Hands down the best steak I have ever had. We had Rebecca as our server she was absolutely amazing.
Cowboy Star... is hands down the BEST steak house I have EVER been to. It is worth every penny.
An excellent staff enhanced a well selected set of offerings. The selection of steaks would appeal to virtually every taste. Appreciated by this diner were the excellent, very fresh PNW oysters on the appetizer menu. One of the servers (Rebecca) was clearly an accomplished professional server and made the entire experience quite nice. Do not expect much from the wine list, it is serviceable but not at all above average.
Although the ambiance was great, the food did not warrant the prices charged. For example, the wedge salad was basically not much more than plain head of lettuce...only had 1-2 cherry tomatoes, very very few bacon and blue cheese crumbles and very very little dressing. Overall, the meal felt like they skimped/cut corners.

Absolute perfection from start to finish.
This was an exceptional meal. The Wagyu steak did not disappoint -- tender, flavorful, cooked perfectly. The spicy margarita is one of the best I've ever had, and the chocolate chip bread pudding was PERFECT.
We went for our 23rd anniversary. We made reservations online and let them know it was our anniversary. We arrived 10 min early and of course, we were not seated until our 6:30 reservation time but sitting out front was relaxing the fire going and just talking was wonderful. We were seated at a table that had a red rose and a card signed by all it looked like that work there saying Happy Anniversary
Our waiter what a jolt of energy and fun, explained that the reason we only were given a drink menu was because they first serve us our drinks and we are to enjoy them and then the deciding on what to eat would be what came, we let him know we did not drink and were ready for the food menus so he brought them right away. Which was personalized, it had “Happy 23rd Anniversary” at the top.
The point that should be seen here. Most restaurants make their money on how fast they can turn a table. This is not one of Cowboy Stars' priorities it seems!
Our waiter brought over two spoons with a small dab of roasted sweet onion and a tiny amount of blueberry as a mouth exciter. Jerry who does not like onion and despises blueberry took the small taster and loved what it did for the mouth, no he would not wish to eat a bunch of it, but it did what it was intended to do, which was to excite the mouth.
We ordered their meat and cheese board to start, it came out we sampled the different meats and cheeses enjoying talking about the last 23 years, and how different this restaurant compared to another we went to for our anniversary where they pride themselves on cutting their own meat in the basement and we did not like the atmosphere, nor the food and everything was ala cart, and the cost was about 25% higher than Cowboy Star.
Dinner came just as we ordered, well other than I am not an al dente eater- either raw vegetables or cook them completely I like them where I can cut them with my fork and not need a knife, this would be my only complaint.

We wanted a place to enjoy a great meal and have a great experience with family that is moving back to Wisconsin. Rachel and Che treated us very well and made it a comfortable, memorable evening!
Very attentive and professional staff. The food was amazing! Side portions are small but the main entree was perfect. We’ll definitely make return visits!
New Year’s Eve
We waited two hours for our food! When it did finally arrive, all of the filets were undercooked!!
We complained to management at the end of our evening and were asked to leave!
We will never go back and cannot honestly recommend this place to anyone!
They do not seem care about their Customer!!!
Always a good experience at Cowboy Star! I did request a booth when I made my reservation. When we arrived we were told “sorry we have no booths they were given to reservations” well again, I requested a booth in my reservation as well. When a you’re man called to confirm my reservation he did say that the booth would not be an issue. This will not affect me returning to Cowboy Star it was just a little annoying.
Our food was very good. We were in a back room so I can’t say much for the atmosphere. Quite pricey, but it was a special occasion. There are many steak houses in the Springs. I can’t say that Cowboy Star is an absolute favorite.

Katie was FANTASTIC, and the food was superb. We had a bit of a wait for service because of the crowd, but the food was worth the wait. It is a very noisy restaurant, however. That needs to get fixed.
I would. I think the real value of Cowboy Star would be to eat and drink in the bar, although the bar is very small. Our server was busy, but extremely intuitive and that's to be expected when white table cloth at play. There were several in our party less than satisfied with their food, but overall the dining and experience was above par for this kind of establishment. I'd go back in a heartbeat!
Excellent food and good assortment of wines at competitive prices. Service is very prompt and engaging, especially our sever, Brock.
We had an absolutely amazing experience at Cowboy Star. We went for our anniversary and the food, service, and overall experience was phenomenal. The ribeye steaks were the best we have ever had here in the Springs. We will absolutely be back.

It is not inexpensive but the food was very good. Best steak I’ve had in a long time.
Made a reservation, and went with my wife, and neighbors. Arrived 5 minutes early, and we were seated promptly, for the next 25 minutes, we were the only ones seated in the dining room. Waitress and her assistant came around with water, and then took our drink order; a few minutes later, menus were brought. We came in for the Sunday Prime Rib Supper, yet our waitress failed to even tell us that it was an option (not on the menu); although, she did not forget to suggest the $100.00+ steaks. Bread was brought to the table, in the form of Rolls, but they did not leave it , they asked you what kind of roll you would like, they gave you that roll, and then they took the remaining rolls and left. Prime Rib did not come with a salad, but that was a $12.00 add on. The prime rib came with a few pieces of broccoli, and 1/2 of a twice baked potato. Creamy Horse Radish sauce, was a $3.00 add on. My prime rib, medium, was a large piece, but it was barely, warm, and the au jus, was not very warm. The table assistant, was very generous with the water, but the tea and soft drink glasses sat empty for more than 15 minutes; however, they were right on it, asking to refill the $12.00 glasses of wine my wife and neighbor ordered. For the $215.00, this was not a good value. Service was constant, to the point of annoying, yet could not keep my drink filled. Overpriced, no substitutions, and as my wife told me, the prime rib has a better flavor at cheaper steak houses. Thank you, Cowboy Star, but we've given you two chances, and we are moving on.

I took my marketing there for Xmas lunch. First time for all of us. I made reservation ahead of time. We were seated immediately. Waiter was attentive and provided excellent service. There were 4 of us. Two of us ordered the petite fillet, one person had the trout & one had the wagyu burger. We also shared the spinach & artichoke dip appetizer. The steaks were cooked fine, maybe a bit more than medium, but was very good meat. The burger was a bit under medium. They brought out another one for my colleague. Since this is a higher end restaurant, not a normal lunch place, they weren’t that busy,but kitchen service was slow. We ordered 2 desserts. The salted Carmel pear roll was interesting. The cake didn’t have much taste, but the poached pear was great. The other dessert was the chocolate chip bread pudding. The pudding had a drier cake texture. Not sure I would order it again. We had a good time. I would go back again to try other dishes.
Our waiter Sean was great! We sat at the Chefs table, although a lovely area the acoustics were terrible as we could not hear each other over the noise of the kitchen as staff. We’ve err surprised since we thought it would be nice and quiet. 😕

It may seem repetitive, but Cowboy Star is my go to restaurant for Date night. Dinae and I really enjoy the food and Chris, our waiter, is always fantastic and helpful The bone marrow is sublime and the steaks are amazing.. We had oysters and they were fresh and delicious. And of course, Chris, is a sommelier, his wine recommendation never fail. Excellent dining in COS!
The waitstaff was wonderful, and food was excellent. The filet had a little too much seasoning on top but was cooked perfectly. Prices are to be expected for the quality of service and food.

Excellent food. Good service. A tiny bit loud and not cheap, but we will definitely be going back. Best steak we’ve found in Colorado Springs, and the bread pudding is outrageously good.
