Carversteak is a reimagining of the classic steakhouse experience offering dry-aged American steaks from artisan producers, Japanese-certified Wagyu steaks and playful vegan selections in a modern environment.

The steakhouse features an expansive bar, a plush main dining room, two private dining rooms (The Knife Shop and Whiskey Room) and a sweeping outdoor terrace overlooking the Las Vegas Strip.

Executive Chef Daniel Ontiveros’ menu highlights include a 42oz Tomahawk Rib Chop, Lobster en Croute (a whole Maine lobster cooked in a puff pastry shell) and a bounty of raw bar items including Hamachi Crudo and seafood towers.

Accompanying the menu is a dynamic beverage program from famed mixologist Francesco Lafranconi featuring seasonal cocktails, an extensive wine list and a tableside martini cart.

PLEASE NOTE: On Friday and Saturday reservations; guests under the age of 18 must be sat by 6:45 pm. Dress code is business casual; flip flops, sandals and hats allowed on patio only.

The seats are comfy, the drinks were tasty, and it was just the right amount of dark to see the mood. We ordered the French onion soup and wedge to start both were good, we got a bone-in filet along with potato gratin and broccolini for the main and it was flavorful. Potatoes were my favorite, broccolini had a good kick to it and steak was like cutting into butter. Staff was attentive and on top of it. Overall great experience!

Our experience was nothing short of exceptional. We were visiting this location for my birthday and the service from start to finish was the best I’ve ever had. We were greeted by all the staff we walked by and seated promptly after checking in. Our server MJ was very friendly, polite, and knowledgeable of the menu and gave great suggestions. He checked on us frequently throughout our meal. Our steaks were seasoned and cooked to perfection and the mac and cheese was to die for. MJ and the Carversteak definitely made this birthday one to remember.

Food was okay, bud pretty bland for a steakhouse in LV. Also the service was hit or miss. Some good some bad. But the bad was minor. Like our salads came out and the guy with the pepper didn’t come out until we were almost done with salads. Also our wine order was literally sitting on the bar(we could see them) for 8 minutes. We clocked it. Our waiter just forgot until we asked again. By then the wine was warm. They have a HUGE problem with the head lamps. They apparently can’t control them. If you are under one, we felt like we were being cooked alive it was so hot!

Pretentious is the best word to describe the restaurant. We came for our anniversary. When the hostess showed us to our table she put a card down on the table and left. She never said a word. We picked up the card, which said Happy Anniversary. Our waiter almost asked who's birthday it was before he caught himself. I had the scallops. They were not seared and had no parsnip purée, apple, celery, hazelnut nor sage on the plate. Just some fancy lettuce in the middle. My Caesar salad had no Parmesan on it. My husband had the end cap steak, which was good, but not outstanding for the price. The Parmesan steak fries were delicious. At the end of the meal our waiter did offer us coffee, but not a dessert menu. Given the reputation and price (one chardonnay wine under $100) it was not worth the money. We will not be going back. The whole experience was not what we expected and not one we will pay to have in the future.

appetizers very disappointing. The waygu cheesteak bites that are most recommended were tasteless and not at all good. We had 7 people that tried them and NO ONE liked them. Other appetizers likewise were not great. Steaks themselves were fantastic. Sides---not so much. Just OK. Overall, way overpriced and a mediocre experience.

Overall a good experience. Food was excellent. We didn’t get the best table location so our ambience was not the best and service was slow to start but they made up for it as the dinner went on. Server was friendly and made good recommendations of what was actually good and didn’t push the most expensive items on the menu regardless of how good/bad they make it like a lot of places do.

Best steak and appetizers I've ever had in Vegas. I go to Vegas twice a year for work and take out VIP's. I had their Rib Cap and it was out of this world. Amazing food period. Korean Pork Belly was so good. There was nothing korean about it (i'm korean) but it was delicious non-the-less. Crispy Rice with salmon was super good too. All and all, best spot thus far.

My first experience was not good and I had put Carversteak on my "Disavowed list". BUT...this return experience was stellar. The service, which had been so lacking my first visit...WAS OUTSTANDING! Our steak was exceptional--and I use to cook steak for a living. The onion rings with aioli was a home run! The wines by the glass were outstanding and the experience was 5star! NOW, I would highly recommend Carversteak for a wonderful experience. It is costly. but almost all of Vegas is and premium quality food/prime beef and the whole package does cost more. But we felt the evening was well worth it.

Carversteak was superb! An Australian wagyu strip loin prepared & served perfectly. Excellent mushroom & au gratin potato sides. A mediocre caesar salad, but excellent French onion soup. The service is remarkable. The staff is ample, everyone knows their job, they are well coordinated, and attentive. But the room is hard surfaces every where so the main room was very noisy making conversations difficult. Other than that it is very good.
