Over the years, Francesco has been invited to cook at various restaurants and bars in Lima and around the world, where he shares his passion for cuisine with fellow chefs, creating unique and unrepeatable experiences. He has also provided consulting services to more than 25 businesses between 2023 and 2024, offering tailored strategies based on each client's needs. Francesco has been interviewed by various national and international media outlets throughout his career as a chef and entrepreneur, including features in Italian and Japanese print media. Since 2018, Francesco has been a television host on the only 100% gastronomy and entertainment Peruvian channel, AlacocinaTV, where he presents the shows Fuera de Carta and StudioCocina, with more than 160 episodes aired over 4 seasons. AlacocinaTV is broadcast in Peru via DirectTV, Movistar, and ClaroTV, and also reaches other South and Central American countries. This exclusive meal will feature a collaborative menu that’s meticulously designed to showcase Francesco's norther roots and Italian heritage.     Causa did a marvelous job-every bite we had of the tasting menu was delicious and the wine pairings were delightful. It was a tour de force exploring the asiatic influences of Peruvian cuisine. Delightful. Would go again.

    Peruvian cuisine is very special and unique. We knew there was a Japanese influence but never realized how powerful it was. We thoroughly enjoyed the food and the dramatic descriptions of each course by the staff.

    I'll begin by saying we were 30 minutes late for a bar seating and they did everything they could to accommodate (luckily, the bar was not full that night). The experience was nothing short of phenomenal. The Chef has got one of the most unique palletes out there. The dining experience was about 2-hr for us and we loved every minute of it. They staff seem to all share the same responsibilities, as the bartenders knew every single dish and was able to take us through a journey each time a dish came out. A Peruvian cuisine with a splash of Japanese inspired tasting. There are more than 10+ options for fresh fish you can select and add to your course, with your own choice of how you want it cooked (ceviche, hot, cold, etc.). We spent about $800 (including service charge) for the two of us (3 cocktails and one add-on fresh fish menu). It was worth every penny. If you're looking for a Michelin place to try out in the DC area, this one is definitely a must!

    Went for my partner’s birthday dinner. Having gone to the more casual, upstairs restaurant Amazonia a few times and loving every experience there, we were so looking forward to the four course tasting menu at the Michelin starred Causa, which recently was named no.7 best restaurant in DC by the Washingtonian. Unfortunately, our experience at Causa was quite disappointing. Two of the three amuse bouche were great, but the olive foam on top of octopus and squid ink pastry was too large to have in one bite and also was too salty from the olive foam. First course “tiradito de atun” used aged tuna, but you couldn’t taste the tuna because the sauce was too salty as was the caviar. Second course “hotate misoyaki” had an unpleasant aftertaste from the miso and black garlic even though the scallop itself was super sweet and delicious. Third course “wagyu au poivre” used great cuts including Miyazaki wagyu, but it was accompanied by a bitter activated charcoal, a sauce that was too salty, rich, and felt unnecessary for the quality of the meat they were using. It also came with a layered potato-beets stack, which didn’t really have a flavor… The “macambo” dessert was creamy and refreshing, but honestly felt like it would’ve been a better palate cleanser instead of the sole dessert dish in the tasting menu. There were a few dessert bites after the course meal, which were all pleasant, particularly the passion fruit-Peruvian pepper jelly. As it was my partner’s birthday, they gave us a slice of caramely chocolate cake which was lovely. Perhaps the restaurant had an “off day” with flavoring, but the dishes were too salty. We also noticed Michelin star shaped items in the dishes (monaka, cucumber slices in the tuna dish, and macambo); and as impressive as receiving a star is, I think diners know that the restaurant received that honor, so it felt like reminder and boasting. I would go to Amazonia in a heartbeat, but would hesitate to return to Causa.

    Absolutely outstanding meal in a town full of great experiences. Chef Carlos and his team made us feel welcome, explaining the details of Peruvian cuisine without overwhelming us. Every dish was a little better than the course before, culminating with one of the best desserts I’ve ever had. 10/10
