Chimney Park Restaurant and Bar has a warm and inviting atmosphere combined with a straight forward approach to cuisine. The menu reflects seasonality and items produced within the region. Exceptional service and an award winning wine program will assure you an outstanding dining experience. Menus include an a la carte and 5 course chef's tasting. Chef and owner, Jason Shaeffer, embraces a refined but casual style in cuisine and dining. Shaeffer trained under renowned chefs Thomas Keller (Per Se) and Terrance Brennan (Artisanal) in New York City. He most recently opened 1500 Ocean at the Hotel del Coronado in San Diego gaining local and national accolades. Chef Shaeffer's vision is to create a destination dining spot in Northern Colorado. Chimney Park Restaurant and Bar is conveniently located between Fort Collins, Loveland and Greeley; Chimney Park is a short drive from I-25 to historic downtown Windsor.

Chimney Park is always a treat and the best restaurant we have found since moving here from the east coast. I love the scallops and my husband usually goes with a local bison or fish dish. This trip the tuna tartar appetizer was excellent and our server was wonderful.
Chimney Park is a true gem for northern Colorado. While slightly more costly than the standard 'fancy' restaurants, the combination of wonderfully prepared entrees featuring both seasoning and sauces that reflect chef skill and the pleasant, relaxing environment make this truly a 'bargain' in nice dining. I truly have zero complaints and I tend to be critical about dining out.
As we have previously experienced, the food is delicious with every coarse but on this occasion we were fortunate to have had Dan that ensured our evening was exquisitely satisfying on every level. He was so professional & had his timing down to a nano-second with a playful glee in his presentation. The food & wine selection is always spectacular and we will be coordinating our dining with Dan schedule in the future.
My friend and former colleague was visiting from the East Coast. He's a foodie and wine buff, and we've been to many fine restaurants together throughout the US when we were in business together. There are not many places in Northern Colorado that could stand up to the finest in Manhattan , San Francisco, or Los Angeles, and nothing that I could honestly call haute cuisine, that is, with the notable exception of Chimney Park, located in the most unexpected place, Windsor, Colorado. The surroundings are fine and the service and food are excellent. The service is attentive and helpful, without being overbearing, and the food is meticulously prepared with beautiful presentation. My friend had the sea bass and I had the ribeye. My wife and I have been several times and I have referred it to others. All reports have been favorable. It is a bit pricey by NoCo standards, but especially for a special occasion, it is well worth it.
We haven't been to Chimney Park since before the renovations, and I'm glad we decided to give it another chance. Took my mother there for her last night with us and she was over joyed by the experience! Loved the uniqueness of the cuisine and the bass I had had to be the best I've ever tried! Great experience overall.
We love Chimney Park for special occasions. The best restaurant in Northern Colorado, I think. Dan hasa been our waiter for our last two visits, and we appreciate him. We'll see him again at the end of December.
I only gave the "Ambience" category a "Very Good" because I prefer the room with the long brick wall. This time we were seated in the small front room, and it is lovely, but I do love the old brick.

Recent renovation has resulted in fresh environment more suitable to the outstanding food. We all enjoyed crabcakes, porkbelly and fish, with chocolate desserts. Nice wine list. Ambiance and noise level very conducive to good conversation to complement the cuisine. We will happily return.
Food was absolutely amazing! It is expensive, but you are paying for the exquisite food. I’d like to try to chef’s tasting menu with a wine pairing, but will have to save up for that. We will be back the next time we are celebrating a very special occasion.
Jason and his staff create a unique dining experience like nothing available north of Denver, and I would put Chimney Park against anything I have experienced in Denver. The chef’s pairing is absolutely the way to go if it’s your first time there, and the wine list is tremendous. We are very fortunate to have CP in little Windsor!!
I have been to Chimney Park dozens of times. The staff are very friendly, gracious, and welcoming. The food is incomparable to any other restaurant that I have visited in Colorado as well as most other states. I almost always have the Chef Tasting Menu because I never know what I will be getting, so each course is an adventure. The wine list is extensive and priced comparable to other restaurants of this caliber.
Chimney Park was the hands down favorite of our group of 4 to celebrate two November birthdays. We had recently purchased 2 tasting menus generously donated by Chimney Park at the Brews and Bites for Windsor charity event benefitting the Windsor Community Foundation, so my wife and I selected the tasting menus. Our friends selected the bison and the halibut--both outstanding selections in their own right. However, my wife and I were blown away by the five courses prepared by chef John Gutierrez and his staff (since the owner/chef Jason was not in the kitchen, but instead was attending a different charity ball the night we came to Chimney Park.) The kitchen did not miss a trick due to chef Jason's absence, so everyone can rest assured there most likely will not be an off night, even if one of the chefs goes AWOL. Our dinner started when all four of us received a raw scallop under glass, paired with finely diced strawberries. When the glass was lifted, smoke came out. The sight of this course was pleasing enough, but then we tasted it, and it was outstanding. My wife, who generally does not like sushi, raved about how good hers was. We then moved on to a course of Hamachi crudo for my wife, and the seared foie gras paired with extremely moist and flavorful banana bread and jelly for me. One of the best things I've ever had in my mouth! Our 3rd course consisted of a delightful salad for my wife, and a pumpkin squash bisque with pine nuts for me. The night was continuing to build! Our main courses arrived, and a phenomenal plate of wagyu beef was placed in front of me, and an equally phenomenal plate of lamb rib eye medallions paired with foie gras was placed in front of my wife. We both commented after a few bites that we could die now, and be happy. Our dessert selections gently brought us back to reality, and we left Chimney Park 3 1/2 hours after arrival, fully satisfied, and congratulating Chef John and his staff on making birthdays memorable.
We had a wonderful meal, and all of the food was fantastic. Our server was extremely attentive and friendly and the atmosphere was very conducive to conversation and fun. The prices seemed high, but I guess that's what one pays for an evening out in a fine restaurant.
We chose Chimney Park for our 15-year wedding anniversary dinner. They never disappoint. The tasting menu was fantastic (and they're willing to accommodate specific food preferences), the cocktails were delicious, and the service was attentive. Great restaurant for a special occasion.
We took advantage of the Chef's Tasting, a 5 Course Tasting menu. And 2 of us enjoyed the Wine Pairing that was offered for each course. It was fun to be surprised at each course offerings as each one of us had a different meal. It worked out really wonderful as this group of friends shared our food, so that we could each taste everything . The 4 of us all had different meals, except the first course was the same for all. Emily did an amazing job of describing each plate and made the evening perfect. The whole staff worked as a time. The Chef was fantastic. to have the variety that we enjoyed, the presentation and taste was lovely. Thanks Chef!
We made reservations to celebrate working hard this year and taking care of our real estate clients. No need to get there as early as we did, but the place was almost full by the time we left, so it is a good idea to make reservations.
We always love coming to Chimney Park Bistro but don't get here often enough. The food is always delicious, wait staff knowledgable, wine list excellent, etc
This time we were slightly disappointed in the Caesar salad . . . lettuce seemed a bit limp. But as usual, the Hazelden Mushroom truffle soup was exquisite! The steamed halibut was so tender, the steak was cooked to perfection, bison tartare yummy, and the waiter even brought me the dessert that was only supposed to go with the tasting menu.
All in all, another exceptional experience.
Food was amazing and continues to display chef Shaeffer’s talent of balancing creative, with approachable and incredible tasting food. Mushroom Soup, Lamb Saddle and Buffalo NY Strip were all perfectly prepared with perfectly matched sides. Carrot cake was also delicious.
Hands down, the best dining experience in Northern CO and one of our top 10 picks within the Fort Collins, Denver, Boulder triangle.
Chimney Park is our favorite restaurant in the area. We moved here from the east a year ago and have tried many in search of fine dining experiences. The menu is exciting, the food perfectly prepared and presented and the service usually friendly and attentive but not overbearing.
I truly believe this is one of the best restaurants in all of Colorado. My girlfriend and I were blown away with both the quality of food and the genuine hospitality and service. The remodel had really improved the overall experience. Chimney Park gives us in northern Colorado a reason to treat ourselves more often.
This is our favorite restaurant in NOCO.--food is always delicious and the menu unique. Four out of six of us had the halibut and it was the best I've ever tasted. Service is always top notch and they are experts at accommodating large groups. You should check it out, you won't be disappointed!
I found Chimney Park on OpenTable and decided to try it as a special treat for my boyfriends birthday dinner. Our experience was fantastic. The ambiance is warm and inviting. The sound level is perfect for conversation and a romantic dinner. And we loved the dishes we ordered. My scallops were beautifully prepared and my boyfriends lamb was melt in your mouth perfect. The heirloom carrot cake is one of the the best I've had. Seasonal so if it's on the menu, I highly recommend. Thank you for a great night out, Chimney Park! We'll be back!
Chimney Park surprised and impressed us! The food was remarkably great, and the service was friendly and attentive. The location seemed unlikely, and this was the surprising part since it is in a very quiet small agricultural town location. And it is SO WORTH THE DRIVE! Already looking forward to our next visit.
