About ChoLon Modern Asian
ChoLon Market, the largest Chinese-influenced market in Saigon, helped serve as inspiration for Chef Lon Symensma’s ChoLon. The LoDo restaurant showcases his passion for Asian ingredients and French cooking techniques in a strikingly beautiful space. ChoLon serves lunch and dinner, as well as a small bites menu that is available throughout the day. The menu features inspired interpretations of traditional Asian dishes. "Many of my dishes are twists on classical Asian cuisine," says Symensma. "I enjoy sharing my own personal perspective on the flavors of Asia." The menu offers several categories designed to allow guests to sample and share many different tastes and flavors during their meal. The bar and lounge serves artisanal cocktails developed to enhance Symensma's creations. The venue is also ideal for business meetings and presentations, featuring a large projection screen in the lounge area.

We found out about ChoLon on Eater's list for Denver and decided to give it a try because we had never been there before. Both of us were really pleased with the cocktails and with the menu options. Service was a bit slow, but we were in the bar area and they seemed a bit under-staffed there. The food was fantastic, everything was excellent. We will be going back to ChoLon.
I'd describe ChoLon as elevated Asian with flavor inspiration medleys from Vietnam, China, Thailand, and Japan. You literally cannot go wrong with any choice on the menu! Plates are meant to be shared and for our party of 4 our server suggested choosing 6-8 of the bites/small plate/shared plate options. We loved it all but the standouts of the night were the Wok-Tossed Calamari with Szechuan Chili, Cucumber and out of this world lime aioli; the Lobster Saigon Crepes with Nuoc Cham and fresh mint and cilantro (closest thing to Ho Chi Minh City that you'll find in CO!), and the Soup Dumplings with a wonderful onion soup tucked inside. This place lives up to the hype!
The service was adequate but not very attentive. Of the three dishes we had, two were good to quite good and one was okay to poor. The okay to poor dish was salmon and sauteed greens - the salmon tasted a little less fresh than it should have (not good given that it was quite rare), the greens were good, but then the whole thing was covered in a layer of potato chips that did not work well with the dish.
After visiting Cho 77, I was excited to see what ChoLon was about. It definitely seemed pricier so I wanted to be sure to catch happy hour. It wasn't clear that happy hour only takes place in the bar/lounge area but once that was figured out we were seated in the lounge. It was cozy but fine for just two people. The drink I ordered was really interesting and yummy and my partner and I were full after 4 appetizer items on the happy hour menu and a desert. The potstickers and soup dumpings were my absolute favorite. The pork belly buns were pretty good as well and the beef skewers were ok. The doughnuts and homemade coffee ice cream were incredible!
Honestly, not too many things on the main menu sounded too interesting to me so I was more than happy with the happy hour offerings (and their prices). Would come back for happy hour selections again since the food was definitely high quality but not too interested in the full price menu or the prices.
One of our favorite Denver restaurants. Be sure to order tapas-style. Start with some "small bites" You may like them so much you order more. Then maybe a "small plate" or two. You may never get to the larger plates. The first time we were here we ordered a lot of things at the start and ended up with too much food. The soup dumplings are not to be missed and the glazed sauce for the gyoza is the best we've had anywhere. Great place for going with friends and trying lots of things to share. Beautiful space. Always great service. Can get a little noisy when it fills up, as it always does by 6:30. Won't break your bank, either.
A wonderful restaurant that challenges your pre conceptions and allows you to
enjoy a meal in a unique and very delicious way. Undoubtedly, a top restuarant in Denver. Go tonight, go often. This place will not dissappoint. Try the calamari as it is as good or better than this experienced eater has tried in Asia or any of the far bigger US oceanside cities. My sincerest compliments to everyone at ChoLon.
The food is awesome. The soups dumplings, pork buns and the lobster crepe are a must. I’m so sad we don’t live in Denver and can’t come back. It’s a loud restaurant though so don’t go if you want a quiet romantic meal, and you end up very close to the next table.
I was so disappointed in this experience. As a certified Denver foodie, I had heard about ChoLon for the past couple of years but never got there until now. My friend who had been there suggested we tell the server not to bring the food quickly, as this is a small plates, sharing kinda place. Although I asked our server to space out our servings, they arrived to out table before we were done with the previous plate. So plate #2 and #3 waited on the table while we finished #1 and so on. Very frustrating. Food was good, but I’ve had better. Service stinks. Atmosphere is kinda cool for sure. Pricey, which I don’t mind if it’s a top notch experience. One and done for me.
This was our second visit to ChoLon and we treated our daughter visiting from Oregon. Although she would have been happy with only the Brussels sprouts we all loved the soup dumplings and Waygu beef skewers. The calamari was outstanding. The lamb shank did not fit with the rest of our meal, maybe because it was the last item served and was heavier and larger than our other choices. We all agree that we would not choose it again although it was very tender and tasty. We will definitely be back.
A good Asian-fusion restaurant with unique food items. Not your standard menu, or your standard decor. We always enjoy our meals here, and usually bring along friends that have never tried it before. A fun lunch or dinner place with a very convenient location when we are in downtown Denver.
