This was our first visit and we got the suggestion from a “Best Restaurants in Denver “ list. We ordered 3 small bites and a shared plate. Everything was superb. Service was wonderful and wine was delicious. We now have a new favorite restaurant!
We hosted friends from Los Angeles the other night. They loved it! Hard to converse as it’s loud. Once a couple of big tables are sat...boom. It gets pretty loud. Otherwise great food. Great staff. Thanks
Excellent food and wait staff. but host was a little rude. No parking available near by. Their garage was full. Otherwise I would have given 5 stars all around.
Kitchen view at the bar is the best way to experience your cuisine and I’m so happy I spent my birthday here.
This place is great but for the noise. It's just too noisy even with a quiet seat, so for the feint of hearing or tolerance for this, it's not optimal. But generally it's got magnificent food and service. It's terrifically unique, seriously.
So for me it's worth it, better on the earlier side when it's less crowded.
This was our second visit and it was every bit as wonderful as our first visit! The service was impeccable and the food was excellent. Our waiter was very knowledgeable about each menu item and recommended exactly the right amount to order!! The cocktails were awesome and unique and the wine list was interesting. We will definitely be back!
Soup dumplings are amazing.
Dinner at the ChoLon Modern Asian on a Friday evening was very good. The restaurant was at capacity and as a consequence the noise lever was moderate making conversation somewhat difficult. The food was excellent. The sauces accompanying the "small bites" were exceptional. The concept of "shared plates" for the entrees was very good; one entree shared by the two of us was sufficient. The service as professional, helpful and polite. The ambiance is attractive.
The food was delicious, the portions were small which was expected. The French press coffee was also delicious.

The soup dumplings were amazing! I also highly recommend the brussel sprouts, pork with kafir lime. Mind blowing!! Kaya toast as a dessert would round out a great meal.
My new favorite restaurant. Can’t go wrong with anything on the menu!
It had been a while since we’ve eaten at Cholon. We brought our son (a foodie) for his birthday. Everything was delicious. The whole experience was great. As good as I remembered. Sharing plates is the way to go.
Eating at the Chef’s Counter was an awesome experience. We ordered the soup dumplings to start and they were excellent as was the “bread” and house made dip they brought to the table to begin our meal. It was easy to see why the soup dumplings are ranked #1 food to not to be missed in Denver.
Our entree, the crispy whole striped bass, was melt in your mouth and so flavorful! The house made sambal was outstanding with orange citrus notes. While there was plenty of stir fry vegetables (we couldn’t finish them all!) under the bass presentation and piled with fresh herbs, we also ordered a plate to share. The Malaysian noodles were cooked perfectly and they did not skimp on the egg and seafood. It was fun to watch the line cook prep our noodles prior to the stir fry!
Lastly, the tamarind spritzer was a refreshing and not too sweet drink to accompany the meal.
In summary, I was impressed by the meal in terms of freshness, creativity, and execution of the dishes. An added bonus was sitting at the Chef’s counter to see the precise execution. It left me very impressed!
The music was very, very loud. We thought there was a live DJnor band. The food was ok. Not good, certainly not great. We both left saying ‘we will never go back, not worth it’. We wanted to live this place but it just isn’t good enough to like it.
Creative, delicious food. Great service. We arrived between 5:00 and 5:30 and the noise level was low but increased as we finished our meal. I recommend the soup dumplings, the sorbet and the feta cheesecake with golden milk ice cream. I’ll eat here again

ChoLon was exceptional. We sat at the chef’s counter and experienced not only a delicious dinner, but a show as well. The chef’s on the line engaged with us and one of the managers came over and thanked us for celebrating our anniversary with them. Our server was very friendly and made great suggestions. I would highly recommend visiting!
Second time here and it was amazing as expected. Pork belly buns, calamari, Malaysian noodles, Brussel sprouts all incredible. Drinks and wine were great too. Service was nearly perfect. Don’t remember his name though.
I love to eat and cook Asian-style food and can generally recognize talent. Everything we ate was “worthy.” Portions were appropriately sized, served at the proper temperature and spaced thoughtfully.
The food was excellent! Kaya appetizer, scallops, brussels sprouts, salad...all very shareable family style.
Service was friendly, knowledgeable and attentive, atmosphere was comfortable, fun and upbeat and food was outstanding.
Cholon has become our special occasion destination. The food and service are outstanding, the cocktails are impressive and every course is an experience

We (2 people) ordered all of the small plates for our dinner and it was a perfect amount of food...but then we needed one more order of soup dumplings because they are the absolute best! Everything was amazing as always!
We had a 7:30 reservation, but were not seated until 8pm.
We were almost seated then sent back to wait 10 more minutes!
We tried all of the appetizers and all were outstanding.
ChoLon has been a gem since its arrival in Denver. Thank you Lon! One wonders as restaurant moves towards multiple location enterprise who quality and consistency will hold up.

Best dinner I have had in a long time. We had a large group and were able to do the chef's tasting courses. Wow, that was fun. And so much food. This place is good for any kind of dinner or just drinks.
Delicious food. Most of the foods have just the right amount of kick. My Negroni, however, was too sweet. Very loud atmosphere; you cannot speak at a normal voice and be heard except by the people next to you. I will repeat.
Shared the bass and stir fried vegetables/ one of the last delicious meals we have had out Everything was great except for the too loud techno beat music.
We had a lovely table of 6, well taken care of. food was outstanding and wine selection really good. I had a wonderful time with clients and coworkers. High recommendation.

Great Dining place for experiencing exotic food and ambiance. Was sitting counter table facing chefs cooking at the kitchen. Great rich flavor entree and seeing creativity of the dishes.
I had excellent service! All the tables for two were super close together. I thought the food was good but the portions were too small to share in my opinions (Sharable is how the menu is designed ). I would have be fine with the price if I had a little more food. My entre was 6 scallops and I had to share.
My daughter and I chose shared plates. We had Wok Tossed Calamari, Crunchy Thai Shrimp Rolls, Pot stickers and our favorite Pork Belly Buns. We also had the Demon Slayer sake, which was awesome! We will definitely be back!
