Jose Andres’ new place isn’t quite up to the level of his other spots, but it’s a fun time for Peruvian, Japanese, and Chinese fusion.
Good and drinks were outstanding as usual. Tried the tenderloin this time and the flavor was amazing.
Really cool and bright atmosphere. Heard about the aeropuerto and gave it a try. Smelled delicious, but too salty for my personal taste. One of my friends who also ordered the dish thought the same thing. The dumplings, though, were my favorite part of the meal. I liked the pre-fixe option so you can try a little bit of everything. Raspberry lychee Popsicle was great! Something nice and refreshing at the end of the meal.
Great menu of appealing food. Super-attentive to allergy list, even recommending something on the menu I hadn't noticed, but which I ordered and found delicious. Good red wine choices, excellent service from both bus-staff and waitress. We're eager to go back.

My husband and I chose this restaurant to take his sister and brother in law as part of a gift to them, knowing that all of us admire Jose Andres and had not yet been to China Chilcano. The experience reinforced that excellent food cannot fully compensate for service and design flaws. I did not enjoy where I was seated - drab, dark and offered little ambiance, including busy wait staff frequently very close by. We had to remind the waiter that our wine had not been served, but the worst was when our guests were looking forward to ordering desserts and the waiter brought our check without asking if they would want dessert or coffee. My husband and I both had the $55 tasting menu and the others ordered a variety of other dishes. All of the food was interesting and excellent!

Great food, good service. Unfortunately, the great Latin music was replaced early on with a lousy technopop dance track that killed the ambiance.
Not authentic Peruvian food, lacked flavor and seasoning in almost every dish. Poorly made and prepared.

I took my husband here for his 30th birthday. He has a great pallet and a taste for fine cuisine. We were blown away by the service and the incredible food! Will definitely recommend to anyone looking to go on a fancy date or celebrate a milestone!
Six of us celebrated a friend's birthday. The food and service are excellent and we were surprised by the very reasonable bill given all the apps, mains, desserts and drinks we had ordered. The complex menu of different fusion cuisines is a bit hard to understand (unfamiliar) but just follow the servers' recommendations and you'll be fine! Outstanding dishes: apps: Dancing Yucca. Main- Lomo Saltado, Salmon Tiradito ceviche, Aeropuerto Fried Rice. ALL THE DESSERTS!
We were also happy to support one of Chef Jose Andreas' restaurants. We are so appreciative of all his good works. He went to Puerto Rico after Hurricane Maria and fed many thousands, setting up cooking and distribution quickly where the bureaucracy could not move quickly enough.

China Chilcano is one of the unique dining experiences that you won't find just anywhere. As part of the Jose Andres restaurant collection, it offers a predictably high-quality dining experience. China Chilcano is especially good if you can't make up your mind whether you want Peruvian, Chinese, or Japanese cuisine. Here, you can have all three!
Had dinner here before a Capitals game - interesting/fun menu. Enjoyed all of our dishes (noodles, dim sum, ceviche). Service was attentive.
All the dishes were perfect! New tastes and pleasant surprises did not disappoint. Cannot wait to return.
Some of the food was served too cold. Pork belly should be served really hot in order to maintain the crispiness.
Every dish was amazing, but the ceviche and the Xiao Long Bao stood out. The service was wonderful, and we were even presented with a glass of champagne to celebrate our upcoming wedding! I only wish we saved room for dessert because it looked delicious!

An amazing experience
It is always good at China Chilcano, but sometimes it is just great. Between the beet ceviche, the dumplings and the amazing Arroz con Mariscos, this was one of those great evenings. PLEASE CONSIDER ADDING THE ARROZ CON MARISCOS TO THE REGULAR MENU. It’s that good!

The lunch set menu ($20 per person) was a lot of food. We really enjoyed unique taste of every dish that we had. Fantastic food.
The ambiance was very nice and the service fast. The drinks were not too great unfortunately, I ordered a pisco sour but needed more lemon. The food, some plates were great ( chaufa con pato, ensalada de chonta) and the dessert was excellent (ponderación). The prices were pretty fair but i would’ve liked for the portions to be bigger.
I went to China Chilcano for lunch. For the Federal Govt consulting crowd, it is easy to get to. Right in Chinatown. There is a lunch menu where you pick 3 things from it, and so it's easy to decide what you would like. The food is delicious, creative, and everything you would expect from a Jose Andres restaurant. The service is top-notch with very friendly and attentive servers. The pick 3 lunch menu will be served and completed in 1 hour if you have a time crunch. For non-business lunches, the cocktails are amazing (they specialize in pisco sours of all flavors) and the wine list is great too. There are creative non-alcoholic drinks as well. I highly recommend China Chilcano for the food, ambiance, amazing staff and good location. There is a parking garage 1 block south (D St and 7th St NW) for $11 after 5pm.
My group of friends had a wonderful evening at China Chilcano. We worked our way through several dishes, which were delivered to the table for all to share. Our favorites were the Chicken Katsu, with chicken that was crispy on the outside, a wonderful Asian slaw and fresh steamed buns and then the Pulpo al Olivo Rosita Yimura (Nikkei) with octopus shaved paper thin. It was truly remarkable. All of the staff were helpful, from the front desk which immediately seated our group even though we arrived early, to our knowledgeable waiter, and the bar manager. We loved the pisco cocktails and the pisco sour was just perfection in a coupe. Thank you so much for a wonderful evening.
