About ChoLon Modern Asian
ChoLon Market, the largest Chinese-influenced market in Saigon, helped serve as inspiration for Chef Lon Symensma’s ChoLon. The LoDo restaurant showcases his passion for Asian ingredients and French cooking techniques in a strikingly beautiful space. ChoLon serves lunch and dinner, as well as a small bites menu that is available throughout the day. The menu features inspired interpretations of traditional Asian dishes. "Many of my dishes are twists on classical Asian cuisine," says Symensma. "I enjoy sharing my own personal perspective on the flavors of Asia." The menu offers several categories designed to allow guests to sample and share many different tastes and flavors during their meal. The bar and lounge serves artisanal cocktails developed to enhance Symensma's creations. The venue is also ideal for business meetings and presentations, featuring a large projection screen in the lounge area.

We went to ChoLon with friends who hadn't been there before, and we all thought it was a fabulous meal, from beginning to end. Some of our favorite dishes were the Crunchy Thai Shrimp Rolls, the Winter Vegetable Salad (sounds mundane, but it's delicious), the Wok-Tossed Malaysian Noodles, and the desserts - wow! The Triple Chocolate dessert was enough for all four of us and was very unique. The waiter was very knowledgeable and helpful. Our table was near the serving table, which wasn't so great, and the restaurant is pretty loud, but the quality of the food would definitely bring us back. Very nice evening!
This was our second visit to ChoLon and it was every bit as good as the first. The reason to come to this restaurant is to sample the very creative dishes. It is best to have at least 4 people in order to have multiple dishes to enjoy. The food has a distinctly Asian bent and a number of the dishes are somewhat spicy. Highly recommended dishes are the lamb, Wagyu beef and lettuce wraps but everything on the menu is excellent. We had our waiter do the ordering and he did a superb job. Service was excellent and the wine list is very good but a little pricey. The ambiance is comfortable but it is an energetic environment. This is not an inexpensive restaurant but considering the quality of the food and service it is worth a splurge.
Cholon was a new choice for our group but enthusiastically liked by all!
The Thai shrimp rolls and soup dumplings were excellent, as was the salad, Diver scallops, pork tenderloin and noodle dish. Only the octopus was not loved; the pairing was unusual.
Drinks were fun and delicious, wine was excellent as well.
This place is great but very pricey- I would reserve for special occasions.
Great service, nice atmosphere (lively and moderately noisy). The food was wonderful. We had the pork belly buns (you get 4 in an order) and the soup dumplings (also 4 in an order), and they were great! We especially liked the soup dumplings, which are dumplings with a French onion soup filling. We also ordered the Malaysian Noodles and the Lamb Shank, and both were delicious. The coconut risotto is not a typical risotto, and has a bit of a crunch to it (uncooked brown rice, I was told by the server). I didn't really care for the crunchiness, personally, but the flavor was great. Overall, nothing too overpowering, but rich taste in great balance. I would definitely eat here again!
We went early (5pm) due to show tickets. Bar was busy for happy hour and we were the first ones sat in the dining room. We had the pork belly (outstanding!) Octopus (ok) Brussel sprouts (great!) and waigu beef (also outstanding) Vietnameese donuts and a chocolate desert ......
Food was great, but the service was even better. Everyone there knows the menu perfectly, and everyone "owns" your table. I rarely ask to see a manager at a restaurant, but did so just to ensure he knew, that whatever they are asking of the staff.....its working!!
We will be back...and often!!
I went to ChoLon with a group of 6 others. We were seated at a round table and could all converse easily. This was my best food experience so far at this restaurant because with such a large group we were able to share a good percentage of the dishes on the menu! Everything was delicious! Our service was outstanding! Consistently a great dining experience!
We ate at the chef's counter so we could watch the food being prepared and interact with the chefs... Everything looked great in the menu so we let the chefs create whatever they wanted to serve us. The whole experience was great. Lots of fun. Great team service. Highly recommend. .
ChoLon is elegant in every way and near the DCPA, so the perfect spot for dinner before a performance or for just lingering over a long dinner. The food, service, and ambiance were all perfect--and they accommodated my gluten-free diet. I highly recommend it.
Went for our 10 year anniversary before a show. We called ahead because we got stuck in traffic and were running about 10 minutes late for our reservation time. They were great and accommodating. When we arrived we were greeted promptly, our coats we're checked and we were immediately showed to our table.
Our waiter was very helpful with the menu and answered any question we had without delay. Dishes were brought out in good order to keep the table from being crowded and the staff was on point making sure drinks were full and empty dishes were bussed.
The food itself was very good, we had the Lobster Saigon crepe and the Wagyu Beef steak, both were fantastic. For dessert we opted for the pumpkin cake that was served with a butter pecan ice cream as well as the Vietnamese spiced donuts with coffee ice cream, both were amazing. They also treated us to a free serving of the apple and pomegranate sorbets with mint jelly and coconut foam for our anniversary, also delicious.
The atmosphere was great and fairly quiet considering how busy the restaurant was whether you wanted a quiet table off to the side or to sit at the bar and watch the amazing kitchen staff at work you could fit your fancy for seating. In summer I'm sure sitting outside would also be a delight if people watching is your thing.
All in all it was a lovely visit and I'm sure we will be back sometime in the future when we are in Denver.
Ate here for a birthday dinner and it was everything I hoped for, for a special occasion. Tried the Kayu Toast and spring rolls for appetizers and the diver scallops and octopus for entrees. The diver scallops were huge and perfectly cooked. Wrapped up dessert with the pomegranate and apple sorbet with toasted coconut soda. Dessert wasn't like anything I've had before and the pomegranate seeds were a nice crunch to the sorbet but I might opt to end the meal on a more savory note next time.
Had a small issue getting seated but they sent over a free dish to make up for it which was very classy!! Our server, Sam, was amazing and made the experience so much fun. Food was amazing and I would definitely go again.
It is a bit noisy and you may not want to go with a large group if trying to have intimate conversation. But great for a date or a party!
