Cello Ristorante & Bar
We love the Cello Restaurant. We recently moved here to Paso Robles from Long Beach and were frequent patrons at 555 East American Restaurant, down town Long Beach for the past 18 years. We have looked for a great steak that would equally be as great. The Ribeye Steak here at the Cello is superb and far surpasses the steak at 555 East because of the Oak Grilling used for cooking which enhances the flavor of the steaks. The added sauces for the steak and fresh garden vegetables are delicious! The Chef is to be commended for his expertise and exquisite presentation of the Rib Eye steak dinner. We look forward to this and wish to try other dishes if we can get passed the steak...we can seem to want anything else!
Also, nothing is as wonderful as the Italian ambiance of the Allegretto. I don't have to go to Tuscany anymore to get my fill of Italy!
This was our third visit to Cello and was very disappointed. First the live music was much to loud to carry on a conversation at the table. Service was ok, but the food was I hate to say was terrible. Two of us had the fish special and both were over cooked and very dry. Another dish was almost inedible, it had an off taste like the meat was bad or something. The last dish was very bland. For the price of our meal I could not recommend this eating establishment. Also the table next to us had to send two of their meals back.
Not what we expected. From the pictures this place looks very beautiful and upscale, unfortunately it didn't feel like it, it had more like a bar feel. They had life music and our table was very close by it, so it was very loud for us. Our service was little slow. Food was very good.
A nice restaurant inside a hotel. If you are staying at the hotel it’s definitely worth eating here. Otherwise there are much better dining options in Paso downtown.
The food was very good and so was the service.
The food, service and setting was wonderful! However, we won’t be returning due to the fact the noise level was so very high that our party of six could barely hear the person next to us let alone further down the table. Such a shame—definitely not fair to a talented chef

We came here on a Friday night for my birthday dinner. The weather was pleasant, so we chose to be seated on their lovely patio. The service was good, the food excellent.
We shared a margherita pizza with extra crimini mushrooms; it was one of the best either of us had tasted. We also shared the appetizer ravioli sauteed in sage/brown butter with parmesan, topped with a bit caviar. The butter lettuce salad was perfect-light with several different flavors. Dessert was locally made fruit sorbet, a delicious ending to that meal.
The drinks were just right: a cosmo and a margarita.
The prices seemed quite reasonable.
All in all, a perfect intimate birthday night celebration.
While the ambiance of the resort is nearly divine, we were most disappointed with the food, especially for the price. Many years in the food service business here on the east coast has refined our insight with other food service facilities. Your $60.00 'prime' cut steak was not a prime cut. Seeing how Allegretto is located in a rural area with numerous pastures surrounding it, one would expect access to prime quality beef. It was not. Then there was the $45.00 Halibut. 3 inches by 3 inches in size. Really? Shame on you!! We ate at Post Ranch the next day, truly a first class dining experience, and our bill for 2 was way less than at your facility, and the quality could never be compared! Again... shame on you! Would definitely visit Allegretto again but will be all the wiser to eat outside your dining facility for sure!
Cello has a limited menu, but, the food we ordered was good, not great. The receptionist as you entered the restaurant were very poor. They essentially ignored you while they fiddled on the computer. It's an attractive hotel, but, the prices for the restaurant are extremely high end, but, the service and the food were not...I have to say we did have an exceptional bus boy.
The pork chop s were awesome! Grilled to a nice crispness without being dry, loaded with flavor.
The food was delicious and the service was great but charging $60 for a Filet Magnon is ridiculous. The price alone will probably stop me from returning. Prices like that might be expected in Manhattan or Los Angeles but not in Paso Robles.
Delicious and a great nightlife on weekends! After dinner we took a stroll around the hotel and grounds, beautiful!
The service here was great and the food was good, but whoever designed the dining area to be next to a half wall with an open top to the noisy bar should be flogged. The noise from the bar was overwhelming and disruptive. We could not carry on a polite, quiet conversation. We had to speak loudly to hear each other across the table, and all that did was add the the noise level, so we stopped trying.
Allegretto taken on the whole is a nicely designed, classically elegant site, but the Cello Restaurant suffers from being too small for the venue, somewhat cramped, cacophonous due to its hard, reflective surfaces, and just too close and too exposed to the noisy, raucous bar. The eight or nine people drinking in the bar at 11:30 AM were having a great time! Sitting eight feet away in the dining room on the other side of the low divider, we were not.
We don't mind paying Cello prices for very good food, but half the experience is being able to enjoy that good food in an inviting atmosphere and in quiet conversation with your dining partner. Cello needs to decide if it's a roadhouse or Paso's elegant dining destination.
Too ever priced for the quality of the food.
Short rib stroganoff was decadent! The waygu filet was very good but we've had better (but for money too!). I highly recommend the calamari but am a little uncertain about the octopus app - it had a stronger fishy flavor that made me feel like it was not as fresh as it could be.
I came to Cello with two friends on our way to the light show in Paso Robles. We all enjoyed it very much.
Just wish we could have ordered a baked potato instead of the potato wedges which where over fried!
We enjoyed the experience at Cello: presentation, food & service was well done and friendly. We will do this again.
Calamari appetizer was over-fried and the presentation for the price was extremely poor.

11:30 on a Sunday there was no breakfast menu. Only one choice off the lunch menu was remotely breakfast. The staff was in the middle of a “menu change” so the service was lacking.
Sunday should include a breakfast/lunch blended menu until at least 2pm to meet the needs of a relaxed weekend morning.
Charming restaurant in a beautiful hotel winery complex. We were there for lunch, but would like to return for dinner. Portions were substantial, highly original lunch fare and excellent service.

Very good food, tastefully decorated welcoming both casual to elegant dining, the servers always go over and beyond to provide great service, the restaurant is always impeccably clean and overall we love it there and always dine there when we stay at Allegretto, my only recommendation is that it would be helpful to have a few additional items on the dinner menu, the selection often seems too limited.
We have our employee dinner here every year and it is always great. There is something on the menu for everyone, even gluten free options. We were treated with the utmost care by our server Patrick. We will be back next year!
The service and the food, as usua,l were wonderful. Our favorite server, Brad, made a special effort to say hello to us. We are locals who love to visit whenever we can. The owner, Mr. Ayers, also came by our table to say hello. A treat and a pleasure to have such a beautiful hotel and restaurant in Paso Robles.
The staff was very friendly, knowledgeable and attentive. The food was outstanding!!! I had the special fish of the night which was pistachio encrusted halibut. It was the best!! My husband had the Prime ribeye, also excellent!! The hotel and grounds are beautiful and Cello had nice ambience. We will definitely go back when near the area!
We had a lovely dinner with friends. We ate on the patio. Plenty of heaters made it very comfortable. Our waiter was very attentive.
Loved the good but best of all the service. Had a great time and felt welcomed and appreciated by our waitress.
Breakfast never disappoints. The handmade pastries are worth a trip on the weekend for the brunch. Everything was hot and tasty and plentiful. Make a reservation so you are not disappointed or have to wait.
Get the lamb of it is on the menu. Perfectly seasoned and plenty of meat.
The food was great the environment was perfect. The only downside was the waiter (can’t remember his name) was very indifferent to my table and seemed more interested in serving the younger (slightly annoying) girls at the next table.
The cocktails were great and the food was amazing. I ordered the risotto (which included some filet minion, but I’m vegetarian so I got the vegetarian option for the risotto) which tasted amaaaazing. My date got the chicken carbonara which was also pretty great (can’t speak for the chicken). The live music and relatively small restaurant created a very intimate yet lively atmosphere which was perfect for our small birthday celebration.
Service was polite, however slow and forgetful. Risotto and stroganoff were quite good. Really disappointed about the cost of a glass of wine at $27 when the bottle sold in the tasting room is $60. Really - such a marku is not needed if its your own restaurant and winery.
We have eaten here about four times (every time we are in Paso Robles) and the food is always excellent. It is a lovely place.

Food was wonderful, The best dinner we had in Paso Robles. Waiter must’ve been busy or distracted as I had ordered some roasted potatoes and he said he put in the order and they never came. It was fine they didn’t come as I was satisfied with the dinner but when we got home and looked at the bill we saw that we were charged for the potatoes. We should have looked at the bill better before we paid it, our fault.
menu is very limited for those wanting only fish or vegetarian. the night we dined there was one fish wrapped in pancetta. the chef made it for us without the pancetta , but overcooked it. the risotto was made with duck. the salads were very unimaginative. the patio area is beautiful.
Breakfast was good, not outstanding. Service the same.
