Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at the world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service alongside his wife, Faith who is equally passionate about giving back and the service industry. Chef Wes, Executive Chef at Choplin's Restaurant and his wife, have built a true institute, 15 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

We love this place! My sister was visiting so we went for dinner mid-week and it was fabulous! The food was great and our server Sarah was awesome!! The sea bass, red snapper, and salmon were delicious! I would definitely recommend!

The food and service were excellent. They had a record of our last visit which wasn’t the best experience we have had at Choplins. But they went out of there way to make sure that we were happy this time. Choplins always comes out on top when we start thinking about our favorites. You really can’t go wrong and if it does go sideways they will definitely make it right. Just go, we will every chance we get.

Our women’s dinner group enjoyed a nice evening at Choplin’s tonight. We were lucky enough to have Kelly and Sophia taking care of our group. They were attentive and knowledgeable, without being at all intrusive. Great service! All orders were delivered promptly and accurately. Several of us had the French onion soup — tasty and cheesy. Crab dip appetizer is a generous serving of hot crab/spinach/cheese dip served with toast. Diners also had the salmon, and the petite filet, both nicely prepared and presented with green beans and scalloped potatoes or rice. Cheesecake and key lime pie were big hits as well. Choplin’s, as pretty much every other restaurant, has raised prices, so be aware before dining. Still good value and a nice evening out for the price.
