Bu'ul is the restaurant of the Chablé Maroma hotel, recommended in the 2024 MICHELIN Guide. Its cuisine is in charge of our corporate chef Jorge Vallejo, recipient of two MICHELIN stars for his Quintonil restaurant in Mexico City.

Freshness, seasonality and personality converge on the plate at Bu'ul, with contemporary cuisine influenced by the culinary traditions of Southern Mexico, complemented by a spectacular wine list. Bu’ul is the Mayan word for "bean".

The decoration and architecture of Bu'ul is sublime, with indoor seating in a spacious, inviting ambiance featuring artistically rendered local materials, and outdoor seating serenaded by the sound of the waves.

Wow, what a delightful experience! The food was truly exquisite, hitting that perfect trifecta of sweet, tangy, and salty in just the right proportions. And the drinks? Clearly crafted by a master! Their mixologist, hailing from New York, whipped up something truly special: a churrojillo – a clever twist on the classic carajillo with a hint of spice and the delightful essence of a churro. As for the service, it was impeccable. The staff were friendly, attentive, and absolutely deserving of a 5 out of 5. Highly recommend!

After a personal escort to the restaurant from the front desk, we were greeted by name and taken to our table. Each course was served at a great pace, and described with just the right amount of detail. The team was super accommodating and patient with our limited Spanish, and the food was absolutely incredible. The tasting menu is a little pricey, but WELL worth it. I would absolutely recommend adding this stop to your Cancun/PDC Itinerary.

Bu-ul, es un lugar maravilloso con un ambiente que te ayudará a desconectarte y pasar una velada con tu pareja y amigos, la V edición de Vinos y Sabores fue única y especial, la atención de nuestro mesero Oscar, Luis Miguel, Chef Carlos Navarrete, hicieron que nuestra velada fuera excepcional, el ambiente estilo terraza y Raw bar con vista al mar nos transmitieron esa tranquilidad, la comida estuvo deliciosa y el mole rosa es una delicia para el paladar, les recomiendo mucho la cena maridaje es la dupla perfecta para disfrutar de los alimentos.

Unbelievable experience. Rarely does a tasting menu have this level of complexity and ingenuity with perfectly paired wine selections. The ambience is serene - you can hear the surf if you choose to eat outside. Service was executed with precision and warmth. 10/10 definitely worth the experience.
