We sat outside on a nice evening so I can't comment on noise level inside. Was very nice, and food and cocktails were interesting and tasty. Service outside might have been a little slow as it looked like they were covering inside as well. But overall a very nice experience
Great meal at Colt and Gray. We had the pork chops and duck with a nice bottle of wine.
Disappointed. Service was inattentive. Some meals arrived cold. Prices were high and not reflective of quality. The restaurant had declined significantly since my last visit.
Was very good, and not disappointed, but would say overall 4 out of 5, with the exception being Ricotta pasta dish and Pork Chop were wonderful.
Colt + Gray was amazing. There were pop culture themed cocktails which gave the restaurant a fun vibe—not to mention they were delicious! Our server was knowledgeable and provided great recommendations for the meal. The food, was obviously delicious. Highly recommend for a more special occasion since the food is a higher price point.
We have been here for special occasions many times. The fact that we celebrated those here in the past is what has kept us coming. In this last visit, we definitely felt that the place needs to be refreshed. Move stuff around. Repaint a wall. De clutter some stuff. Make it feel new and intentional again. There’s a lot of competition in town, so you have to step up the game and lower the price point to stay interesting.
The food here is phenomenal. I don’t know what they did but everything tasted on point. I have no idea what they did to get the dry aged ribeye so flavorful, but it works. The facilities could be a little nicer.

Cocktails at the bar were very good and a good selection of spirits. Dinner was fantastic and a wine list is very nice. Service was great. We will be back for more!
Unfortunately our visit to Colt it's not a very appetizing thing to have your food delivered by a waiter with a sweat soaked shirt and hair stuck in sweat to his forehead. The food met the "upscale" expectations, however the rest of the dining experience fell well short. Unfortunate.
Most unfriendly host I have ever experienced in a restaurant. Horrible service. It took over 20 minutes to get a drink (and there were only a few customers on a Saturday night). Brought wrong appetizers and a wrong entree.
Great experience. Bartender was really knowledgeable and the drinks were outstanding. The food was some how just as good.
On a business trip with colleagues & had a nice dinner out. I’m a crazy foodie girl & this was by far the best food we had on the trip. My only complaint was that we were not greeted well upon arrival, but otherwise, the staff did a great job with everything else. We had the special carrot/ginger soup which was perfection. My colleagues had oysters which they liked. We also had “fancy fried cheese”. This was good, but a little bland for my liking. For entree’s we had the lamb which was perfectly cooked & the pea ravioli which was delightful. Overall, after spending a week in Denver this was the absolute best food of our trip.
Absolutely love this restaurant, and it is my new local go-to when I want to ensure everything is dialed in for a perfect evening. An incredibly well stocked bar, with house specialty cocktails to rival any bar or speakeasy in Denver. The dining room feels warm and intimate, with small alcoves and areas of privacy to keep the noise level very quiet for dinner conversation.
The food,...with a dedicated in-house butcher, it should come as no surprise that the aged meats are 10 out of 10. We started with the charcuterie board (duck prosciutto, goat cheese, and 3-year prosciutto), and it was as good as I’ve found anywhere - USA or abroad. There are a wide range of meats and cheeses to choose from to customize your charcuterie. It was so good in fact, that we’re coming back for dinner again this week, and going to make the 7-selection charcuterie our dinner.
For entrees, we had the duck breast (8oz. or 16oz.) and the 10oz. Filet, dry-aged in-house. Both were prepared perfectly, and receive my wholehearted recommendation. The sides were so good, they almost stole the show. Rosemary potatoes were crispy and heavenly, and our absolute favorite was the roasted carrots. Simply incredible.
We had no room whatsoever for dessert, so I can’t offer a favorite there,...but I do intend to remedy that in the near future.
It was our 1st time to visit your restaurant. We really enjoyed our experience. However the service was very slow. We arrived there at 7:30 and and didn’t eat until 9:30. Once we got our food, we all enjoyed it.
We started with some cocktails from their menu and they were excellent. If you like a bartender who can drum up all kinds of different drinks you’ll appreciate this place. We then shared a Charcuterie that was very pleasing to the palate. Doris has a fillet that was cooked to perfection and I had the halibut which was outstanding. We do highly recommend this establishment!

The place and drinks were good. But the food was another story. Our appetizer, the shishito peppers was the only thing we were impressed with. I had the pork chop, which was dry and had almost zero flavor. My wife had the stuffed squash dish which was served almost cold. We had a very long wait but it was kind of nice to not have the food brought out right away. Don’t know if the wait led to our food being dry and cold or not. Definitely not worth the money in our opinion.
The seafood salad was insane! best Ive ever had! Very extensive wine and spirits list, friendly staff, romantic lighting.
Food was subpar to the cost. We had the duck and lamb and both were dry. Drinks were good. We unfortunately sat in a long booth next to some unfavorable people and I could hear everything they said. It was like we were sharing a table with strangers.
We were out to celebrate a friend’s doctoral defense and unfortunately, had a terrible experience. We had a reservation but the table wasn’t ready. They offered us a high top table to have drinks while we waited. We got a drink menu and water and were still waiting for someone to take a drink order 25 min later when they came to tell us they had a table ready in a small cozy annex room with 4 other tables (all full).
We sit down at the table. 10 min go by. 15 min go by. No one has come by- not to say hi, not with water, nothing. We can see a server doting on 2 other tables but it’s crickets where we are. We are all looking around, trying to make eye contact with someone working our section. No response. I got up to find the host. After a few minutes he returns to the front where I flag him down and ask that someone come and take our drink order. Instead of our server coming over, he comes and takes our drink order. The drinks finally come. Now we’ve been at the restaurant for about an hour.
We get almost through our first drink- still no contact from the server. I got up AGAIN to find the host. He’s nowhere to be found. The server working the other 2 tables walks near me so I stop her and ask if she could find or server and send them over. I assumed it WASN’T her because what person waiting tables in a nice restaurant like that would flat out ignore a 4 top in her tiny quiet section for 30+ minutes? Well- she was our server. She came over a few minutes later to take our order. There was no mention of specials/soup of the day or anything fresh or new on the menu until prompted. Again- bizarre for a restaurant like this.
Finally! Order is in! Everything took so long to come out- the pacing was horrible. Snacks and bread came out in a reasonable amount of time but then we were waiting for so long for our main course that I again had to flag down the host. Ugh. The food was fine. But the experience was so horrible we will never go back.
For the price of the meal, the service was slow. Our main course came out over an hour after ordering. The waiter was very polite but seemed to be extremely busy.
We’ve dined at Colt and Gray many times so when we needed to entertain someone in a quiet environment, with good food and attentive service we felt confident in booking a table.
The service was poor and our server was clearly overwhelmed. The food was late, cold, and only average at best, and the bill was high in terms of what we experienced.
We’ll think twice before returning and won’t recommend the restaurant until we have several consistent experiences.
Had an amazing dinner with my family in town. The steaks are priced high for good reason. Will definitely come back!
Hands down my favorite spot downtown. The apps are amazing as well as anything I've eaten there.

The food was AMAZING!!! One of the best dinners I have ever had. We had the Filet, Ribeye, Oysters, Roasted Peppers, and the Key Lime Pie. There was a little confusion regarding which sever was helping us but they remedied the situation. GREAT customer service which is REALLY important to me. We will definitely be back.
Tracy was fantastic. Great selection of charcuterie, wine selection is diverse and the best seafood I’ve had (coming from the East Coast and Hawaii, that’s not an uninformed compliment). One of the few restaurants I can say I will definitely come back to. And soon!
We had a lovely dinner and they went way out of their way to provide the best information about the meal and ingredients that they could. We loved our waiter as an individual, but his strong suit wasn't attention to the table where drinks had run low, we didn't have a place setting, it was obvious we weren't eating part of the meal, and when we split a plate they didn't bring double the utensils for that plate etc. We found ourselves talking with other waiters throughout the meal. Overall, it was a lovely experience and we enjoyed it, but nothing about the dinner really stood out as particular or outstanding against other high end American restaurants? We would return to Colt & Gray for a lighter dinner or drinks.
As always....outstanding. Always special even when it's not. We had our wedding here and come back periodically. Always something good to eat and drink with very attentive hosts.
one of our guests had a drink spilled on them and the table - no one offered to clean up the mess, replace the drink or the food. that was soaked. our meal took close to an hour to be served
not a great experience
I was there for my birthday dinner and was underwhelmed with the service. I left an immediate response on Open Table and the restaurant blocked my review by saying I was a no-show. I wrote to open table and then had them restore my posting privileges. I even wrote to the restaurant the day after and they haven’t returned my message after 4 days. Very disappointing.
Here was some general feedback on the meal.
The waiter took more than 30 mins to deliver drinks. When asked he brought my wife a comped drink but nothing for myself. We also waited for the whole
Meal for the waiter to bring an ice bath for a bottle of wine.
I expect better service especially when you order more than 300 worth of food/drink.
Tables are too close together to gracefully get in and out of your seat when someone is right next to you.
Trendy interior, food lacked flavor. I did not feel the value.
