Demo is a restaurant in the West Village serving modern, Europe-inspired cuisine from Executive Chef Quang Nguyen and Sous Chef Dina Fan. Inventive seasonal dishes—like wax beans with bottarga and boquerones—share the menu with updated classics like beef tongue tonnato, alongside a carefully curated list of wines by glass and bottle. The sleek interior, tastefully adorned with red marble and dark wood, hosts a front bar for walk-ins as well as a chef's counter in the back.

Please note: We are a small restaurant. Reservations in the dining room and at the chef's counter are intended for dinner. For drinks and snacks we accept walk-ins at the front bar. Thank you for your understanding.

That's true of this buzzy West Village spot that Eater called the most exciting new wine bar in Manhattan. The food here is as exciting as the wine, so you should definitely plan on staying for dinner so that you can pair your bottle with lobster au poivre, beef tongue tonnata, and more dishes that blend French, Spanish, and Italian influences.

    Join us as we welcome our friends Andrew and Matt from Scribe Winery. We'll be featuring an array of wines by the glass and bottle, as well as some special menu items to complement them. Founded in 2007 on a property that pioneered pre-prohibition Sonoma Valley winemaking, Scribe is managed by fourth-generation California farmers and brothers, Andrew and Adam Mariani. Andrew and Adam believe that the best wines are a result of a healthy relationship between man and nature, and that a vineyard managed in harmony with the greater ecosystem results in more site-specific wines that represent a sense of time and place. When vinified with non-interventionist methods, the result is a distinct wine that faithfully reflects what the vineyard naturally expresses.

                                    Absolutely exceptional. The place was buzzing with a really great ambience. The raw scallops and mackerel dishes to start were melt in the mouth. Perfect. The lobster, sublime and the lamb ragout was also fantastic. Excellent service and attention to detail.

                                    I normally don’t write restaurant reviews but Demo exceeded all expectations. I knew it was going to be good, but the food ended up being outstanding. My husband and I had the snap pea special salad and pork special and they were both incredible. All the staff were all extremely nice and helpful, and the wine recommendations were also top notch. Can’t wait to come back!
