The Carte Blanche Team is passionate about combining fresh ingredients to create a local cuisine for the Hamburg NY area. We are dedicated to creating an atmosphere that is both friendly and inviting for our local residents and visitors.
During this time we must follow all CDC guidelines regarding masks.
Guests must arrive promptly for their reservation wearing a mask. When moving throughout our space we require you to be wearing face covering correctly. Guests who arrive without masks will not be allowed to enter. Please understand that we are trying to keep our staff, their families and you safe during this time.
Reservations are given a 15 minute grace period. We ask that if you are going to arrive late or if you have to cancel your reservation please alert us as soon as possible. Given our smaller capacity all tables are given a 90 minute time limit to ensure proper sanitation and so that we can seat future reservations in a timely manner.

Love the place, unfortunately, the AC was broken, so we sat outside. food and ambiance were terrific, great spot, would go again!!

Field greens salad has a dressing on it that is out of this world. The wine selections are terrific. We loved the open air feel to the outdoors! Staff and servers so warm and welcoming.

My husband and I were excited to try Carte Blanche for an overdue date night. We coordinated babysitters to watch our children, and were greatly looking forward to our meal. When we spoke with the hostess, she said the previous party was still seated at our table and we had the option to wait or to sit outside (it was 80+ degrees and the sun was strong, and we really just wanted to be indoors while we ate). The bar was incredibly packed, we had no idea how long we would be waiting, and we were never offered the option to order a drink. We were finally seated 25 minutes after our reservation time. We then waited another 15 minutes just for the waitress to come and take our drink order. After all this time, we learned that only the summer menu (mostly bar food) was available, and it would have been nice to have learned this information beforehand. We were hoping for an elevated dining experience for our date night, and the menu was extremely limited, especially considering I am a pescatarian and require a gluten free diet (Celiac). The waitress was pleasant, but we decided to scramble and find a last minute alternative restaurant instead. After this experience we are highly unlikely to return to this restaurant.

It was really hot inside and there was no a/c. We felt extra bad for the staff because they were sweating too. The food was good. I had been there before and the food was amazing - the summer menu was available and its a limited menu which we understand but I didn’t know that ahead of the booking (it wasn’t on their site) :(.

Service was very good. Food was good but I felt portions could have been a bit larger or maybe have bread for the table at least. I would like to have a few more entree options to choose from. We really liked our cocktails.

Very nice evening out! We requested an upstairs table by the windows and they accommodated us. Food was delicious and service was great! We will be back!
