With Chef Matthew Blau at the helm, Fireworks Restaurant in Brattleboro, Vermont is taking Italian food to new heights. The menu is eclectic, offering Portuguese style spaghetti, a four onion pizza and a miso and brown sugar planked salmon. The philosophy behind the Fireworks’ menu is to use each ingredient in just the right way, bringing out a specific flavor that accentuates the dish as a whole. At the bar, the list of cocktails includes traditional favorites including a Fireworks mojito, and a few surprises. Try the bacon Old Fashioned, made with bacon-infused bourbon, maple syrup and orange bitters. Other house specialties include the Earl Grey MarTEAni, and a pomegranate gimlet.
