The concept behind Fette Sau is to exist as a living love letter to all things barbecue. Not tied to any particular style of cooking or region, it will take a traditional meat from Spain, season it with Caribbean spices, and smoke it over logs of American hickory. This blending of techniques and ingredients creates a wholly unique flavor on the plate every single time. Fette Sau's menu is as straightforward as it gets. Meats are listed and ordered by the pound, and every order comes with two sides. The menu changes frequently, but the staples include brisket, free range chicken, ribs, pork belly and pork shoulder.
