Fantastic venue but not matched by expectations of Sunday brunch and poor quantity.
Delightful place for a nice dinner. Ambiance was great. Service was impeccable. Live music on Friday night when we were there.
An excellent find in a Paso Robles! The salads were incredible (Allegretto Wedge and Golden Beet and Green Apple salads), as was my Rib Eye main entry. The Cabernet by the glass was very smooth and our waiter was superb (Carl?). Bravo!!
We were here for Sunday brunch after staying the evening at the resort Saturday night. The brunch was simple, but what we did have was better than expected. The service was very good and the outside patio was the perfect setting.
Bar was great! Restaurant was not.
We were looking forward to some fish or seafood and nothing available that evening. We were kind of shocked. What we ate was just fine not great.
Cello is a fine dining restaurant attached to a hotel, the menu is varied with several farm-to-table options. The wine list focuses mainly on local vineyards, with a good selection. Priced on the higher end of the spectrum.
Ambiance was very warm and inviting. Waiters had a sense of humor and seemed to really enjoy their working there. Food was excellent and prices were surprisingly affordable. We will be back.
Really great. We sat outside, and it was wonderful. Brad, our waiter, was 100% on his game. Super perceptive, engaging, and professional. Food was terrific, drinks were perfect too.
Service was rushed. My wife's mussles were overly fishery and she could not eat them. We asked them to tell the chef that they were bad. They expressed concern but no manager came to speak with us and they still charged the full $44.00 for the meal.
We had our wedding dinner at Cello in 2017 and we come back regularly. Great food and excellent service. Beautiful hotel too!
We are locals who enjoy heading to Cello for their delicious mushroom risotto. Last night, however, we were sold on the special mushroom and asparagus risotto “vegetarian style,” without the salmon, for a hefty $36 or something. It was TERRIBLE. Hardly a mushroom or asparagus to be seen, absolutely no flavor, and full of zucchini and squash. We asked for salt, and then when my plate was taken away barely eaten, the waitress’ explanation was a new cook who misunderstood. She took $6 off the plate, and tried to avoid us. Not happy with the service, not happy with the food, and won’t be going back to Cello.
It is a gorgeous place. The food overall was pretty good. We has the calamari as an appetizer and it was a little fishy. I had a chicken pasta dish and the pasta was too aldente, but the flavor was excellent. Another had the octopus and she said it was delicious. another had the chicken picata and it was also good. The service was good.

Order two meals. Risotto came out Luke warm. Asked to have it redone as risotto is a special dish that must be freshly made before serving. Came back obviously right out of the microwave piping hot but not correct. Not impressed.

Beautiful place, but check in staff is less than friendly. I was actually turned away for arriving 10 min early. She was plain rude. She literally told me, your reservation isn't for 10 min, you'll need to come back and check in again at that time. Um ok. We walked around then sat at the bar at our time. I'll never forget hearing, I guess we have a table outside for you...hmm really? Clearly open table and check in staff isn't in tune.

We were staying at the Allegretto Resort so found it very convenient to have dinner at Cello. The food was amazing, great wine selection and our server, Chris, was wonderful. Of course places like this tend to over charge, in my opinion, but it was nice for a dinner with great friends.
Noise level in this place is high, hard to have a conversation across the table with my husband and we were sitting in the back against a wall. Service was spotty, food was good. If you want dinner there ask to have it in the lobby by the fireplace. I saw a couple there having a pizza and I told them they found the perfect spot. They too agreed the noise level was bad in the actual restaurant.

Was our first time at Cello. Went for our anniversary and were not disappointed. Excellent food and service made it a very enjoyable night.
Excellent restaurant, outstanding atmosphere. The patio is especially pleasant.

Our server, Chris, was excellent. He really went out of his way to make sure we were happy.
The food was really top notch (though the chef had to do a little salvaging of the cut of my rib eye) and the drinks were excellent.
The decor and ambiance was okay.
We had dinner outside. My husband had the halibut and loved it. I had the chicken picante. It was dry and not cooked like I understand chicken picante should be cooked. Don't order the chicken picante. The busboy spilled water over our table and never came back to wipe it up. I had to get a napkin myself and wipe up our table. We were looking for a romantic anniversary dinner and Cello Ristorante. We didn't find it.
We had dinner for my father-in-law's birthday. Everything was absolutely delicious !! Very fresh and interesting dishes. We had outstanding service as well. We ate there again the following night because it was so good!! The hotel has outstanding wine too. We will be back the next time we're in Paso Robles.

While the food was good it was extremely overpriced. At this price point I was hoping for something really special and was disappointed. The hotel is wonderful and I think I had high expectations. Service from the bus boy was fabulous but I felt our waiter could have been more attentive.
The salmon was fabulous. Cooked to perfection and properly seasoned for the ultimate taste!
Noisy, no table cloths, filet mignon was average, vegetable ragout was not to my personal liking.
The hotel and Cello are beautiful, but the prices are too much for the average income. Ruben and chicken sandwiches that are almost $20 is more than I can afford to go out to lunch - even if the food is delicious.
The bar was great - best lemon drop martini I have ever had. They put sorbet in it!
The food was expensive for what you got. The risotto was $40 and a small portion. The wedge salad was just OK - very different. The filet was good. Not sure about the pizza.
Patrick was our server two nights in a row. The first night there were only 8- 10 people in the room and the food and service were excellent.We returned the next night because the prior night was such a great experience. The second night the room was packed and very noisy and my first feeling was this is a mistake but, thanks to Patrick’s wonderful attentive service we overlooked the noise and throughly enjoyed the evening.You are very fortunate to have an employee that has all the skill and finesse of a true gentleman and skilled waiter for there was no diffence in the quality of service between the two nights even though he had 4 times the work the second night.
If you're staying at the hotel and do not want to drink and drive, and thus skip downtown Paso Robles, this restaurant is tasty enough, but not as tasty as the prices would warrant. The service is good, but the kitchen is slow. I say that having also eaten breakfast twice in the same stay. My wife was unimpressed with the Fruite di Mare.
This hotel bills itself as a “resort” and the buildings look the part but the restaurant is really just a glorified bar area. It is noisy especially with a sing-along guitarist and no real separation from the immediate bar. The stone surfaces intensify the noise so forget about a quiet birthday dinner with your wife. The food was mediocre at best and the prices are astronomical. I guess they are shooting for an upscale Napa vibe, but this is Paso Robles and locals like us are put off by the pretentiousness. I had previously been there for drinks and my wife had gone for lunch (not impressed with the food) and although the grounds are beautiful, we won’t be back to eat.
The ambiance was very nice. The food was very good. The hostess took a few minutes to even notice we were standing in front of her because she was very involved with texting on her phone. Once she did notice us she was very professional and gave us a choice of seating, and let us know who our waiter would be. I will visit this restaurant again and recommend.
