Slow service even at 6:00 PM. The “Energetic” rating is charitable - this is a loud, noisy restaurant. Really enjoyed the food.

Everything was great, BUT server was not very knowledgeable about ingredients or preparation of most of the dishes, which left it to me, as the host of our group, to explain. Also, when our Yuzu wine was delivered to the table, only 2 glasses were poured, although there were 4 guests. I had to get up and leave the table, retrieve the bottle from the ice bucket and pour the other 2 glasses which essentially deflated a potentially great moment for my group.

Good spot for happy hour cocktails and all the soup dumplings you can handle (they live up to their reputation), but skip dinner. There were still two of our four overcooked scallops on the plate and the server just cleared them without asking why we’d left $20 worth of food untouched. Of the five plates we ordered, two were good enough to warrant another visit but none good enough to warrant the prices.

Not as good as it used to be, but still good. For example, the soup dumplings, formerly a real treat, are now "French onion soup dumplings". A real come-down. Very noisy, and erratic service on a Friday night.

It was an hour before we received our main dish. Noise level was high, so we couldn’t talk much. We shared a sea Bruce Bassoff, and for the first time in my experience, the waiter did not offer to bone it for us. The result was a mess.

Our server (I wish I remembered her name!) was awesome, she even got my glass of wine for my birthday. Every dish was divine, particularly the Kaya Toast, french onion soup dumplings, and potstickers.

Only gave 4 stars to ambience because I think the lighting could be warmed up a bit at the two-top tables.

Other than that amazing!

This was a special dinner for my son, who was visiting from California, and me. I had requested a table for two, farthest from the kitchen and not in the center of the room. I was given a wonderful table close to the front of the restaurant and by a window, which allowed for conversation without straining to hear. Our waiter was terrific. As usual, they spaced the dishes out so we could enjoy each one without feeling rushed. Of course we had he amazing dumplings. A visit wouldn’t be complete without them! At one point, someone appeared from the kitchen with a complimentary side of delicious balsamic roasted Brussel sprouts. My son asked if he could sample two beers they had in rotation before selecting. The waiter returned with four beers from which to choose, all a healthy amount. I ordered a glass of Malbec, which was promptly served. I had a second glass midway through the meal. Then, toward the end of our meal, someone appeared from the kitchen and poured me another refill. I asked our waiter why I got a third refill, and he said he wasn’t sure I had received the second glass, so he sent someone to pour, just in case. I wasn’t charged for that pour. All in all, it was as delightful an experience as I could have hoped for. My gratuity reflected the experience. This is my go-to restaurant for special occasions, for out of town guests and just “because.”

Wait staff is incredibly passionate about the menu and you can see a general "hustle" throughout all of the staff. Food is excellent. Highly recommend the pork belly buns and soup dumplings. Really great experience.

Food delicious. Twice when servers picking up plates, etc. from table dripped food on our coats and purses which were lying on the booth at the table. Not good! Tainted our experience which was unfortunate.

From start to finish - the food was excellent. The French onion dumplings and pork belly buns were the best. Wagyu beef entree was also very good. The Spiced doughnuts with Vietnamese coffee ice cream was the perfect end to our best meal in Denver.

We had a fantastic experience Sunday night At ChoLon. We were celebrating my clients and friends closing on their new house. Everyone made our experience really nice. My guests had never dined with you before. They are huge fans now! The service was impeccable. The food was delicious and the complex flavors were a surprise to the first time visitors at my table. Our server knew we were celebrating and brought us a sweet surprise after we were finished with our meal. the attention to detail was incredible. We will all be back, together or separately!

The service was so bad. It’s a shame because the restaurant is beautiful and the food is very good. But the service experience was dreadful, per usual in Denver. If these waiters were in New York, they’d be fired in one day. So rude, slow, and have major attitude. Not a good look. We won’t be back based on the service.

I've dined at ChoLon several times and am never disappointed. Because I've raved about it in the past the couple that joined us were very excited to try it out, they were thrilled with the outing.
As usual we ordered a couple of plates too many, but we didn't leave anything behind.
Our only complaint was that the king crab and bone marrow gnocchi was one item that we will not order again, no crab meat, and a little bland for our taste.

I love this place and I bring guests here whenever they are in town. But the food was mediocre at best, not sure if things have changed there but we were so disappointed. At least the wine was good.

We have dined at Cholon a couple of times per year since opening. Last week I was disappointed. The food is well prepared and delicious. HOWEVER, each course, small or large, is very rich. It’s hsrd to order a “balanced” meal. Almost no vegetables, only one salad, even Brussels Sprouts, although tastey, are prepared with ground pork. So even ordering 2 appetizers and 1 main, we left feeling sluggish.
Food service was lightening fast. We got each course even before we got our drinks, and we had to send our main back as it was cold ( probably as it was done way too soon ), thus requiring us to send it back AFTER we got our wine. Cold lamb shanks in sauce:(
Thus we felt rushed. The Mgr did check in with us when she learned we sent something back and was apologetic. We were too full for what would have been a comped birthday dessert. So they added it “ to our profile”, rather than simply comping a glass of wine.
Altogether it was an expensive, good tasting meal, but still disappointing.

I wasn't able to accurately answer the noise level question as I was there very early and the restaurant had not filled up yet. The food here was amazing and the staff was knowledgeable and attentive without being smothering. The wine that was recommended to me paired perfectly with my meal. On my next trip to Denver I will definitely be eating here again.
