Caruso's - Rosewood Miramar Beach
At Caruso’s, Chef Massimo introduces a taste of Southern Italy to coastal Montecito through signature dishes that utilize the highest-quality ingredients sourced from neighboring farmers, fisherman and ranchers. Menu highlights include starters such as Santa Barbara Farmer’s Market Salad, Hand-pulled Burrata and Baja Kampachi Crudo; homemade pastas range from the chef’s signature Carbonara to Uni Tagliolini; and main courses include Pan Roasted Petrale Sole and Grass-fed Watkins Ranch Filet.
To enhance the experience for our guests, we kindly ask that all diners adhere to a Business Casual dress code. We therefore suggest collared shirts for gentlemen. We consider hats, shorts, overly provocative clothing, and flip-flops too informal. Thank you for helping us provide an exceptional dining experience.

The food was amazing! Our waiter and the entire team were excellent! Definitely highly recommend.this fabulous restaurant.
My wife complained her salmon was dry. I found the chapino broth too acid. Our two guests enjoyed their steaks. Noise level was so high conversation was difficult. We prefer the Stonehouse and Lucky's.
Excellent food and ambiance. Beautiful property through and through. Wonderful thrill to meet Mr. Caruso at the property along with Dodge.
We explained to the waiter that we would be ordering several things and that we wanted to share everything. The salad with grilled avocado was better than we were expecting. Next was risotto with crab. It was the best risotto that we have ever tasted! However, the main course was also brought to the table at the same time. It would have been nice to have the smaller, tasting plates warm like the serving plates. Cold plates go with salad but not with a hot risotto or halibut. Dessert was excellent and hard to decide which one to try. Caruso's is truly a wonderful place to dine.
Fabulous in every way except one major flaw not relevant to most diners. My husband had leg surgery and needed the golf cart shuttle to and from the restaurant from parking area. It was ordered promptly by considerate staff. 45 minute wait both ways. Staff were upset.

I took my husband to Caruso's for his birthday and we had a wonderful time.
My wife and I had a wonderful experience. The octopus was prepared perfectly as was the Halibut. Audrey our server was very friendly and accommodating. While we did see the chef the manager Aaron stopped by to make sure everything was perfect. Very lovely ambiance and overall a great night out. We will be back!
This was our second time. In my first review I raved about everything except the dessert. I actually got a response from the Chef. I gave a different dessert a try this time (the baked Alaska) and it was excellent. When you combine the ambience, service and food it is hands down the best restaurant in the Montecito/Santa Barbara area.

Food and location (ocean view) were amazing. We had brunch there on a beautiful day by the beach. Brand new facilities and the hotel. Only thing that can be improved is the service.
Beautiful - the sun was a bit hot - but that was okay. Food was mostly very good - my lamb was perfect but there was way too much olive oil with the vegetables. Service was a bit slow - but very friendly and helpful.
Interesting that there are no paper covers for the ladies toilets? It would also be nice to have a sign for the restrooms so you don't have to ask where it is.
Overall - I would return again.

Extraordinary dining experience, with the best-of-the-best in service. Truly. Rivals the Hotel du Cap Eden Roc in Antibes, France, which is something to say. We brought our 4 month old daughter with us, and the restaurant staff was notably helpful and accommodating. Great wine selection. Probably one of the best salads we have ever eaten with edible flowers in a beautiful arrangement. Black Cod dish was exceptional. We can't wait to return to the hotel. THOROUGHLY recommend this restaurant, and the hotel.

If ur going to have a dress code for the guests, the hostess should also be presentable; I don’t think dark “khaki” pants fit the bill...the waiter shd be versed in what the menu drinks are all about and the halibut was “dry”!!..

Love the ambience and the food at your lovely new restaurant and we brought friends who had not been there before who thoroughly enjoyed it too.
Your staff are outstanding and especially Josh who always welcomes us with incredible grace and warmth and ensures we always have an fabulous time. You have many more staff like Josh that are also absolutely on the ball and attentive to every need. BRAVO!!
The most wonderful brunch ever ! In Santa Monica for the first time, and a friend highly recommended Caruso"s… From our arrival, until the moment we left, we were truly impressed with everything. The view is spectacular, the menu was fabulous, the service impeccable, and the food to die for. A must for any foodie.

The service was stellar! Would enjoy a little more variety in terms of food chouces. Deserts left a bit to be desired. Too much chocolate, not enough variety. Nice choice of free flowing sparkling wine. Overall a nice experience just a bit disappointed in food chouces..

Best that Montecito has to offer!
Worst service I’ve ever had from any establishment ever. Apparently they are on their 3rd turn over in management but no excuses for this. Reservation at 8. Left at the bar till 9:30 while they prepared the table. They were basically empty with plenty of staff. Out of propane, my date was freezing. Food was not on table till 10:00. Sad considering the investment. This was my 3rd attempt.

We enjoyed taking our kids here on a Thursday night - we mostly ordered the fish dishes, which were fantastic and well thought out. The kale Caesar salad is extraordinary and the ambiance almost unbeatable.

Great place, fantastic food, wonderful ambiance! Server was very knowledgeable and courteous.
Caruso's is the restaurant that exemplifies the MiraMar Beach resort. It is sophisticated, elegant and so well appointed. The staff is attentive, but not overwhelming. The food choices are over the top with an emphasis on local seafood.... And be sure and have Josh recommend the perfect wine to accompany the meal. In all a "to be remembered experience".

Everything was great except people at the valet who had dogs on leases. They were not allowing guests to pass freely and made remarks to passers by. Entitled attitudes. Dogs or pets should not be at a luxury resort especially after paying$500 for dinner.

Outstanding friendly and non-intrusive service, something we expected. Placing of the tables makes it feel crowded and not easy to have a private conversation. Food was very good and well prepared, but nothing outstanding, perhaps we need to go back and try more dishes.

Caruso’s sits on one of the finest beaches in Santa Barbara and it’s beautifully on display to diners. We are locals and wanted to give it a try after having watched the years of attempts to redevelop the property. The service was excellent and the food was prepared and plated very nicely. We have absolutely no complaints with the restaurant, rather with many of the diners who were dressed like they had never experienced finer dining. When we commented on this, we were told that the restaurant is preparing to have jackets available for all of those slobs who show up. If the staff is dressed impeccably, diners should respect the beauty and ambiance of the establishment. Highly recommended!
This was our second dinner at the Miramar. This time at the Caruso's.
It's basically the same menu but in a beautiful setting by the sea.
The menu is excellent but kind of limited which makes it less interesting for locals.
The food and the cooking were excellent.
However the service is dismal. They need WAITER TRAINING !!!
The problem is with THE BAR. They don't understand that food and drinks go together.
A lot of potential for improvement !

We loved our experience of sitting outside closer to the ocean. Our meals were perfect. The ambience was beyond wonderful and our service was great. Loved it!

We are staying at the Rosewood Miramar, but have been having meals at the Malibu Farms restaurant. Have to say that Caruso’s is several levels higher, both in terms of service as well as quality and selection of cuisine options. Service was excellent, and our meals were three star level. We are actually returning again this evening.
Top restaurant ever.
While the setting is fantastic and service was very attentive, the food was a major disappointed. The halibut and fingerling potato were tasteless, the tagliatelle pasta quite bland, the salmon was good but nothing special. We are local residents so we are hoping that Caruso's will make improvements so that we may return in the future.

It was my first time at Caruso's and it was a special occasion Birthday dinner for two. Everything was perfect. Can't wait to go back and we are just thrilled to have The Miramar back in our lives and happy to see and feel such a warm welcome to locals from the staff.
We made reservation at 6:30 on Sunday. Got there on time, one of the staff told us the hostess will be with us shortly which was about 8 minutes standing and waiting. After we were seated, nobody greet us or bring water until we asked which was another 10 minutes. The restaurant was not busy but the staff definitely was not trained. They walk around without offering us anything until we asked for water and water. About about another 15 minutes we finally offered menu.
