We were immediately taken into the dining room by very personable staff. The restaurant was relatively busy, but the noise level was muted. The servers for our table were friendly and very attentive, as well as efficient. The wine recommendation was excellent and the food was wonderful. The cost was a little expensive, but not above our expectations. Really enjoyable experience.

Considering it’s Italian, it feels expensive for what you get. $3 for tap water, no complimentary bread, entrees are pricey and small. If you really want to treat yourself to a nice meal, go for it, but just go into it knowing that you’ll have to spend quite a bit of cash to be full. Lobster ravioli and orange salad were delish...lobster bisque was not very food, (and the color of oatmeal) so I’d skip that.
This place was amazing and the service was top notch! Made for an amazing anniversary evening for my husband and I!
We visited Castello on our honeymoon. They were very sincere in making our visit special. The center half-moon booths are the best seats in the house. The service is friendly, knowledgeable, and fast; they will also pace the food so you don't feel rushed.
The wine and cocktail options are stellar and the food is remarkable!

I was eating alone, and the waiter offered to bring me a magazine, which was very kind. My dessert was also on the house due to the special occasion, which was not expected. Staff was friendly and attentive. Food was delicious.

Food was great. No complaints from with myself or my husband. It wasn’t mind blowing in considering the price tag. I do agree that charging for still water is ridiculous. They need to change that.

Ordered the spaghetti it came with decently sized meatballs, sauce was very flavorful with a hint of spicy. The service was top notch would of given a 10 star.

We have been many times and love the restaurant. However, we were seated by the door - which was great as we had a person with limited mobility. Also, the restaurant was fabulous with helping with a car at the end of the evening for easier transport to the hotel. However we were under the speaker and it was incredibly loud music. It really ruined the evening for us. This seems to be an ongoing trend in restaurants - loud music or acoustics.
Honestly one of the best dinners I’ve ever had.

Great service. We had the toast trio, the burrata and the tomato medley was lovely. Partner had the veal parm and I had seafood linguine. Portions are massive if you’re concerned about price I recommend sharing entry. Although we found the cost reasonable . Chocolate pave for desert was lovely. We paired with bottle of Italian red wine .Our server was an older blond lady not sure of her name she was great . I’m not sure why other reviews are so on about costs. We ate at 1888 previous night and it was much more costly, although lovely. Would definitely recommend if staying at the resort
The food here was incredible! It was awhile in coming, but we think that was because of how freshly everything was prepared. The cocktails we tried were nothing special, but the food was great. The service was exceptional, apart from the wait for the food.
This is a place we would recommend to anyone!
Fantastic evening, The server from “Ontario” was great ! (I want to say his name was Chris, could have been Michael) either way it was great service and a nice evening.
We all ordered the Arctic Char special and it was absolutely wonderful. The pace of the meal was perfectly unhurried, and our server did everything to ensure we had a wonderful evening. I highly recommend this restaurant!
All was good.
We got into Castello around 8:15 and there was no one at reception. After a few minutes, someone showed up and led us to a table. Service was good but we were tired from a train trip and it could have been a little faster. I had chicken piccata- very good. Portion size was large for me. My husband enjoyed his spaghetti. The best thing about the restaurant is that it is adjacent to the Gatehouse portion of the Banff Springs Fairmont property. This means that you will not even have to go outside to get to dinner. If you reserve a later table , you might be able to make it to dinner on time when you get off the Rocky Mountaineer. Just be aware that we cut it close at 8:15 and the restaurant was definitely winding down. I would not give Castello the highest rating because I felt it did not achieve 5 stars for our meal. Good, but not great.
Would have liked to had know charges for waters in advance if the pour. We still would have bought them anyway but the idea of “ still or sparkling” as the only question seems a bit underhanded.
Portions were great. Service was fine.

Food portions too large, was not able to enjoy much after humungous appetizer.
Food quality good but served in such a quantity that diminished the experience.

Recommended but not perfect
The food and service at Costello restaurant were impeccable. The only issue that we had was confusion about some of the charges for our bill. The bottom of the menu said filtered water 3 per guest. We were surprised that they would limit water to three glasses when the hotel left little cards in the room promoting their delicious filtered water.
Much to our surprise, it wasn’t three glasses per guests, it was $3 per guests for still water! Our table of four was charged $12 for glasses of regular water. That was a first! Our excellent waiter did remove the charge after an explanation, but be warned!
We were also overcharged from what the menu said for broccolini. The menu said $11 but the bill said $14. Lastly, two people were going to share a caprese salad. The waiter said he could split it in the kitchen, which sounded great and something other restaurants had done on our trip, but when the bill came, it showed 2@$12 instead of $21 for one.
None of this would have been an issue, except the broccolini charge which was wrong, if we were informed beforehand. The maitre d Ryan was very nice and took care of it for us.
The food was excellent! I’m still thinking about my halibut and my husband’s veal
Parmesan. Go for the food and service, but check the bill or ask questions when ordering.
Great food and outstanding service!
The lobster ravioli was outstanding as was the halibut.
Fairly busy so it was loud.
We weren’t Hotel guests, therefore parking cost was $33 for 3 hours.
The food was excellent, the service was grand, and we enjoyed the ambiance and relaxed feel to the lounge area where we were seated. David, our server, could not have been more charming.
The food they served id impressive, the atmosphere is really suit for dating. Seafood Linguine is tasty!!!
Food and service were excellent. Very small and intimate dining area. Music was uncomfortably loud for such a small room.
Pub is never as good as restaurant seating. Chicken cassiatore was extremely salty but other than that very tasty and juicy.
