Our group of 8 had a marvelous time. Great food, excellent wait staff, and incredible ambiance. We will be back for a return visit.
Excellent as usual. My only "but" was the Bernaise sauce I ordered with my filet mignon. Somehow it was just "off".....didn't taste like it should. But I substituted Worchester sauce instead and everything was fine.

We ordered 8 oz. Of wagyu beef expecting melt in your mouth tenderness. Instead we got a tough, New York strip style steak that was lean, tough, and chewy. What a disappointment.
On the plus side, two of the guests really enjoyed their branzinis.

Very noisy. Food was good served very quickly. Wine options were not discussed nor was dessert. Got us in and out very fast. Service was below expectations. With all the options in Vegas I would go somewhere else for the money spent.

We flew out to Vegas to celebrate my 50th birthday. On the recommendation of a friend, we made reservations at Charlie Palmer. It was perfect from beginning to end. There wasn’t a single thing we thought could be improved upon. From the food to the ambiance through to the service, we were so well taken care of. They surprised me with champagne and a slice of exquisite chocolate birthday cake. We ordered from the the cut of the week menu and the food was incredible. I don’t think we’ve had a more perfectly prepared filet. Our wine glasses were never empty. And the crème brûlée .... oh! my goodness. I consider myself a crème brûlée connoisseur and Charlie Palmer did not disappoint. The sugar topping was perfect as were the beautiful vanilla flecks in the custard. We highly recommend; it was the best part of our trip. We would gladly come back.

Excellent service, food was fantastic. Cut of the Week is a fantastic value. You get 3 courses...appetizer, main, and desert. Unlimited wine pairings for the appetizer and main entree. Can’t beat the deal in Las Vegas for the price and quality.

We loved dinner and the service was top notch
I’ve been to this restaurant several times over the last few years. Unfortunately, with each visit I’ve seen the food get progressively worse. This last visit, I will be my final visit because the food was so bad. I used to tell everyone that the cut of the week menu was one of the best deals in town, but not any longer. I took recently took some friends here and we ordered the cut of the week, petite filet. The steak was absolutely flavorless, and it had several strands of silver-skin running through it, which makes it seem as if you have a mouth full of rubber bands. What chef sends a steak out with silver-skin; what amateur cook would do that??? The sauce covering the steak was also flavorless. The sides weren’t great either, carrots were overcooked and the mashed potatoes were gummy. The dessert was great, creme brûlée, but after such a lousy meal nobody in my party was in the mood to stay and enjoy dessert. I’ve gotten a bad steak before, and I’ve had bad meals before, it happens. But I’ve seen the food here go downhill slowly for the last few visits, it is not a one time thing. So I wasted $240 on a meal that wasn’t fit to be served at Applebee’s. Charlie Palmer would’ve been ashamed of the slop we were served the other night. Nobody in our group could eat their steak because it was so chewy and bad. My dog however had a great night because he got my steak, for the record he did not have any complaints.

Celebrating our anniversary, we expected to be bowled over by the beef at Charlie Palmer.
My wife ordered the filet cooked to medium and it arrived a very dry medium well. Its replacement was a properly cooked New York strip. In the interest of time, she settled for the strip.
I ordered 6oz of A5 Wagyu (a strip cut) and after asking for a recommendation, opted for a temperature of rare. This was probably a mistake on my part. I was introduced to Wagyu in Japan, where the preparation includes the searing of beef in smaller pieces so that the wonderful fats render and baste the meat from within, resulting in a finished product that is close to medium. My A5 Wagyu was seared, then sliced to reveal a visually beautiful rare complexion with a chew that was sinewy and unforgiving, a result of the fats not being able to render and release from such a short embrace of searing heat. And again, my error in judgment. But future recommendations should reflect these details.
Service was impeccable throughout.
The band was a bit loud, but we were seated in a corner near the front of room which provided a bit of cover.
The jazz trio was able to accommodate a wedding song request which was greatly appreciated.
I will recommend based on the wonderful service and the hope that this was just an off night.
Charlie Palmer only does outstanding meals. This was superb.
Cut of the Week menu is hands down the best value in Las Vegas! Ribeye was spot on.
Our wedding evening dinner for 6. The foods in general were great, however, the filets were certainly not what we had anticipated from a steak house. At least two of them were tough. We had expected extremely tender.
The service and the staff were exceptional. And the other dishes were all very good. The steaks were our only disappointment.

What more could we ask for while celebrating our 50th anniversary at Charlie Palmer Steak, excellent food, service, and setting. Also, the wine was very good! Steaks were served exactly as ordered with very good seasoning on the sides. Dessert was just sweet enough to complete the perfect meal.
We will definitely be back again next October to celebrate our 51st. at Charlie Palmer Steak.

The evening at Charlie Palmer was exquisite! Service was as expected at a five star restaurant, professional and friendly throughout the evening. My wife and I started with cocktails and half dozen oysters, shared a ample Caesar salad before the main course arrived. She had the petite filet mignon, prepared perfectly rare as requested, favorable and so very tender. I selected the slow braised short ribs (recommended by waiter) and they were absolutely delicious, served with a wonderful sauce that contained a hint of heat. As a side we selected the CP fries - great choice! The only mistake we made was failing to leave room for dessert - oh well there is always next time. If you want a wonderful dinner and an appetite for beef - you won't be disappointed.
I go to Charlie Palmer Steak Las Vegas once a year while in town for work/vacation. It has been very consistent, the appetizers are delicious (Tuna Tartare for example) and the filet is always cooked to perfection. Cocktails are very good and they always have a gluten free bread option! Service is on point and they are have just the right amount of attentiveness and never feel like they are hovering.
We highly recommend the cut of the week! Amazing food with wine pairings. The service is always outstanding. This is definitely one of our favourite restaurants in Las Vegas.
The seafood platter had bad shell fish and the steaks were just ok. Disappointing. Would go to prime or old homestead instead.
