Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at the world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service alongside his wife, Faith who is equally passionate about giving back and the service industry. Chef Wes, Executive Chef at Choplin's Restaurant and his wife, have built a true institute, 15 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

Choplin's provided exceptional service from the moment my husband and I were welcomed by Faith and continued throughout the evening with our server, Kelly. Both of them are a delight! The food was EXCELLENT! We enjoyed the crab dip appetizer, scallops, sea bass and strawberry cake. It's clear that Chef Wes takes great pride in his culinary craft. I highly recommend Choplin's for a top-notch dining experience.

I can't say enough great things about our experience at Choplins —they absolutely nailed it hosting our bachelor party dinner for a group of 16 rowdy guys. From the moment we walked in, the staff was welcoming, attentive, and incredibly professional despite the chaos we brought with us. What really made the night stand out was how the team went out of their way to make the night super memorible. Tori (our server) was an excellent sport, and had a great attitude to deal with a lot of guys - including constant & hilarious banter! If you're looking for a place that delivers incredible food, top-notch service, and the kind of hospitality that makes you feel like royalty—even if you're a bit rowdy—Choplin's is it. We’ll be talking about this night for years to come. Thank you for making it unforgettable!

We have been going to Choplin's for years and honestly, we noticed a decline in quality the last couple times. But that changed last evening when we enjoyed every bit of the experience. The ambiance, noise level, service, and most importantly, the food, was EXCELLENT. Coupled with it being Wine Wednesday, we thoroughly enjoyed the entire evening. We'll be back.

Choplin’s was a great way to celebrate my Dad’s 60th! The food was delicious, the service was great and we had a wonderful time! They even decorated the table for his birthday 🥹 Tori was great, definitely recommend her as a server! :)

Great experience and attention . Our waitress Isa was great and was very attentive. Some prices are not the best Bread basket $3, Split plates $10. I’m sure they have a reason for these but prices are g exuberant across the board .

Had a wonderful dinner at Chopin’s this week. They have the very best onion soup and their dinners are always delicious. Also the service is impeccable! Great evening enjoying fine dining!

Headed gem. The staff is so accommodating. They treat you like they are genuinely happy you are there. Feels like it’s family run and they treat you like a guest in their home. Our server Kelly was great, we were 2 sets of parents who had the night off and took our time mostly catching up and she never made us feel rushed! Thank you - we will be back!
