   We enjoyed our main courses of squid ink pasta with seafood and of gnocchi with tomato, pesto, and ricotta. The service was earnest and efficient. The outdoor setting was pleasant. As a new restaurant, perhaps they need a bit more time before reaching a higher level of dining excellence.

   This is our second time back (try them again). Just like the fist time. we were seated immediately, but waited for a long time for someone to come around to take our orders. It happened again this time. The place was empty for 6 PM on a Saturday night. Once the service got started, the bread plate was good. The drinks was very good. The pasta was great and the pizza.

   Great food, beautiful restaurant, service was kinda slow and the noise level was very loud. Hard to hear at my table. There were only a few tables but it took a while for our food to come out. Our waitress was not very attentive. Will come back and try pizza.

   Our meal was enjoyable but for about $90 per person (only one glass of wine), I’d rank it rather low on the value scale. My dinner salad with grilled chicken was edible but uninspired. My companion’s pasta was acceptable while his wedge salad was very good. There’s an art to taking an old building like this, with its rough unfinished hard surfaces, and making it quiet and inviting, and in my opinion this one is a bit lacking. The server was very accommodating but not well trained in the field. The noise level was surprisingly high given that the house was maybe 60% capacity. Admittedly, at 73 years old I am not their target demographic. I want Est! to succeed, so don’t take my word for it—Please try it yourself!

   Edward, Thank you for letting us know about your experience, and the 4 Star review. I am sorry you "would not recommend", but I am a little confused about the $90/person. Our most expensive item is short ribs at $40 and our most expensive glass a wine is only $15. We get mixed reviews on the ambience. I am working with local artist to fill the walls with art. This will help them, while cutting down the noise level (that Saturday, did seem a louder than normal). Thank you for the shout out to "try it yourself".    Menu says “fresh pasta” it was obviously frozen and gummy, seafood didn’t taste fresh. Risotto seemed to be made with white long grain rice instead of Arborio. The quality of the food is ridiculously sub par for the price. Have no problem paying $120 for a good meal, could’ve gotten better quality food from fazzolis or piada, won’t be back.

   I am sorry you did not enjoy your visit. When pasta is listed as "fresh", it can indicate, that it has NOT been dried. Our pasta is Fresh frozen, we do not have the kitchen size to make 4 different pastas, along with our breads. Homemade pasta is very labor intensive. For risotto, we use the preferred carnaroli rice. Arborio's ability to soften while cooking makes it a good choice for puddings made with rice, or in a minestrone soup, while Carnaroli' has the ability to remain al dente, no matter the temperature. I know that our pricing is a little on the higher end, because of the higher end ingredients. With that said and being less than a year old, we are working hard on menu engineering and driving our prices down & your value up. Again, I am sorry to hear of your experience.
