About Chimney Park
Chimney Park Restaurant & Bar, established in 2007 by chef and owner Jason Shaeffer merges the refined elements of dining with a feeling of accessibility and simplicity. The restaurant has become a regional, state-wide and national dining destination in Northern Colorado. In recent years Chimney Park has won the DiRoNA Award of Excellence, OpenTable.com Best Restaurants in America, 2011 and 2015 and Wine Spectator Award of Excellence 2014 through 2017. Housed in historic downtown Windsor, Chimney Park’s original building from 1895 has undergone a recent renovation in 2017, the restaurant’s 10th anniversary. Chimney Park sources local, seasonal and organic products from Colorado and the surrounding region. We enjoyed our dinner on Feb 13, 2018 to celebrate my husband’s birthday and our sons as well as Valentine’s Day. As a party of 4, We had a very private table in an alcove. Our server Delaney was spectacular, never rushing but keeping us moving forward toward our dinner. Two drank wine and two drank 7 and 7’s. Fantastic wine list and Crown Royal for the gentlemen. We ordered the Crab cakes and Gnudi appetizer to share. They were fantastic - tons of crab but little filler. The Gnudi were accompanied by pork bellies and squash bites. Unusual and delicious.We followed this by Green Goddess and Garden Salads for 3 of us and one with Lobster Bisque. Plenty of ingredients And light flavorful dressing. Everyone praised. We each ordered different main dish. My ribeye steak was huge, flavorful, and accompanied by mashed potatoes and a small unusual spinach and mushroom side. I hate rare meat but this was medium thankfully but not dry. Could not finish it and shared. One had the bison tenderloin, one scallops and one surf and turf with tenderloin and scallops. We were offered a complimentary truffles plate for birthday dessert. Everyone felt the food was unusually exquisitely prepared and displayed. This is the best restaurant in NoCo. It was expensive, perhaps a 1/3 more than Bonefish, but well worth it. Thank you Chimney Park.
We had heard great things about Chimney Park so we decided to try it...we were not disappointed. We had family come to town, they loved it and thought it was fantastic, so good in fact that we promptly made reservations for the next night. We would highly recommend Chimney Park to everyone. Lovely place, wonderful staff, excellent food...I could go on and on about it. Try it for yourselves, you'll be happy you did!
Another great meal at Chimney Park. If you haven't tried the tasting menu yet, do yourself a favor and do so...unlike other restuarants 'tasting menus' that is the same course for every table in the restaurant, there is an excitement not knowing what you're getting next and dishes are creative and fun. (also amazing wine pairings)
We enjoyed our first visit to Chimney Park after moving to Fort Collins a year ago. We celebrated my birthday last weekend, and found the ambiance, the food, and the service to be top notch.
When the check arrived, We pointed out to our waiter that the drinks we had ordered at the bar prior to being shown our table, were omitted from the bill. He checked and returned to say that because we had to wait for our table (we had a reservation) it was their way of taking care of us. We were not at all upset with the wait, as we enjoyed every part of the evening, but not many restaurants would be classy enough to extend this generous gesture. We highly recomment Chimney Park.
Decided to check out Chimney Park, a local restaurant for us, for the first time for our anniversary. The food (steak) was spectacular. The service was friendly, albeit a tad bit slow, but don't let that be a show stopper. The chef(s) prepared our food exactly how we asked for it and it was superb. A great place for that special occasion, or perhaps a group of four. Space is limited, so I'd advise reservations.
We have been to Chimney Park several times since we have moved to Windsor. The food has been consistently unique and extraordinary. The service is always top shelf and extremely accommodating to the customer. We plan to return again and would recommend Chimney Park to anyone wanting a memorable evening for dinner. This visit was for a birthday for our son and they brought out his dessert that was elegantly presented with Happy Birthday written on the rim of the bowl. Simply beautiful.
The food was outstanding! We came for our 46th wedding anniversary as we did for our 45th. At our 45th we were given a free desert but for this one we were charged for a desert. I was a little disappointed, but my husband wasn’t. So thank you for a delicious dinner
We had the Chef's tasting with wine pairing. I had requested a quiet table and they saved us the perfect table in a nook at one end of the restaurant. A 5 course meal where you have no idea what you are getting, plus a 1/2 glass of paired wine with each course. What fun. Great food, wine and service. Chimney Park hit it out of the park.
This is the third time in two months we have visited Chimney Park, and it never disappoints. Dan was initially our "accidental" waiter and now we ask for him every time. The bartender knows how to make the perfect martini for my partner, complete with blue cheese olives. Wine-man Bryan opened a wonderful bottle of wine he initially thought might be too young (a 2012 Pinot Noir from Sonoma Coast), and it was delicious! He was willing to discuss the issue with me before I decided to order it for the table, and I'm happy about that. It was a perfect choice for all of us, paired with our meat and seafood dishes. I hope he still has some in a few years so I can experience its aging journey.
Our friends hadn't been to Chimney Park, and they were quite impressed. Scallops or lamb saddle or bison steak, soups and salads, steak tartare, and desserts were all exceptional!
We spent over 2-1/2 hours just relaxing and enjoying our time together in the comfort of the intimate dining room. Dan paced our courses to allow us to take our time with everything, and I appreciate that.
We will definitely be back!
The Chimney Park team has consistently delivered an excellent dining experience on each of our visits over the past few years. The staff is attentive, knowledgeable and engaging with the appropriate degree of interaction -- Delaney will meet all your expectations of a fine dining professional waitstaff. The food is exceptional -- well thought out, seasonal, balanced, and prepared expertly. Chef Shaeffer has an excellent culinary team with Chef John and the kitchen staff. The restaurant renovations are a nice upgrade -- but the heart of the experience remains the food and the staff.
