My husband and I chose this restaurant while on our honeymoon in Colorado Springs because it seems to be a winner among the locals. Ambiance was very romantic and quiet. We ordered a drink each, two appetizers and and two salads. Our appetizers were delicious and filled us both up so we opted for salads before venturing off to explore Colorado. The waitress was incredibly rude after we ordered our salads and scoffed at us ordering them as a main course. She made us feel unwelcome and out of place on a very special night for us.
Carlo’s is hands down the best restaurant in Colorado Springs. We were greeted by Carlo when we arrived and were taken care of the entire time we were there. The menu is filled with options you will not see on most menus. It is high end quality and you will pay for it but everything from a variety of appetizers and entrées were outstanding and worth every penny. Make your reservation for any Special Occassion and you will not be disappointed. Check out the menu online to see what fabulousness awaits you.
You cannot beat the service at Carlos' Bistro. The food is authentic, delicious, and beautifully plated. Early Bird dining (5p until 5:30p) is a pretty great value. We are able to have smaller dinner portions which allows us to splurge on apps and desserts. The restaurant is quite dark. My only complaint is about how dark it is, even my husband had a difficult time seeing. Too dark.
Attention to detail, superb! Server was very knowledgeable on every detail of the menu and wine. Sad I didn't heed her advice that the Lobster was spicy.....figured it'd be fine as a pasta, but it really was TOO spicy for me. The red pepper flavor just overwhelmed any other flavor in the dish. Don't recommend that one, but EVERYTHING else was delicious. Shared a crab cake appetizer and plenty to share. Served over enough salad that we didn't even need the salads we ordered, but they were great too. My husband's steak was cooked perfectly, tender and tasty...loved the tarragon hollandaise sauce. We'll be back!
I’ve been to Carlos Bistro several times over the last 10 years. The food is always AMAZING!
It’s a fairly small restaurant and in a neighborhood that you wouldn’t expect a restaurant like this to be in. The menu options are abundant considering the small size.
Carlos is a true Chef! Fresh, local, interesting, diverse.
This place is not inexpensive! He is proud of his food, and isn’t afraid to charge for it. But for those occasions where it’s ok to step up, you won’t be disappointed.
As others have noted, Carlos is a very gracious host. The service was actually a little over-aggressive. They tried to clear plates twice during the meal before we were finished with them. But the attitudes of the servers were warm and inviting. The food, however, for the inflated prices, was very disappointing. The foie gras with brandied cherry sauce was the one exception. It was outstanding. the signature lobster salad was a huge disappointment with the lobster tasting overly salted and tough. My wife had the mussels and clams and the char. She thought both tasted less than fresh (or flash frozen). I'd suggest skipping the seafood, which isn't a big surprise in an inland town. I had the lamb chops, which were okay, but not undercooked (which is hard to do when I ordered medium-rare more on the rare side. I wanted the middle to be "blue" but it was almost raw throughout with only a 1/16" sear on the outside). At $25/chop I expected perfection.
We've been to Carlos Bistro quite a few times and have been pleased every time. It's been awhile since our last visit so we were excited to see that a 5pm reservation got us an early bird menu. The portions were a little smaller but perfect for us since we almost always bring leftovers home. I got a martini, the Paul and Mari. YUM! We had the early bird shrimp cocktail and we each had a salad, all were amazing. Dinner was phenomenal! I got the crab alfredo and my husband got the crawfish tails. Both were presented beautifully and tasted fresh and wonderful. We absolutely love this restaurant and it's so perfect for a date night!
Carlos's has been my favorite treat of a restaurant for years, but this time it was just not good. I'll never go again. The prices have tripled, the hours and days have been reduced, the early bird dinner has more restrictions, and the service was only "okay." I ordered a pesto pasta dish for $50! Very expensive but I knew it would be wonderful and sucked it up for the sake of our friend. Instead, the pasta was starchy and stuck together. The calamari was not especially tender...or plentiful. The pesto flavor was not fresh and lively. Several vegetables were scattered on top, including randomly chopped fresh carrots. This would have been a bad meal at a fast food Italian restaurant.
The restaurant knew we five women were having a birthday dinner, but no celebratory dessert was offered to our friend.
Something must have burned in the kitchen because my eyes stung from the time we entered.
To top if off there was a loud table of gentlemen nearby who made it difficult for the five of us to hear each other.
We went to Carlos Bistro (repeat Customers) for my wife's birthday. We took advantage of the early bird dinner and also got lucky and her birthday fell on Wine Wednesday. We love Carlos bistro for the special dining experience we have always had there. Carlos knew our names, seated us and came by to visit during our meal to ensure the birthday dinner was going well. We shared both raw and fried oyster appetizers, wife had the scallops grilled and husband had the steak Oscar. We also had a fabulous bottle of wine from the extensive list of choices that are normally $50.00 but were half off due to Wine Wednesday special. Definitely recommend if you want a personal dining experience, great service and food that does that does not make you feel like you are compromising! Thank you Carlos and our server Stephanie for the excellent service. Always a treat!
The Food was absolutely amazing. The service was on point all night. The owner was hands on talking to everyone and helping the servers when they got busy. The drinks were perfectly balanced cocktails. The portions were larger than I expected for such a high end place. A bit expensive but you get what you pay for and if you want to experience this level of dining you have open up the wallet.
This was our first visit to Carlos's. A number of people told us to go and that it is amazing. We were not disappointed. Carlos met us in the parking lot to welcome us in and was totally charming. The food is indeed amazing. We had fried oysters and the lobster salad for appetisers followed by the filet mignon Oscar and veal marsala. Everything was excellent, including the service. We will definitely be back soon.
Exceptional service and food and lovely ambiance. It's always fun to have Carlos personally greet us outside as we drive up to the restaurant. His attitude is reflected in his staff's wonderful service and delicious food. Every dinner at Carlos' Bistro is a special event!
Carlos' Bistro provided an outstanding anniversary dinner. The atmosphere was very nice and the service was among the best I've experienced in Colorado Springs. The menu was creative and inspired. Truly among our favorite restaurants in the area. The staff was very attentive but not intrusive. The fact that the owner was present and assisting the staff and patrons showed that the restaurant and its patrons are a labor of love. We will definitely be back.

Wait staff was equally accommodating and friendly. The pride in the workplace is evident through their boasts of how Carlos prepares the components necessary for the meal, then migrates to the front of the house.
Excellent food choices, and I'd be surprised to hear you left hungry. Generous portions.

First let me say what an amazing host Carlos is. As a restaurateur myself, I always look at the attention to detail and this Bistro hit it out of the park. From the moment we arrived, we were treated like family. The ambience is cozy, the menu amazing and the food was a perfect "10"! The wine list also most likely the best in the area. Our server was a delight and new all the nuances of the menu.
If you are every in the Colorado Springs area, Carlos' Bistro is a MUST.
The food and service were excellent.
The 50% discount on wine helped, since the wine menu was somewhat pricey.
Didn't mind paying for somewhat expensive meals, since the quality was high, but thought the prices for coffee and a normal dessert were excessive.
All-in-all a nice place for special occasions.
