Chimney Park Restaurant and Bar has a warm and inviting atmosphere combined with a straight forward approach to cuisine. The menu reflects seasonality and items produced within the region. Exceptional service and an award winning wine program will assure you an outstanding dining experience. Menus include an a la carte and 5 course chef's tasting. Chef and owner, Jason Shaeffer, embraces a refined but casual style in cuisine and dining. Shaeffer trained under renowned chefs Thomas Keller (Per Se) and Terrance Brennan (Artisanal) in New York City. He most recently opened 1500 Ocean at the Hotel del Coronado in San Diego gaining local and national accolades. Chef Shaeffer's vision is to create a destination dining spot in Northern Colorado. Chimney Park Restaurant and Bar is conveniently located between Fort Collins, Loveland and Greeley; Chimney Park is a short drive from I-25 to historic downtown Windsor.

We chose Chimney Park for our 15-year wedding anniversary dinner. They never disappoint. The tasting menu was fantastic (and they're willing to accommodate specific food preferences), the cocktails were delicious, and the service was attentive. Great restaurant for a special occasion.

This was my 5th time, and as always, chimney park was flawless. Wonderful food, great service, A+++++

We took advantage of the Chef's Tasting, a 5 Course Tasting menu. And 2 of us enjoyed the Wine Pairing that was offered for each course. It was fun to be surprised at each course offerings as each one of us had a different meal. It worked out really wonderful as this group of friends shared our food, so that we could each taste everything . The 4 of us all had different meals, except the first course was the same for all. Emily did an amazing job of describing each plate and made the evening perfect. The whole staff worked as a time. The Chef was fantastic. to have the variety that we enjoyed, the presentation and taste was lovely. Thanks Chef!
We made reservations to celebrate working hard this year and taking care of our real estate clients. No need to get there as early as we did, but the place was almost full by the time we left, so it is a good idea to make reservations.

We always love coming to Chimney Park Bistro but don't get here often enough. The food is always delicious, wait staff knowledgable, wine list excellent, etc

This time we were slightly disappointed in the Caesar salad . . . lettuce seemed a bit limp. But as usual, the Hazelden Mushroom truffle soup was exquisite! The steamed halibut was so tender, the steak was cooked to perfection, bison tartare yummy, and the waiter even brought me the dessert that was only supposed to go with the tasting menu.

All in all, another exceptional experience.

Food was amazing and continues to display chef Shaeffer’s talent of balancing creative, with approachable and incredible tasting food. Mushroom Soup, Lamb Saddle and Buffalo NY Strip were all perfectly prepared with perfectly matched sides. Carrot cake was also delicious.

Hands down, the best dining experience in Northern CO and one of our top 10 picks within the Fort Collins, Denver, Boulder triangle.

Chimney Park is our favorite restaurant in the area. We moved here from the east a year ago and have tried many in search of fine dining experiences. The menu is exciting, the food perfectly prepared and presented and the service usually friendly and attentive but not overbearing.

I truly believe this is one of the best restaurants in all of Colorado. My girlfriend and I were blown away with both the quality of food and the genuine hospitality and service. The remodel had really improved the overall experience. Chimney Park gives us in northern Colorado a reason to treat ourselves more often.

This is our favorite restaurant in NOCO.--food is always delicious and the menu unique. Four out of six of us had the halibut and it was the best I've ever tasted. Service is always top notch and they are experts at accommodating large groups. You should check it out, you won't be disappointed!

Love the “New” Chimney Park. The food was delicious as usual, but the improvements make the atmosphere equally nice. We found the acoustics terrible in the past. The remodeling has rounded out the experience to wonderful all over!

I found Chimney Park on OpenTable and decided to try it as a special treat for my boyfriends birthday dinner. Our experience was fantastic. The ambiance is warm and inviting. The sound level is perfect for conversation and a romantic dinner. And we loved the dishes we ordered. My scallops were beautifully prepared and my boyfriends lamb was melt in your mouth perfect. The heirloom carrot cake is one of the the best I've had. Seasonal so if it's on the menu, I highly recommend. Thank you for a great night out, Chimney Park! We'll be back!

Chimney Park surprised and impressed us! The food was remarkably great, and the service was friendly and attentive. The location seemed unlikely, and this was the surprising part since it is in a very quiet small agricultural town location. And it is SO WORTH THE DRIVE! Already looking forward to our next visit.

Service and food excellent, but overwhelming noise was awful. Just conversation from 10 tables was like being at a rock concert. We had a hard time concentrating on the quality of the restaurant because of the intense noise.

This restaurant is considered by many to be the finest one in Northern Colorado. The food preparation and quality of service can't be beaten. They have recently remodeled and improved in many ways the function and appearance of the interior. However, the remodeling must not be complete. The bare brick walls and hard surfaced flat ceiling cause the noise created by cheerful customers to be overwhelming. One almost has to shout or speak quite loudly to carry on a conversation. It's difficult to hear one speak across the table. Certainly something is planned soon to eliminate this problem. Of course we will return because the food and service is so good, but we would enjoy it more if the acoustics were enhanced.

Chimney Park is an excellent choice if you have time for a leisurely meal. Both the food and the preparation are high quality and rarely disappoint. Remarkable wine list for the serious connoisseur. Sunday is a good night to go as it is even quieter and less busy, though we didn't feel any rush on a Saturday night. This is not a high turn over establishment. It is possible 25% more costly than other restaurants, but the quality is more than double. Save up and treat yourself! Remember to reserve ahead-very in demand around holidays. don't be disappointed.

Chimney Park continues to be a diamond in the ruff. The restaurant is modern and beautiful since the remodel and the new menu does not disappoint. We had the gnudi with the pork belly and the Lamb entree, delicious!
Service was attentive and the wine menu has wonderful options in all price categories. I can't wait to go back.

This place was amazing! A bit pricey but worth every penny. We let the chef chose our entrees and they also chose the Best wines to compliment each entree, they couldn’t have done a better job. It was like they knew me personally. The waiter was also amazing!

Usually our go-to place for our anniversary, but decided to go to celebrate a business accomplishment. Passed on the chef’s 4-course tasting and just a first and second course. The salad of the day with roasted seeds was excellent as was the sea scallops. Service is always top-notch and I love the quiet atmosphere, especially after the remodel.

Food was outstanding, a delicious blend of flavors masterfully prepared. Service was great - our water glasses were never allowed to be empty. The recent remodel was very well designed and the chairs are much more comfortable. Our favorite place to dine.

The food was great. We had Buffalo that was out of this world! The place is pricey but you get what you pay for. The place is always packed with customers because -duh- the food and service is always great. The only downside for me is the noise. Since the remodel, the new harder surfaces in the restaurant seem to amplify the noise in there. It was somewhat difficult to converse with my date. Vince

We have always enjoyed this restaurant. The newly renovated version left us underwhelmed. It was so noisy, for a special occasion for my wife's birthday, we found it hard to communicate to each other, seated next to each other?
The service was very slow and somewhat inconsistent. We waited and waited for our main course, which was great.
We had asked our waiter for him to check with the kitchen, for by then we had been there over an hour, plus. His response was he had checked with kitchen twice ... Owner was in the kitchen and at that time had empty tables.
Sad to have spoiled my wife's birthday, which apparently means they could care less about being a special occasion restaurant.
Just hope that this not the new normal. We will try again.
