Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at the world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service alongside his wife, Faith who is equally passionate about giving back and the service industry. Chef Wes, Executive Chef at Choplin's Restaurant and his wife, have built a true institute, 15 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

Great food and great service. I would make sure that on the couch section that they are wiped down periodically to get rid of any crumbs or food that may be left over from prior visitors.

The seared tuna with rice cakes was absolutely delicious. Consider giving it a try.

This was an excellent restaurant. It was the best dining experience I have had anywhere. The hostess Sara was lovely and so welcoming. Our waitress Kelly was awesome. It was a very busy evening but she never missed a beat . Every portion of our meal was fantastic from the bread to the dessert. It was our first time but it will not be our last . I highly recommend this restaurant to anyone.

We ordered a rib eye steak which is usually a very good steak. However when the steak arrived it was clearly not a rib eye. The steaks were tough and had no marbling. Not sure what kind of steak we were served, however for $60 per steak it should have been much better. We have eaten here many times and never had an issue. The staff was great. Maybe next time we would not order steak and try something else.

This is a must do restaurant everything was above expectations. The food was fresh and amazing the employees was oven the top amazing Sara and Kelly went over and above to make me and my husband anniversary amazing and they knew there stuff.

Another fabulously delicious dinner at Choplin’s! Sarah and Watson took great care of us. We tried the halibut and Filipino steak for the first time. Both were delicious. Cocktails are always perfect. We left full and happy. They were also great with accommodating multiple food allergies.

Never had a bad meal ever here over the last couple of years. My husband and I list this our our favorite in the area!

Sarah and Rebecca were amazing, every staff member was very professional and greeted us pleasantly, sat us quickly. The food was amazing as always. Choplins has been one of my favorite dining places since I moved here four years ago!

Great dinner at Choplin’s! Walked in and was immediately greeted and seated by Sarah. The filet and pork were both cooked perfectly (medium rare and medium). Service was wonderful with our server and Sarah both checking on us throughout the meal. They were able to modify an espresso martini to accommodate a dairy allergy and it was absolutely fabulous!
