There are a few winemakers that changed the course of my career. It's been more than a decade since I first sipped a glass of Elisabetta Foradori's wine, and while I didn't then have the vocabulary to describe the focus and intensity I was tasting, I was captivated by it's sense of honesty. I couldn't have known how deep the rabbit hole of natural wines would turn out to be, but all these years later Foradori's wines are still top among my favorites. It's gratifying (and sort of an honor) to offer a five course meal featuring Foradori wine, and I cant think of anyone better than Eric & Alycia to create dishes that will do these wines justice.
