About Botanist

Botanist celebrates harmony with nature, in an environment that is as rich and diverse as the terroir it represents. The experience reflects a new Pacific Northwest, one that has always been here, just waiting to be discovered.

Helmed by Botanist Executive Chef Hector Laguna, the menu represents the abundant botany of British Columbia and the Pacific Northwest, where ingredients sourced from their natural landscape are coupled with contemporary techniques; designed to showcase the best version of themselves.

Located in the heart of Coal Harbour inside Fairmont Pacific Rim, the inviting space offers four distinct areas with their own robust personalities; a bar, garden, dining room and lounge – all inspired by the principals of botany.

Came in at 1:30pm, we’re given the breakfast menu for some reason. Service was alright -wasn’t warm, maybe our waitress wasn’t feeling well.

Scent of the hotel messed up with the nature of the restaurant - or if you like to eat oak and flowers in your food, might be for you. didnt get that west coast inspiration from the ambiance’s but definitely in the food. Maybe talk about fairmont about this.

Overall maybe just not suited for us or got that “home away from home” vibe.

I absolutely loved this place. The décor was beautiful, the service excellent but personable and warm so not stuffy like in typical high end restaurants. The food was exquisite and every bite was a party in my mouth. I had the octopus chorizo starter, rib eye and gnocchi main and shared the croissant dessert and the banana mousse dessert. Everything was presented like a work of art. It is of course expensive but worth it for a special occasion or if you want to treat yourself on a date night.

Food was great but others were not enough. Tables and dishes and interiors were not matched together. I felt like I was in a restaurant in a busy Chinese city. Especially big round tables were very strange look for me. Looked like a very cheap restaurant.

The portion is relatively small compared to other populist brunch places in downtown or Yale town but the taste was really good.

Poor execution of the dishes. Tartare was overly salty, even paired with the bread. I ordered flank, which was slightly over medium rare, but edible . When I got to the vegetables, I noticed they were completely burnt on one side. However, the cooks had placed all the burnt sides face down on the plate. Friend had sablefish, but they found the fish excessively salty. Couldn't taste saffron in his mashed potatoes. House bread and butter was ok. We found the pouched egg /mushrooms ok as well. Really nice ambiance and presentation, but food not cooked well. Would not return.

Our server, who I neglected to get his name was excellent. He knew the menu thoroughly and helped with our selections. This was an annual New Years gathering, and the 4 of us raved about the food and presentation all night. Bravo!

Botanist, your food was gorgeous and delicious. So impressed by the interior décor of the restaurant and all the accessories/finishing touches on the table. The aesthetic is uniquely grand and service was impeccable. The food was up to par with the presentation, which isn't always the case. The celeriac sauce under the albacore tuna was out of this world.
The Society's favourite meal this month. Many thanks.

Tried tasting menu. Sablefish was very salty. The roster squab was half cooked. I was ok with it but my girlfriend was shock and refused to eat. I finished her dish at the end. The soup was amazing, very rich in flavour.

My Partner and I went with another couple to Botanist on Saturday night. Overall, we were very satisfied with the food, but I was disappointed with the service that we received. For the prices that this restaurant charges, I would expect similar customer service compared to a place like Hawksworth (i.e. 5+-star worthy service). It was obvious that the 4 of us were each ordering 1-appetizer and 1-entree each, but the server clearly took poor notes, and ended up serving (and charging) us 5 appetizer dishes. It would have been nice to get the pre-warning on us ordering 5 appies for a group of 4, even though each of us also ordered a separate entree also (this is just common sense).

For appies, we ordered: the burrata beet salad, scallops, tagliatelle, foie gras torchon -- and were erroneously served the watercress salad. Irrespective of the poor judgment call made by the server, we still enjoyed all five dishes very much. Following the appies, the entrees were also very satisfying (our table had 2 orders of the rib eye, the seared sablefish, and the mustard crusted chicken). I had a nibble of my friend's chicken and found it a bit dry, but the sauce was flavorful. The seared sable fish and rib eye were both very delicious and cooked to perfection.

Drinks were tasty as well, but of course overpriced for what they give you - but this is what you would expect from a place like Botanist.

Would I come back to Botanist? Probably, for the food.
Would I select the 25% tip button? No.

Service was great and quality of food was there. Beautiful presentation but definitely hotel prices. I hope they do better than Oru. I think for repeat customers they will need to make the prices a tad bit more competitive and ensure they rotate the menu regularly. Enjoyed the dinner but Vancouver is a tough fickle market.

Booked the restaurant for new years, was horrible. paid $149 per person and no discount for kids, which was fine but we got the crappiest table. after 10 mins we were finally moved but not to a window table as we requested when we made the reservation (we were probably the first family to book for that night). No server came to our table for another 15 mins. we were ready to leave but if we did, I would lose $900 for the night. So we were patient. Waiter finally arrived and got our drinks. He was really good! But the food took forever to arrive. Kids were so tired from waiting.
They shouldn't have taken our reservations if they didnt cater to families!
Breakfast was ok the next day. tables were empty but huge line up to get in. We had reservations as well but still waited about 15-20 mins to get in.
All in all, would never return. Experience might have been different if it wasn't new years.

Unfortunately, I was really disappointed with the service this time around. The first time I had dinner at Botanist with my boyfriend, we felt very catered to. This time around, I’m not sure if it was because we were a group of 7 but the service was not what you would’ve expected when paying that kind of money. There were times where our glasses were empty and we were waiting for drinks. After the main, everyone at the table was finished and had pushed their plates away and there was still a lag time for someone coming to clear the table. When people are coming in and paying $250-300 per couple, I would expect much better service than what we received. It’s really too bad, because before this, I was telling everyone about Botanist and now, I’m a little hesitant to recommend it. I will say that the food was still excellent, but the service could’ve been much better.

We've been to The Botanist twice for brunch now. We really like the food and the people who work there and the service they provide are probably the best part of the experience. The following regret has nothing at all to do with the establishment, the food or the employees but our experience was significantly and negatively impacted by the patrons sitting on either side of us who apparently think that, in order to share great food with each other in a beautiful environment, it must be done with constant use of a cell phone.
It's invasive and really distracting to the people who are capable and present enough to conduct real, self-referencing intimacy and who actually respect the ritual of beautiful food enough to not place and use computers in the vicinity of the experience. We don't really care if 80% of the dining world thinks that this is alright. It isn't.
We encourage the management of The Botanist to treat people who cannot put their sick little addictions away for the 45 - 60 minutes it takes to enjoy a meal like smokers, because they are easily as toxic. Create a separate area in the restaurant for all the addicts who have given their souls away to technology, because they don't have the ego-strength or intelligence to define themselves without it .
This way, the rest of us who truly respect and love good food, an exemplary dining experience, each other and ourselves don't have to be imposed upon and reminded of just how ignorant humanity can be these days while we're eating.

Service was excellent from the moment we got to the hostess stand. Attentive and helpful. We were seated in a round booth by the kitchen so found the acoustics very loud. Mom has a hearing aid but was unable to hear the specials but the waitress was accommodating by coming around and repeating closer to her. Food was really good, the octopus was really tasty and the rib eye was delicious with the gnocchi extremely light and pan fried very well. A burrata appetizer with beets also was enjoyed although a little bit more burrata would have been nice. The rice pudding for dessert was interesting in the flavour profile but wasn't really to our palate. Overall, really enjoyed the experience.

First visit to Botanist. We all enjoyed the small plates and main courses. They were all standouts. Nicely curated wine list as well. It all looked beautiful on the plate too. Loved the room as there are many different parts to the restaurant.
Service was not befitting a restaurant of this stature. Our server was quite indifferent, never asked about our meals at any point, and the wine glasses had run dry before being presented with the wine list. Not up to the level of other fine dining establishments in our city.

I came to Botanist with the intention of treating my mom to something special for our annual Christmas lunch together. The photos on Instagram were certainly impressive: beautiful cocktails and creative plating. However, my overall dining experience was about average. I ordered the Fish and Chips, and I can admit part of my disappointment was due to me thinking I was ordering something else I saw online, but the presentation of the food itself was SO lacking (almost unappetizing). Three pieces of black squid-ink-tempura fish, a handful of fries, container of tartar sauce...all three just plopped onto the plate. Very fast food aesthetic. The fish wasn't too bad, but the fries were dry. My mom's veal ragu was on the salty side, and again, definitely not as beautifully plated as some of the other dishes we saw (and were expecting). Nothing unique in the pasta.

Botanist is a beautiful restaurant, and maybe it was just bad luck that both of us ordered dishes that were subpar, but for the price I paid for lunch, I wouldn't recommend coming back. Perhaps we will try the dinner menu instead in the future.
