About ChoLon Modern Asian
ChoLon Market, the largest Chinese-influenced market in Saigon, helped serve as inspiration for Chef Lon Symensma’s ChoLon. The LoDo restaurant showcases his passion for Asian ingredients and French cooking techniques in a strikingly beautiful space. ChoLon serves lunch and dinner, as well as a small bites menu that is available throughout the day. The menu features inspired interpretations of traditional Asian dishes. "Many of my dishes are twists on classical Asian cuisine," says Symensma. "I enjoy sharing my own personal perspective on the flavors of Asia." The menu offers several categories designed to allow guests to sample and share many different tastes and flavors during their meal. The bar and lounge serves artisanal cocktails developed to enhance Symensma's creations. The venue is also ideal for business meetings and presentations, featuring a large projection screen in the lounge area.

We ate at the chef's counter so we could watch the food being prepared and interact with the chefs... Everything looked great in the menu so we let the chefs create whatever they wanted to serve us. The whole experience was great. Lots of fun. Great team service. Highly recommend. .
ChoLon is elegant in every way and near the DCPA, so the perfect spot for dinner before a performance or for just lingering over a long dinner. The food, service, and ambiance were all perfect--and they accommodated my gluten-free diet. I highly recommend it.
Ate here for a birthday dinner and it was everything I hoped for, for a special occasion. Tried the Kayu Toast and spring rolls for appetizers and the diver scallops and octopus for entrees. The diver scallops were huge and perfectly cooked. Wrapped up dessert with the pomegranate and apple sorbet with toasted coconut soda. Dessert wasn't like anything I've had before and the pomegranate seeds were a nice crunch to the sorbet but I might opt to end the meal on a more savory note next time.
Had a small issue getting seated but they sent over a free dish to make up for it which was very classy!! Our server, Sam, was amazing and made the experience so much fun. Food was amazing and I would definitely go again.
It is a bit noisy and you may not want to go with a large group if trying to have intimate conversation. But great for a date or a party!
Great night out! We were sat right away, the service was great (informative), and the food was wonderful, thanks much! One of the most popular dishes, the French Onion Soup dumplings, were average. Be bold and try something else! Your taste buds will thank you.

We hoped for a special night. $300 Opera tickets. Pre-opera supper at ChoLon.
We arrived with a standard 5:45PM reservation, but we were informed that our ONLY options were to eat in the bar, or to sit at the chef's counter facing the kitchen.
So, we sit on high stools, in our fancy opera clothes, sharing the counter with a screaming dinner service expediter. Our entertainment was watching waiters wipe fingerprints and sauce drips off the plates.
The chef's counter is great if you choose it. Sitting at high bar stools in fancy clothes, flooded by florescent lights, wasn't the romantic date night we had envisioned.
The food was good. The staff tried to make up for our displeasure. But it was a terrible date night.
Be warned... just because you have a reservation doesn't guarantee you a proper seat in the dining room.
The fish taco were amazing! The Fresh onion soup dumplings are always the star... Very slow service in addition once you got your food they kept trying to take our plates while we were still eating this was the same issues when I cam for dinner ... I spoke to the Hostess at check in that I was doing a business lunch and they kept cutting us off .
I enjoy the food at ChoLon. The brussel Sprouts item is prepared differently than previously. It now has halved or quartered sprouts rather than the previous small more finely chopped sprouts, mixed evenly with the meat and other items. I prefer the previous version as the flavors melted more together.
We have been to ChoLon a few times and while not perfect we enjoyed the meal. However, it is unlikely that we will go back. While very polite, the waitress was somewhat patronizing telling us that "her favorite is… ." Candidly a patron likely doesn't care what the favorite is for the waitstaff; that's not important. Better would be something like "X dish is our most popular" or "Chef today recommends...." something like that. I could not care less about a stranger's "favorite" anything. (Interesting, all her favorites were each the most expensive in its category).
The chef was extremely heavy handed with the spice in all of the spicy dishes and very poorly used salt, if at all, to even delicately highlight the other spices and/or flavors. This was true of almost every dish. There appeared to be a consistent unawareness as to proper seasoning; not of one dish but for all. We'd not experienced this before at this restaurant.
The worst was a Lobster Crepe highly touted by our waitress. Despite it being "her favorite," the most expensive item in its category, and supposedly a big deal dish, it was almost inedible. The crepe had no delicacy or proper crepe texture. It actually had the texture, thickness and taste of an ice cream waffle cone. No joke. It had no flavor - none. Our table of 5 all tasted one bite and left it, other than to eat the very small amount of lobster meat out of it. We left 80% of the dish and no one even inquired about our leaving it!
My wife and I eat out 6 nights a week, generally mid to high end places. This place we would call mid level and it should have been better. It was generally well conceived dishes poorly seasoned, other than the lobster crepe which was just terrible all around. I find it hard to believe that the chef or owner of the restaurant (or anyone making menu decisions) ever tasted that dish!
Our 8th trip to Cholon was once agin memorable! The food, service, and ambience was top notch! We loved the Lamb Kebab's and Autumn Seasonal Salad. The Pork Belly Buns were excellent and there isn't anyway you can pass up on the Kaya Toast! Barbie did a great jog taking care of us! It was also great to see GM Dani and Maitre'd Michael overseeing a well run culinary heaven! We'll be back!
This was our second time at ChoLon and once again, we left full and happy. The food was outstanding and our server helped us navigate it easily to find gluten free options. We sat at the counter this time and enjoyed watching the kitchen team in action. We will definitely be back.
