About Chimney Park
Chimney Park Restaurant & Bar, established in 2007 by chef and owner Jason Shaeffer merges the refined elements of dining with a feeling of accessibility and simplicity. The restaurant has become a regional, state-wide and national dining destination in Northern Colorado. In recent years Chimney Park has won the DiRoNA Award of Excellence, OpenTable.com Best Restaurants in America, 2011 and 2015 and Wine Spectator Award of Excellence 2014 through 2017. Housed in historic downtown Windsor, Chimney Park’s original building from 1895 has undergone a recent renovation in 2017, the restaurant’s 10th anniversary. Chimney Park sources local, seasonal and organic products from Colorado and the surrounding region. Decided to check out Chimney Park, a local restaurant for us, for the first time for our anniversary. The food (steak) was spectacular. The service was friendly, albeit a tad bit slow, but don't let that be a show stopper. The chef(s) prepared our food exactly how we asked for it and it was superb. A great place for that special occasion, or perhaps a group of four. Space is limited, so I'd advise reservations.
We have been to Chimney Park several times since we have moved to Windsor. The food has been consistently unique and extraordinary. The service is always top shelf and extremely accommodating to the customer. We plan to return again and would recommend Chimney Park to anyone wanting a memorable evening for dinner. This visit was for a birthday for our son and they brought out his dessert that was elegantly presented with Happy Birthday written on the rim of the bowl. Simply beautiful.
The food was outstanding! We came for our 46th wedding anniversary as we did for our 45th. At our 45th we were given a free desert but for this one we were charged for a desert. I was a little disappointed, but my husband wasn’t. So thank you for a delicious dinner

Too much background noise too open
We had the Chef's tasting with wine pairing. I had requested a quiet table and they saved us the perfect table in a nook at one end of the restaurant. A 5 course meal where you have no idea what you are getting, plus a 1/2 glass of paired wine with each course. What fun. Great food, wine and service. Chimney Park hit it out of the park.
This is the third time in two months we have visited Chimney Park, and it never disappoints. Dan was initially our "accidental" waiter and now we ask for him every time. The bartender knows how to make the perfect martini for my partner, complete with blue cheese olives. Wine-man Bryan opened a wonderful bottle of wine he initially thought might be too young (a 2012 Pinot Noir from Sonoma Coast), and it was delicious! He was willing to discuss the issue with me before I decided to order it for the table, and I'm happy about that. It was a perfect choice for all of us, paired with our meat and seafood dishes. I hope he still has some in a few years so I can experience its aging journey.
Our friends hadn't been to Chimney Park, and they were quite impressed. Scallops or lamb saddle or bison steak, soups and salads, steak tartare, and desserts were all exceptional!
We spent over 2-1/2 hours just relaxing and enjoying our time together in the comfort of the intimate dining room. Dan paced our courses to allow us to take our time with everything, and I appreciate that.
We will definitely be back!
The Chimney Park team has consistently delivered an excellent dining experience on each of our visits over the past few years. The staff is attentive, knowledgeable and engaging with the appropriate degree of interaction -- Delaney will meet all your expectations of a fine dining professional waitstaff. The food is exceptional -- well thought out, seasonal, balanced, and prepared expertly. Chef Shaeffer has an excellent culinary team with Chef John and the kitchen staff. The restaurant renovations are a nice upgrade -- but the heart of the experience remains the food and the staff.
Chimney Park has been our go to destination for special occasions. We have been going there for Christmas Eve dinner for about 4 years now. This years experience has not been as good as before. The food was excellent, as always. The service not so. My wife's white wine was room temperature. She sent it back and declined to order another wine. The server brought her another white wine, different grape variety, and apologized and said this wine is on the house.
I was never offered another glass of wine after I finished mine. When dessert was served we were never offered coffee. We had the feeling that they needed for us to leave because they needed the table for the next guests. This was not leisurely dinning like we expected. We may
not come back again.
I got a call from Mr. Schafer, the owner and chef. He apologized and stated that it was not their intention to “move us out.” The Table was ours for the night. He said he’ll speak to the server. Also he’ll look into why the wine was room temperature. This he said, is not right. He also offered to send us a gift card for our future visit. Al in all I felt that the owner cared and tried to make things right.
This was the first time we had the tasting menu and wine pair. It was fabulous. Very unique. Each one of us has a different menu for each course, and a different wine pairing. Our server was very good at describing the food and the wine. We could not have had a better time.
We had an early family Christmas dinner. The service and food were amazing, as always. We dine at Chimney Park quite regularly, but it is spectacular as a special occasion restaurant. Best steaks in Colorado, imo. But there are also perfectly done seafood, lamb, chicken, and vegetarian options. They also have an extensive wine list. Fine dining at its best!
If you love fish dishes (as I do) the bass was excellent. My husband always goes for steak, which he thoroughly enjoys. Loved the chocolate mousse and creme brulee for dessert. We were celebrating our 49th wedding anniversary and the restaurant decorated our dessert plates in honor of this milestone. We highly recommend this restaurant for foodies (especially).
P. S. The newly remodeled interior is exceptional, too.
My wife and I went to chimney park for my wife's birthday. The restaurant had recently completed renovations and the new atmosphere was cozy and elegant. We did the chefs tasting menu and the food was amazing. Our service was outstanding and overall it was one of the best meals of my life.
Chimney Park is always a treat and the best restaurant we have found since moving here from the east coast. I love the scallops and my husband usually goes with a local bison or fish dish. This trip the tuna tartar appetizer was excellent and our server was wonderful.
ANOTHER great meal at this local gem. Tonight enjoyed a tasty Lobster Bisque and Sole Oscar. Excellent wine list, customer service and quality dishes coming out of the kitchen. If you haven't been yet...make a reservation now, and do the tasting menu with wine pairings..you'll thank me later!
