About Eddie Merlot's - Ashburn
Eddie Merlot's Prime Aged Beef and Seafood starts with U.S.D.A. Prime Beef. Only 2% of all U.S. beef is awarded this superior certification. Eddie Merlot’s ages the beef naturally to an unparalleled standard of tenderness and flavor. The chef then personally selects each piece for the optimum proportion of marbling, and texture, before hand-cutting and seasoning the thick, tender, and juicy steaks to your specifications. To seal in the flavor, the steak is flash-sear on high-heat grills. Eddie Merlot’s has created one of the hottest concepts today; the wine bar provides more than 70 wines by the glass and a very extensive reserve wine collection by the bottle. The bar is stocked with all of the finest spirits and after dinner cordials and Cognacs. Eddie Merlot’s boasts a contemporary but stunningly elegant interior design and atmosphere—where guests can have fun, relax and enjoy listening to up-tempo music, while dressed in business or casual attire.

Eddie Merlot's - Ashburn Ratings and Reviews
Two of the VERY expensive steaks were over cooked. We did not address it with the waiter, he was hard to find. Also didn't want others in our group to wait on eating their meal. We ordered the meat medium and it was well done.
Another issue was, two guests ordered soup and one received it at the wrong time and the other not at all. the waiter did not check on if the food was delivered as requested and it was too late.
Another delicious dinner. Oscar ie the best server/bartender. He always take an outstanding care of my husband and I. Service was outstanding. Steak tartare (appitizer) is my favorite. Bourbon marinated ribeye and Elk chop were delicious. Loaded hash brown and wild mushroom also excellent. Can’t wait to go back there for another delicious. Thanks to Martha(manager)always stop by and check on us.
First time at Eddie Merlots. We order one of their platinum cuts (20 oz) . They brought it out with our side orders and proceeded to try and cut the meat to divide it. The server was unable to do so and took it back in the kitchen. By the time they brought the steak back our sides were cold. I don't mind paying for a great meal and service but this missed the mark. Not sure if I would go back. I was there to celebrate a birthday and was disappointed.
Very impressed on our first visit. Excellent service and terrific food. The honey glazed bacon, salads and the filet mignon were superb. The house wine was surprisingly good. Not so sure about the retro decor but overall the ambience was great. We will be going back with our friends!
We were thrilled with the food, the service, the drinks and the awesome bartenders. We had a reservation but ended up staying at the bar .... mostly because when we went to sit down, we were going to have to wait for our table, which we thought was odd because we had a reservation AND we told the hostesses we had arrived about an hour before our reservation. That was a bit disappointing, but everything else was prefect. The food, the service of the bartenders and the atmosphere!
First time at Eddie Merlot's. There was a bug in my water. We ordered wine and a cocktail. We had to ask for them after the first app showed up. Then, we had to specify that we wanted both of the drinks we ordered (one each.) The food was pretty good, but the service was downright awful. I won't be returning when there are so many other places to choose.
Overall excellent. Apps, steak, sides, and dessert were very good. Probably the best steak house in Loudoun county. Waiter was good but under pressure, probably had to many tables for the type of service required for this price point. Need to add a few more people to the staff...
Was so glad Eddie Merlots came to Virginia - I loved the one I visited in IN. The apps were very good. The meal was terrible. Over cooked tuna, tough bison, hard mashed potatoes. My Lemon Drop martini tasted like syrup and the banana's foster was like water. The service was so slow and had to ask repeatedly for everything from silverware to butter. The high note was cherry mule's my husband had.
We celebrated our anniversay at Eddies because we had a gift card. We ordered the Filet Mignon Potstickers and really liked them. I ordered the Bison Filet Mignon - I've never had Bison and truly enjoyed it. My husband the Bison Bone-In Ribeye, he was happy with his steak too. As sides we ordered Loaded Hash Browns, Roasted Root Vegetables. I really wanted more of the vegetables. The hash browns were exactly like the ones you get at IHOP.
Since I mentioned our anniversary, they gave us a complimentary Creme Brulee with a candle and a card. That was a nice touch. Our server was nice and attentive. I didn't like the wine I ordered and she brought me a different one. I wanted something sweeter, and since they don't carry those, she took it off the check. Our total was over $200. This was probably once in a lifetime visit, unless we win the lottery or get another gift card. I get that we are in richBurn and this is a fancy restaurant, but for that money we can take our whole family to Chima in Tysons and stuff our faces.
Date night with wife. One Loudoun residents, always meant to try Eddie Merlot but only just got around to it.
Dinner was during off peak hours with perhaps five other tables filled. Nonetheless, took fifteen minutes for wait staff to come to our table and took over an hour for our food order to arrive. Ten minutes to get check after requested.
Bread clearly reheated, not fresh, as center ice cold while exterior hot (when asked to fix, staff apologized, took bread, but then returned with same loaf. Inside now warm but outside burnt.)
Staff was gracious when present. They just were often nowhere to be found. Perhaps there were behind the scenes problems that evening we were not aware of.
Entrees fine, dessert fine.
Service was terrible. We were never asked for bread, one of the steaks came out medium when asked for rare but took 15 minutes for the waiter to come check. It was sent back and we were offered complimentary desserts but overall food was very mediocre-the mains were good but the sides and desserts were definitely lacking flavor. Overall, I would not come back. We got here at 7:45pm and it 10:45pm and we are still waiting for our check...
This is about the fifth time we have eaten at Eddie Merlot’s and each time the service is only okay and the food is good but it’s an expensive steak and seafood restaurant that offers farmed salmon. To me this is not acceptable especially when they charge $31.95 for it. Don’t get me wrong my salad and crab cake were delicious as is the coffee, in fact I️ return for their coffee setup, ridiculous!
Actually was very disappointed, maybe because they are still new, clearly under-served for a Friday night?! The service & ambience was great at beginning until waiter realized we werent drinkers ordering $60-$80 bottles of wine...got my sisters order completely wrong, then brought out overcooked Salmon she ordered...you would have thought for such a flagrant service error we would have seen the Chef or at least the Mgr apologizing to my sister for her failed meal & bad service, maybe even comping her dessert?! Neither showed up & received nothing but a gratuitous thanks from aging waiter...will not go back
We enjoyed the restaurant and the food very much. Fortunately on a Monday night it was not noisy although I can see that on a really busy night it might be uncomfortable. It is more expensive than what we usually are prepared to pay but for a special occasion--for the two of us--we felt that the price was right. And, we have left overs that will last for at least two days. We also appreciated the creme brulee which they brought gratis for our anniversary. I am usually not a fan of that dessert but this was delicious.
To begin the staff is incredible. They will ensure you have everything you need and do anything they can to make your experience perfect and truly fitting of a 5 star rating.
The food is superb. From the bread to the New York strip and everything in between you will not be disappointed. The steaks melt in your mouth with the prefect blend of seasoning and made even better with some signature sauces on the side.
The wine list is expansive and has an option for every possible taste and pairing. The martinis are all shaken and poured tableside and our server was able to perfectly describe the taste our choices perfectly.
I ordered a Bison steak -on-bone. It was not what I expected. It was not uniformally cooked and as a result not tender at all. My friend ordered a Filet and Crabcake. The Crabcake was not cooked properly either. Overall it was not very good experience.
Service was very good but that did not help the food. Not sure you get my recommendation.
We had been planning this dinner with friends for months. First the restaurant is beautiful. The service not so good (I won't go into the ISSUES we had since they were resolved quickly by the manager). As for the food, my husband said it was nothing special and "we could of had a much better meal at Sweetwater for a fraction of the cost." Unfortunately, we won't be going back.
