Yuzu [pronounced YOO-zoo] is a Japanese citrus fruit which is about the size of a tangerine. It's being hailed as the next super fruit and is being used to flavor everything from beer to chewing gum. It tastes like a cross between a lemon, mandarin and grapefruit and it's sourness and acidity plays well against the coconut notes and sweetness of a Desert Oasis. Fruit Wines available seasonally

Medium straw color which is evidence of its careful French oak barrel fermentation. The aromas display tropical top notes from the Chenin Blanc such as mango and lychee, but then is backed by apricot and clove courtesy of the Viognier. The palate has a slight toasted oak note and then becomes slightly creamy while opening up with its ample acidity, but then shows the pear grit and pure minerality from the Roussanne. The 2012 Kite Tail Chardonnay is both graceful and powerful, a testament to the remarkable vintage we enjoyed. On the nose the wine is lushly scented with notes of honeysuckle, white lilies and orange blossom. While on the palate the dense, mouth-coating core of bright apricot, nectarine and lightly honeyed citrus fruit interplays with vibrant hints of lime zest, vanillin and juicy persimmon. Beautifully developed botrytis notes of dried pear, mango and fresh hay dominate the nose. Succulent flavors of preserved cling peaches and quince paste on the palate are supported by subtle oaky tones reminiscent of hot buttered toast. In this vintage, we made what we consider to be classic Eola-Amity Hills Pinot Noirs - bright, crisp red-fruited wines with medium grained tannins and gently perfumed aromas of grilled matsutake, pine forest and burning incense. A pale cherry-red in color, this wine exhibits a nose dominated by fresh raspberry, cola, cinnamon, and a hint of rose petal. The palate is soft, showing velvety tannins and notes of freshly made grenadine. The wine expresses beautiful minerality, a lingering acidity, and perseverant fruit—distinctive and classic hallmarks of the Seven Springs Estate. Wine Spectator 93 points
A dark and brooding cabernet sauvignon-based beauty. Gobs of smoky black fruit. Dusty and herbal notes emerge with air. With more time in the glass, attractive notes of baking spice arise. A great wine, the 2012 Todos Proprietary Red Wine offers terrific notes of black and red raspberry fruits, toasted bread and spice. As it sat in the glass, more classic Syrah olive, bacon and a touch of violet all developed. Medium to full-bodied, juicy, mouthfilling and loaded with sweet fruit, it doesn't skimp on structure and will have at least a decade of longevity. Robert Parker - 93 points
Dark, vibrant purple and red hues present in this wine. Blackberry and black plum aromas combine with graphite, espresso, dark chocolate, mocha, cedar, and white pepper. Flavors of black plum, black cherry and currant intermingle with dark molasses and a light vanillin oak with dusty finegrain tannins. The aromas show less leather/bacon than in years past but it still is a major element, followed by plums with a hint of morel mushroom and wintergreen in the background. In the mouth it is less tannic than the early vintages but the tannin is more than sufficient to give it structure and depth. Dare I say it? It is almost "elegant"!
