Our evening at Dovetail was absolutely fantastic. A colleague of mine recommended Dovetail and she referred to it as her favorite restaurant in New York. After dining there we all agree with her.
The first impression we had at Dovetail was that of being warmly welcomed. Considering the quality of the food and the high price point we expected a formal if not stuffy atmosphere. We were very pleasantly surprised to discover the staff was very friendly. They were all incredibly knowledgeable, and they guided us expertly through dinner with perfect pace. However, they were anything but stuffy. We enjoyed some conversational banter with them and in particular we appreciated their sense of humor. The food and wine selections were all terrific, but the staff and their execution really made this evening one of the best dining experiences we have every had. Wow. Dovetail is about as good as it gets. Six stars with an exclamation point!
Dovetail gets better and better every time you blink. All of the staff was friendly, informative, and organized, and you can’t exactly work out but you can just understand that they all work together to bring the experience to a whole. Food was amazing from start to finish. Stan Michalski has refined the menu into something much more delicate and thought out, and Sofia Schlieben’s gave us about 30 seconds to finish some impeccable wagyu beef before sending sorbets that didn’t jar the flow of the menu, and instead made a really nice seamless transition into deserts, which were not only delectable, but fun! Our sommelier for the evening never faltered, bringing thoughtful pairings, even pouring my girlfriend splashes to enjoy with her courses, though she had work in the am, so no one missed out! Our server John was incredibly kind and accomadating, as was our bartender, the host Hector, and of course the manager David. Dovetail’s got it so down I left for a cigarette in between courses and it was almost as if they timed my cigarette, because dinner never skipped a beat, and never lingered on it either. Not easy to do with a packed restaurant!
Just one question... where’s that second Michelin Star?
3 1/2 hours (not because we were slow). Couldn’t get waiter (no menus for a long time...): impression no waiter assigned to our table because wait staff kept changing. (They were all nice but no one seemed to know what was going on.). Do love fact that one can order any 3 or 4 courses from any part of menu. But they promise that “main course” will be larger: was as minuscule as others. Food only ok: for those prices, should be great. Some kind of bland purple purée on both my appetizer and main dish. Disappointing.
Dovetail is always excellent. The room is beautiful, and the food is very high quality. We did have a long wait for our table, but I brought it to the attention of the maitre d' when our meal was complete, and he discounted our meal substantially. He was extremely professional and generous. That was the only time that we had an excessive wait, despite our reservation. I highly recommend this restaurant for any occasion, large or small.
Ambiance agréable, intime, service attentionné, cuisine qui me rappelle la “nouvelle cuisine” des années 70 en France...petites portions, présentation raffinée, bons produits, mais sans grande surprise, et même parfois un peu fade, pour une étoile Michelin et le niveau de prix, j’espérais mieux...
Dovetail's food and service were top notch. It was exactly what I wanted for my birthday, a chance to eat some truly decadent, out-of-the-ordinary, and well prepared food. The entire staff was wonderful and I never wanted for anything for even a moment! My only critique was that it was on the noisy side in the restaurant, so sometimes I had trouble understanding the servers or my dining companion.
The food is superb although my wife and I were both somewhat disappointed by the matsutake dish. It was merely good and, thus, not at the level of the other dishes we had. When we return, as we surely will, we won't have this again.
The menu is structured with four prix fixe options. In many such cases, there are supplements for certain items. Dovetail has only two: for adding shaved white truffles as a garnish and for a cheese course instead of one of the many delicious desserts.
The service was attentive and professional if a bit slow. In making the reservation, I let them know that we were celebrating my birthday. Along with our desserts, we were given a plate with an extra dollop of ice cream, a candle and the words "Happy Birthday" written in chocolate. I was very pleased that the occasion was acknowledged and even more pleased that the staff did NOT sing to me.
When we were seated we were asked if we had any allergies and if we were under any time pressure. We weren't and that may have contributed to somewhat more leisurely service than we would have preferred.
It's only fair to add that our four-course prix fixe with wine pairings was quite expensive by our standards. It was worth it for all the reasons stated above but we'll be returning to Dovetail for special occasions only.
I have eaten here a few times. The food was very good each time but not memorable (a few days later I can't remember one thing I ate other than the amuse), but this is a Michelin star restaurant, so,I am holding it to a high standard. I did not overly enjoy my wine pairings which I thought a few of the whites too cold. The service was excellent.
Some really good food. Some quite mediocre. Often in the same dish. The service was at times pretentious and intrusive. Giving guests some time and space, particularly at the beginning when they are getting their bearings, is comforting. The wine we had was good but expensive. In fact the the whole meal was not good enough to justify the cost. I have been to other one star Michelin restaurants that were a lot better. At its best it was good enough. Unfortunately too much was below its best.
As we left Dovetail following a dinner celebrating my birthday, we said to one another," You know, this may have been the best dinner we've ever had at Dovetail." Then we realized that we must have said that a half dozen times. The truth is that Dovetail continues to outdo itself, getting better and better. We lived it up, having matching wines and spirits as well as the gnocchi with fresh truffles. Every dish was superb. The service is perfection. The hospitality is wonderful and the mixologist is wonderful. Don't limit going to Dovetail for special occasions. Every meal there turns into a special occasion.
A cozy atmosphere with professional staff. Food was as expected from a Michelin restaurant. Dishes were all balanced and nuanced with clean flavors. Service was impeccable. Interaction was good too. They stayed and talked as long as I kept the conversation up, they left when I didn't. Very enjoyable time.
My wife and I had a wonderful dining experience at Dovetail. The food was excellent and the service was outstanding. The restaurant is decorated with taste and the ambience is very inviting.
This was our first time here and we will definitely return and try the Tasting Menu.

Exquisite service, lovely amuse bouche, wonderful first 2 Course’s of Sunday menu let down only by fact that all 3 deserts were ice cream based.
But this didn’t impact on a warm atmospheric place with great jazz on the sound system and inventive cooking with astonishing flavours and tastes.
A good dining experience overall but the tasting menu needs a considerable amount of work for the price point. I would say a la carte may be a better option. Wine pairings were overall very good. None of the dishes were particularly inspiring. The desserts were definitely the best course, pasty chef clearly pulled his weight.
