Cardinal is a relaxed fine dining restaurant from chef Tomás Gormley. Located in Edinburghs historic New Town Cardinal offers a modern approach to Scottish cooking.

With a wide range of local and sustainable suppliers at our doorstep, from our Lobsters and Crabs at Belhaven Lobsters in Dunbar to our vegetables and Native breed meats at Free Company Farm in Balerno we’re lucky to be taking advantage of Scotlands unique and unrivalled natural larder.

Cooking over coals helps add an extra layer of flavour to whatever we’re cooking on them, it’s more intuitive and engaging as cooks and we feel like that comes through on the plate.

Tasting menus are our bread and butter but we also offer a pre fixe three course.

    Our tasting menu is what a fine dining tasting menu means to our kitchen team. The first three snacks come in relatively quick procession and feature flavours and textures that are exciting us right now. They're then followed by "five/six" courses that all have a story to tell and feature some of the best local and seasonal produce available to us right now.

    Introducing Cardinal Feasts — a new series of changing menus on Sundays throughout the year. Now that the weather’s turning warmer, we’re kicking Spring off by sharing some of the team’s favourite feasts. Each month we’ll celebrate a different theme — exploring seasonal ingredients, different cuisines, and inviting the occasional guest chef into the mix. It’s an evolving project, so we thought we would start simply: on Sunday 27th April, the Cardinal team will be hosting the quintessential Spring Lunch. Think fresh oysters, tender lamb and a myriad of seasonal sides — the kind of meal you want to eat slowly, with good company and a great glass of wine in hand. We look forward to welcoming couples, friends and family reunions to our dining room in Canonmills. We’ll have bespoke cocktails to kick off the meal, including our take on a Bloody Mary, as well as low and no-alcohol options. Bookings for our first Cardinal Feast are available now.

    Absolutely brilliant experience. We had the shorter tasting menu and loved every single course. The oyster and the dessert were both particularly exceptional. The service is first class and the chef deserves a Michelin star. One to watch for sure.

    This is my 2nd visit since Cardinal opened. I booked their 3 course tasting menu as a relaxed mid week get together for friends. We were blown away by the experience. Utterly amazing. We had the most relaxed enjoyable meal. Staff were incredibly helpful. Food was stunning. Before our starter we were served a beautiful onion soup with pine oil, followed by the most amazing brioche buns! We added the cheese course to our 3 course tasting menu. A very special evening. Thank you! 5*

    Fantastic, very personable, service, including from the chef and sommelier as to the food and drink. Food such an interesting mix of flavours and textures - really appreciated every forkful. Very glad we went for the wine pairing which was really interesting and appropriate and gave us experience of wines we'd never had before. Great value for a special meal out. Would definitely recommend.

    Having eaten in great restaurants this was a brilliant surprise. Some of the best food we have ever tested and locally sourced!! Amazing. Go there if you can.

    The Cardinal tasting menu experience was a great treat. Each course was delicious and the knowledgeable staff provided information on the origination of the ingredients and overall expectations for the dish. The space is lovely and the serving ware is a fantastic added touch.

    Tucked away down a quiet street off Dundas in Edinburgh. The restaurant is lovely and understated, the service is impeccable including the execution of the meals produced. A great experience. Well worth a visit.

    Excellent dinner experience in a restaurant that is certainlly on the way to receive a Michelin star anytime soon. The menu is focused on local ingredients and is very crative. The wine pairing had also a couple of nice different surprises and was very well conceived.
