Since we opened our doors in 2001, this has been a student operated restaurant located inside of the Illinois Institute of Art – Chicago and was originally known as Backstage Bistro. It is the capstone course for our culinary students. Evolve Bistro, with the help of AI’s talented instructors, introduces the students to operating a full service dining establishment. During the eleven week program, students rotate through various positions in both front and back of the house. Evolve Bistro has taken a more contemporary approach to menu and service style. Throughout each quarter we are pleased to introduce you to foods and flavors from around the globe with a small plate concept. You can choose either of our listed menu items A la Carte OR choose any three for one price. The students and instructors of Evolve Bistro are dedicated to making this the best dining experience possible. We hope to see you soon!

The venue was difficult to find but we’re glad we stuck with the reservation. We loved the experience. The 3 selections for $10 is a really fun concept, and makes for a very enjoyable meal. The menu changes with the seasons and the semester.

Seeing the students run he restaurant is always a pleasure. You can see their progression with each visit. The food is always fantastic and it’s so cheap! Fabulous lunch spot that never fails.

This was one of the best meals I've had so far. The theme currently is Kentucky/Tennessee and everything on the menu was amazing! I loved each dish, beautifully crafted and full of flavor. We ordered 1 of everything and split the meal. I was able to take a sneak peek at the next menu and my mouth is watering just thinking about it! Great job culinary team!

It was hard to believe my meal was prepared by students. Not only was the presentation beautiful the food was delicious. I've already recommended the restaurant to friends.

The Caribbean menu that the Evolve Bistro has is as great as their other menus. Great food and atmosphere at a great price always makes it well worth the trip.

This is an excellent addition to River North and is a great way to showcase what the students are learning at the Art Institute. The food was well prepared and the servers were very attentive. Great job to the students in showcasing their work!
