Great service and delicious food!
Asian fusion is getting old but not here! We loved it. Such interesting flavors. Loved the soup dumplings, yummy and innovative. French onion soup! Loved the brussel sprouts with pork on the side. Thank you for doing that. What really surprised me was the chicken sliders. So crisp. So light and flavorful. I'd get those anytime. If ever I am back in Denver, I'm sure to be back.

Good Asian fusion experience but not a wow. Brussels sprouts were the highlight dish. Calamari a disappointment - would have preferred a lighter preparation with a ponzu sauce for dipping versus aioli .
Great location, great food. Try the Korean fried chicken and you have to have the fries and aioli with it - awesome!

Our adult son was visiting from out of town. As a huge fan of Asian cuisine, we knew we needed to take him to ChoLon for his first time. Knowing what we do about the popularity of ChoLon, I had made a reservation weeks ahead. We were seated promptly and had instant service initiated. Each and every item that we ordered and ate, were as good as they ever have been. I am certain that we will return, although without our son, as often as we can in the future.
The soup dumplings were outstanding. The pork belly bao were magical. The lobster crepes were pretty awful. The dish manger to screw up the best ingredient, Lobster. The Lamb was great as was the risotto. The noodles were so-so. Thai iced tea was special.
Creative tastes, beautiful presentation and sexy ambience. I liked sitting at the chef’s counter!

Food and service was excellent. My date and I ordered 3 small bites and 1 small plate which ended up being plenty. There was 1 dairy free dessert, the sorbet, which was delicious, just as good as any dessert on the menu!
Friendly staff, who are equipped to get you in and out for theater crowd. Menu is not large, but thoughtful and delicious. We especially enjoyed the calamari and winter salad. There early, it was delightful for sound and talking. By the time we were leaving (6:45) much fuller, it was hard to hear ourselves.

All the food was wonderful. The Wagyu skewers and soup dumplings are my favorites. The happy hour red was a lovely Malbec. Met a friend from out of town who also enjoyed it. It was a reminder to me that I definitely need to go there much more often !
One of our "goto" places to eat when we are in Denver. Always great food and service.
Another excellent dinner at ChoLon before a CSO concert. Sat at the kitchen counter again, so got to watch the kitchen staff at work. Sat next to Dani, the manager, who directs kitchen operations. Fascinating to watch and listen. Also got some excellent suggestions on dishes to try. Again the food was excellent. Do not miss the Soup Pillows! Wok dishes also excellent. I'll return again soon.
Having heard of ChoLon for so long, we finally had a chance to plan ahead and get reservations during happy hour on Saturday. The food was outstanding and creative, except for the pork tenderloin, which was a bit dry and served with a disappointingly bland kimchi.
A word a caution -- while they do offer a happy hour menu and will honor reservations during that time, that menu is only offered in the (tiny) bar. This is not mentioned anywhere on their website or in the reservation confirmation. If the bar happens to be closed for a private party, as happened on our visit, you'll pay full price. No exceptions. We asked. They shrugged.
Bad service but good food. I would not go back. It was noisy, a drink was spilled, coat was dropped & table was not ready when we arrived.

One of the best meals I’ve had in my entire life and I eat all over the world
I love the variety of flavors in the food here and the fact that they can accommodate large groups, so I have enjoyed bringing friends and out-of-town guests to Cholon. But I won't be doing that anymore. We arrived on time for our reservation at 7:30 and weren't seated until 7:50 without even so much as an apology from the host or hostess. Our waiter came over promptly but was so loudly and rudely interrupted by the drinks server that our waiter awkwardly excused himself and returned later. The whole table felt uncomfortable. The "Asian Pear-Suasian" drink is as terrible as its name (tastes like it's half vanilla extract). Service was slow and spotty. Overall I felt that Cholon felt entitled to my business, and I'll be taking it elsewhere.
From small plates to the wok "sides" there was not one miss on the menu. Try the doughnuts for dessert. They are fantastic. My only issue is that I have trouble hearing in the main dining room! But if I just shut up and eat (lobster crepes! Can I have more, please?!)...it's not that big a deal.
We had a great dinner for two early Friday and really enjoyed the whole experience. It was a bit pricey for what we ordered which was mostly vegetarian. Check it out!
Everything was great! My favorite part of the meal was the appetizers; I could go there and just eat the appetizers they are amazing.
The food was amazing. The menu showed a variety of great options for those on a strict diet. However, customer service was poor. Our male server was horrible in checking in with our table. Our busser (female) was great in clearing dishes and refilling our water glasses. The ambiance was perfect for a business meeting. The acoustic inside the restaurant worked well.

The food was fine but the service was terrible. It took 2hrs to get our food. In the time the waiter only checked on us a few times. We sat with empty drinks for at least 30min. The price and the service made it a poor value for us.
Food was good but after the first dish they all started to taste the same. Same spices and same texture.

This is my favorite restaurant in Denver. Soup dumpling filled with French onion soup, Wagyu beef skewers, pork belly dumplings and heavenly pot stickers. Followed by the most divine black tea panna cotta with spicy tapioca, merengue puffs, crunchy stuff and bobas. An explosion of flavor and texture. I’d repeat this dinner anytime. Service was exceptional al. Who could ask for anything more
The food here was very creative and delicious at the same time. Our big challenge was the noise level. We could hardly hear each other. We actually won’t be back due to that
