Not only were they out of 1/3 of the items on their menu, including different drinks but they took it upon themselves to substitute drinks without telling us. Service was slow. I understand being busy for a convention but you would think they would comp a few drinks or a dessert. No, charges us full price. Sadly we are locals and we won’t be back.
I’d give it a zero star if I could. TERRIBLE service and sooo slow - I had to go to bar to get drinks twice. Mike was the worst server ever.
Had reservations for six people, called to inform them we were running late, no problem. Meet the hostess she recognized that we had spoken 3o minutes before sat us with no hesitation for what I considered a fantastic meal. This is a restaurant we will be going back to. Thanks to all the staff.
Former Saint lives far outside the ideas one holds of hotel restaurants. We tried it for Restaurant Week, and will happily return.
Service was great! Loved the Cesar kale salad and the apple/fig bread pudding dessert ! The tortellini was mediocre. Great ambiance and it was super quiet because there wasn’t but 5 other humans in the restaurant.
Good contemporary options. Very tasty. Excellent old fashioned cocktail.
The service was really slow. The food was good. If they can speed up the kitchen and bar, I’d recommend it to a friend.
Great for drinks and food and business or business casual... Even casual. But it's not a place for a relaxing evening dinner for two. I actually would have rather been at the Peaks lounge, which are from where the photos on open table show. Peaks is 27th floor and Former Saints is ground level. Breakfast, however, at FS was a great experience.
I wish they would serve Sunday brunch instead of breakfast till 11, then lunch. That being said, I had the beet salad. It was beautifully prepared and the flavors were excellent. The serving was small so I ordered toast on the side. The restaurant is very large and nicely decorated, but not at all intimate. Service was very good. Convenient to get to a DCPA afternoon performance.
Food was pretty good, my chop a bit tough. Very nice waitress.
We celebrated my mother's birthday at Former Saint and had an absolutely wonderful experience. When you walk in you're immediately drawn to the copper pipes above the bar, it was so beautiful. Our waiter was friendly/upbeat and was making jokes back and forth with us through the evening. He also recommend a few things that we ended up ordering and loved. Our drinks were fantastic and the food was delicious. Our group has some specific dietary needs and the menu offered something for everyone without having to make changes/substitutions. Overall, we had a memorable experience and would absolutely recommend the Former Saint!
Chilly by the windows. Think they should ask first before seating anyone next to a wall of windows in the winter. Loud, but we were there at 6pm with a bar close to the dining room as well. Service wasn't all that great, she was going to ask the kitchen a question for me before ordering as she didn't know the answer and completely forgot to ask. We asked for ketchup and it took so long my husband was done with his fries when she brought. Hamburger was good, so was my husband's reuben. We had breakfast there the following morning and it was very good. Omelot was great, the fruit was delicious. Service was better, seemed as though they had more staff for breakfast than for dinner.
Very unorganized and slow!
For the price paid, everything was somewhat mediocre. The handcrafted cocktails were somewhat of a disappointment also. 1864 Manhattan had too much sweet vermouth and bitters which totally overpowered the taste. Bitters was also too prevalent in their Old Fashioned. While the location was convenient, the experience left us underwhelmed.
Loved the ambience, the friendly and attentive waiters, and the delicious food!
My experience at Former Saint was not very good. The service was agonizingly slow -even though we were one of only three occupied tables in the entire restaurant at noon. The food was good but overpriced. Not sure if this is worth a repeat visit.

The food was amazing and my daughter and I shared the ravioli braised short ribs. The selection of wine and food is really good as well as the prices. I would recommend this just because of the wide variety of taps.
My husband and I were staying in the Hyatt and decided to try Former Saint because it was 10 F outside. To our delight the food was amazing, service excellent, and beautiful decor. Would dine again, even if it’s warm outside.
This will be a very good restaurant once it gets through the growing pains of a new restaurant. Good interesting food, great beer, friendly service, but the service could have been faster.
