Helmed by Botanist Executive Chef Hector Laguna, the menu represents the abundant botany of British Columbia and the Pacific Northwest, where ingredients sourced from their natural landscape are coupled with contemporary techniques; designed to showcase the best version of themselves.

The service was exceptional and the ambience and design was perfect! Perfect combination of modern style but still with comfort. The food is expensive but definitely worth it as it was the best tasting chicken I have ever tasted with the perfect velvety texture. We both enjoyed it a lot and hope to be back for another special occasion in the near future!
Kitchen timing and pre-lunch drinks were completely off. However our very kind server was very generous even if there was no apology for the poor timing. The food was ok. Not bad but surely not worthy of any hype. Limited lunch menu on weekends. We’ve been there, probably won’t go back. Too many restaurants to explore!!
We recently celebrated my fathers 87th birthday at Botanist and it was a truly exceptional experience! The setting was warm and inviting, with a refreshing mix of natural beauty and modern style. The staff were attentive and personable, working together to make us feel very special. They gave my father a birthday card signed by all of the staff, as well as a complimentary chocolate tasting. The food was heavenly! Every dish was made with great care. The unique presentation and creative use of each ingredient was delicious and inspiring.
I would like to thank the staff at Botanist for treating us so well and serving up a beautiful evening for my friends and family.

Had such a nice brunch at The Botanist. The space is BEAUTIFUL and our server was so attentive, checking in throughout our meal without being overbearing. We each got a sweet breakfast which was delicious and very filling. I'll definitely try the savoury options next time!
We have been to this restaurant previously for a friends birthday so when my significant other turned 40 he suggested we go back there. His family came from England and they really enjoyed it. There was a fashion show going on so it was busy and they did miss a few details but that can happen on really busy nights. We love the food so we'll definitely be going back!
We were very excited to try the Botanist as we heard good things.
The food was great and I'll give them that, presentation and taste was great... but the overall experience was kinda ruined by the service. The server just was not accommodating, her explanations were rushed, her service was rushed, and it just didn't seem like service fitting for this type of restaurant.
Very pretentious. Woman at the next table and a little chair for her handbag. I asked about this and was told that some patrons spend $10,000 on a handbag and don't want to put it on the floor. I can see why, that is more than my last holiday. I had the lamb with beluga lentils. The meat was good quality and the presentation was nice. However, the taste was bland and unoriginal. I asked about the beluga lentils and was told that they are prepared to look like beluga caviar. Again, they lacked any real taste or seasoning. My starter was mussels. They would get a 4/10. I would not recommend this restaurant to anybody except Donald Trump. Like the food, he is overblown and pretentious.
Delicious food as always, in a beautiful plant filled setting. We had starters of watercress and goat cheese salad plus beef tartare with smoked egg yolk. Both were beautiful to look at and taste. I had main of seared Tuna which was melt in the mouth and my husband had the Char with wild rice. Both dishes tasted wonderful. We enjoyed the large selection of wines by the glass, perfect for lunch.
Our service dog in training slept under the table and was rewarded with 2 bone shaped warm biscuits which he really appreciated.
All the staff are very welcoming, the service is excellent and there is a warm atmosphere in the room.
Have experienced multiple fairmonts in the last year. I travel for the food experience. We were sat next to a table that was a foot away from our table and dreaded that the table would be occupied the whole night..
we ordered the tasting menu, which was amazing. But our server was clueless, and was not prepared for any questions about the dishes she served us. The ambience of the restaurant felt cluttered, and not as high end as I expected from staying at the pacific rim. The drink menu was also dissapointing, as I had all the drinks I wanted to try in my head but couldn't because there's was such a limited menu for the dining room. I was told tho if I sat at the bar, I could enjoy the whole selection. Overall the chef and his brigade made up for the overall feeling, with amazing flavours and food techniques..
Very disappointed by our dining experience. The chicken was good and so was the wine list. The cocktail was bad and it seemed like they did a lot of pretentious things to try to justify a clearly over-priced dining experience. Great food and great service stand on their own, and they had neither.
