Our tasting menu is what a fine dining tasting menu means to our kitchen team. The first three snacks come in relatively quick procession and feature flavours and textures that are exciting us right now. They're then followed by "five/six" courses that all have a story to tell and feature some of the best local and seasonal produce available to us right now.

With dishes changing regularly to showcase the best of what’s fresh and seasonal, the menu offers a balance of refinement and approachability. We’re excited to announce the next instalment of Cardinal Feast will be a collaboration with the brilliant team from Wilsons. Since opening in 2016, Wilsons has become one of the most respected restaurants in the UK, combining a two acre market garden with a commitment to small scale, regenerative farming. Led by Jan Ostle and Mary Wilson, the team grow the majority of their own produce and cook it simply and beautifully in their Bristol restaurant. Their work has earned them a Michelin Green Star in 2022 and a Michelin Star in 2025. Tomás and Jan first met cooking at a Gaza fundraiser in January at Carousel, so it felt fitting to make this a fundraising event too. Together we’ll be serving a five course menu that brings together our individual dishes with some of our favourite recipes from Palestinian cuisine. Most of the produce will come from our friends at The Free Company in Balerno. All profits from the evening will be donated to the newly opened Palestine Museum Scotland, just around the corner from us on Dundas Street, and the European Legal Support Centre, who provide legal aid for Palestinians and their advocates in Europe and the UK.
