Amazing!!! Very attentive staff and amazing food!
Fourth time to Cut 158 and as good as ever. The food is top notch and great service. Glad to have a place in Joliet for a fantastic meal.

Not much market for a $60-$75 steak. Lunch menu was much more varied and now they discontinued lunch service. Service was spotty and a bit slow.
We had a very disappointing experience. We had a 6:15 reservation before a show and ended up getting our main courses boxed up to go when we still hadn't received them at 7:38 (I checked the time). We reminded the hostess when we arrived at 6 and then told our server; replies of "no problem." Had to request our starters and salads at the same time as it was after 7 before they were being served. The manager never came to discuss our situation; offered at 20% off via the hostess. As we were leaving, he asked if we enjoyed. I said no and his response was that there were a lot of meals to serve in 40 minutes and it happens. My response was that it was the restaurant's job to make sure the customer is served promptly. We dine out before shows in Chicago and usually have sufficient time using last night's time frame. The crab cakes and salads were okay, but cannot comment on the mains as we will only be able to eat them reheated as leftovers. High hopes for a local place, but ended up not having a good experience. Perhaps the restaurant will become more proficient at handling high volume before Rialto shows.
Unfortunately I don’t think I would recommend it. It was loud and service was slow. My salad had some silty, slimy pieces in it. And our waitress went from slow to over compensating which a bit annoying. The bright spot of the dinner was the hostess who was on her game and very helpful. She saw we hadn’t been served drinks yet and got our server, later she was the one and asked if we’d like refills and took care of the slimy salad. Kudos to her and hopefully they can improve on the rest of it.
If you are out seeing a show at the Rialto Square Theater or just out on a date with your special someone, then Cut 158 Chophouse should be your dinning choice! Fantastic food with perfect portions. My swears by the lamb options and I would agree! Cut 158 prepares a fabulous piece of lamb! The filet mignon, that I had, was cook perfectly to medium rare. Ambiance is very beautiful and interesting. Overall just a wonderful place to have a great meal.

Our 1st visit here. I wanted to treat my hubby to a great steak dinner to celebrate our 51st anniversary. Cut 158 Chophouse exceeded our expectations! BTW my salmon was fantastic!
The food was delicious! I would definitely return to Cut 158. I went midweek, and since there was no show at the nearby Rialto, it was not busy. Service was excellent.
My porkchops were so moist and delicious. Husband had lamb Chops, also delicious. Service was great and friendly. Would go back again and again.
We had a nice experience but felt the pricing on the steak options were not in line with other restaurants in the area. Great location if going to the Rialto.
We would not recommend this establishment for the following reasons:
The steaks were all overpriced.
The seafood dishes we ordered were overcooked.
The server was attentive at all of the wrong times...when we requested our drinks she was nowhere to be found yet stopped by three consecutive times while we tried to talk and enjoy our meals. I believe she needed a bit more training.
Fantastic lunch menu with affordable prices and huge portions. We ordered ahead because we had a large group over a work lunch break. It was hit and ready right on time, and we were in and out in 45 minutes. It was the perfect work luncheon. We will definitely be going back!
Grateful this gem exists in downtown Joliet. The MEAT is perfect!!
I had a WONDERFUL experience at Cut158 and I would recommend anyone who appreciates fine dining with an intimate atmosphere to try it out. Abby(Abbie?) our server was amazing from beginning to end and had an amazing personality and GREAT recommendations.
Started off with a strong, yet delicious French martini. Great list of cocktails and martinis to start your meal!
The lamb chop lollipops were deli soups, the steaks come with a side salad and a potato. I upgraded to the wedge salad which was also very good and a great size. I got the filet with the mashed potato and a Cabernet recommended by Abby.
My filet was medium rare and perfect. The atmosphere was quiet with some background music and I thoroughly enjoyed it.
Every new restaurant has its kinks. I feel that my experience at Cut 158 was amazing and I will for sure be back. I love a good steakhouse and I’m happy I don’t have to go to Oakbrook or Chicago for a GREAT meal.

It was my husband’s 60th Birthday! We had an amazing dinner and including the apps and a beautifully decorated slice of birthday cake. So glad we tried the new place. Will definitely recommend it!!

Excellent food and attentive service that was not smarmy. My only suggestion would be to offer some smaller portions and change out the chairs at the earliest opportunity. I’m sure that they are from the previous owner, but they are terribly uncomfortable. We will return soon, and with friends. Loved it!

there is no better start to a wonderful evening.
We came in for a Saturday night dinner and found Cut 158 Chophouse to be a great find in spite of the fact I sent my salmon entree back to the kitchen after the first bite. Now I don't mind a bit of a sweet glaze on my salmon, but this beautiful piece of fish on a bed of risotto was drowning in the honey glaze. In retrospect I should have just requested it be replated with new risotto, and it probably would have been fine. However, they graciously brought me new a order but w/o any of the honey glaze. My husband had the shrimp bowl and it was delicious. We would definitely go back.

We made reservations for dinner before a show at the Rialto Square Theater- they asked if we were going to the show that way they would be attentive of the time.
Started off with some cheese curds from the appetizer menu and were they awesome. For dinner I went with Grilled Herb marinated Salmon while my wife went with Shark Bites (from appetizer menu) along with a side of roasted garlic and parm cheese mashed potatoes. VERY VERY good- taste buds were alive! We did have a chocolate and banana cake that was a fitting end to the meal.
Service was also outstanding.
Great food. I would have to say this was probably the best filet I have ever had. Every staff member we encountered was friendly.

The bone-in ribeye steak was outstanding! The brussel sprouts with bacon were very good. The garlic mashed potatoes were average at best. The salad was just OK. Service was very good and the nosie level low for easy conversation. We will go back.
Steak is fantastic, salmon is fantastic! So was the Brussel sprout salad...and the sweet potato maple cheesecake is AMAZING. Hidden Gem here!!

Everything was delicious! From the apricot/rosemary butter for your bread, the grouper bites, the filet mignon, the coffee skirt steak.......SO GOOD! So things one the menu were pricey, but some were super reasonable! Cant wait to go back!
Food was great all enjoyed. The Benedict’s were light on what was there. The near could have been bigger considering how big the muffin was and such a big plate for not a lot on that meal. Maybe add a small salad? The chicken and waffles were fantastic as was the skirt steak and a lot of food on those which was great. Bloody Mary’s were great. Could warm up the space as it is very dull. Overall good first visit and hope this place lasts as Joliet needs a place like this!!!
There was a very large party while we were dining in the same room, but the noise level was not overboard - Food was outstanding along with the service - We were greeted at the door with a smile, and attended to by the entire staff all evening
This was our first visit and we were delighted. The food was delicious and cooked just as ordered. We loved that we could upgrade our included salad and potato to any of the great sides or salads on the menu (loved the brussel sprout salad!) Monica took wonderful care of us. Making our next reservation now!
I had the skirt steak with truffle fries it was the best I ever had. I would go back ASAP just for that again.
I dined here with my best friend to celebrate her birthday. I had the stuffed mushrooms as an appetizer and they were amazing. My friend absolutely loved the braised Short Ribs and my New York strip was cooked perfectly. I did have the maple bacon brussel sprouts as a side, being as I have never had sweetened brussel sprouts, they weren't my favorite, not that they bad, just not for me, I'd rather have a more savory version personally.
Great food and an overall wonderful experience. Our waitress was very prompt and attentive.
