Botanist celebrates harmony with nature, in an environment that is as rich and diverse as the terroir it represents. The experience reflects a new Pacific Northwest, one that has always been here, just waiting to be discovered.
Helmed by Botanist Executive Chef Hector Laguna, the menu represents the abundant botany of British Columbia and the Pacific Northwest, where ingredients sourced from their natural landscape are coupled with contemporary techniques; designed to showcase the best version of themselves.
Located in the heart of Coal Harbour inside Fairmont Pacific Rim, the inviting space offers four distinct areas with their own robust personalities; a bar, garden, dining room and champagne lounge – all inspired by the principals of botany.

Botanist Ratings and Reviews
We have been to this restaurant previously for a friends birthday so when my significant other turned 40 he suggested we go back there. His family came from England and they really enjoyed it. There was a fashion show going on so it was busy and they did miss a few details but that can happen on really busy nights. We love the food so we'll definitely be going back!
We were very excited to try the Botanist as we heard good things.
The food was great and I'll give them that, presentation and taste was great... but the overall experience was kinda ruined by the service. The server just was not accommodating, her explanations were rushed, her service was rushed, and it just didn't seem like service fitting for this type of restaurant.
Delicious food as always, in a beautiful plant filled setting. We had starters of watercress and goat cheese salad plus beef tartare with smoked egg yolk. Both were beautiful to look at and taste. I had main of seared Tuna which was melt in the mouth and my husband had the Char with wild rice. Both dishes tasted wonderful. We enjoyed the large selection of wines by the glass, perfect for lunch.
Our service dog in training slept under the table and was rewarded with 2 bone shaped warm biscuits which he really appreciated.
All the staff are very welcoming, the service is excellent and there is a warm atmosphere in the room.
Have experienced multiple fairmonts in the last year. I travel for the food experience. We were sat next to a table that was a foot away from our table and dreaded that the table would be occupied the whole night..
we ordered the tasting menu, which was amazing. But our server was clueless, and was not prepared for any questions about the dishes she served us. The ambience of the restaurant felt cluttered, and not as high end as I expected from staying at the pacific rim. The drink menu was also dissapointing, as I had all the drinks I wanted to try in my head but couldn't because there's was such a limited menu for the dining room. I was told tho if I sat at the bar, I could enjoy the whole selection. Overall the chef and his brigade made up for the overall feeling, with amazing flavours and food techniques..
Very disappointed by our dining experience. The chicken was good and so was the wine list. The cocktail was bad and it seemed like they did a lot of pretentious things to try to justify a clearly over-priced dining experience. Great food and great service stand on their own, and they had neither.
Just overall a great place and the staff were very friendly and accommodating! They were very knowledgable with the menu. I just wish some of the "bar only drinks" could've been bought at the dining tables. The one waiter/runner Miguel was spendid to talk to! Will come back again!
TOOK MY FRIEND THERE FOR HER BIRTHDAY DINNER, AND THE LADY WAS HELPING US WASNT VERY NICE TO US. SHE KEPT ON ASKING IF WE WOULD LIKE TO ORDER MORE WINE ... AS I TOLD HER TWO GLASSES OF WINE IS ENOUGH FOR ME DUE TO I HAVE TO DRIVE HOME. AFTER I SAID THAT SHE HASNT BEEN CHECKING UP ON US AND SEE IF EVERYTHING WAS OKAY, NOR IF IT WAS ENOUGH FOOD FOR US NOR ASKING IF WE WOULD LIKE TO ORDER DESSERT. I ASKED FOR THE BILL, TOOK HER ABOUT 25 MINS COME TO BRING US THE BILL AND THE MACHINE. SHE KEPT ON HELPING TWO OTHER TABLE THAT ORDER BOTTLES OF WINE. SO MY QUESTION NOW IS, WITH THE TYPE OF CUSTOMER SERVICE REGARDING HOW POORLY SHE TREATED MY FRIEND AND I, WE NEED TO ORDER BOTTLE AND BOTTLE OF WINE TO BE NOTICES BY ? I AM DISSAPOINTED WITH THE SERVICES....
My BF and I came here for our anniversary and it was so worth it. The team at Botanist knew and were so sweet (they all personally signed a card for us). The food was amazing! I am a vegetarian and the server gave me an option for the chef whip me up a dish not on the menu and I am so glad I did that. I was so pleased with the service and food that I made another reservation here for GNO.
Andrew was great with his service and knowledge about the menu. The food was excellent and the atmosphere was refined. However we were not allowed to order the specialty cocktails in the dining room, which we kind of understood. The desserts were the most confusing. The menu wasn't that easy to imagine as the desserts were too special. I think we were expecting something classic.
The servers were all EXCEPTIONAL!!! They were very friendly, attentive, engaging, knowledgeable, fun, and accommodating. They added to our amazing first experience at the Botanist. The food surpassed our already high expectations in every way... creative and unique flavours and dishes. The cocktail menu was also equally creative, unique and the cocktails delicious! The whole concept and theme of “botany, botanicals, botanist,...” is so clever and well-done, that it added to the fun and flavourful experience. We were sat in the VIP section and we were treated like royalty. The staff went above and beyond to make us feel valued, appreciated and well taken care of. I dine out all the time and have for many many years and this was one of the top experiences I’ve ever had! Way to go team Botanist!!!!
Botanist is an absolutely stunning restaurant. The decor and ambience reminds me of California with the greenery and airy vibes. Not to mention the amazing live music (Adam Thomas Duo were playing when I dined at Botanist).
The portions are appropriate for the price point and every dish was well made, highly recommend the roasted lamb. The entrees are hearty in flavour but not in size which is refreshing. If the dish is made well, you won't need a large portion of it!
Tonight we had my husband's birthday dinner at botanist. Upon arrival the hostess gave my husband a birthday card that was signed by staff, which is a nice touch. Service was amazing - I had a long list of dietary restrictions due to medical condition and my server Avital and kitchen team went above and beyond and made huge modifications to make sure there was an appetizer and an entree that I can enjoy. I truly appreciate the accommodation and will definitely be back again!
Came here for an anniversary dinner with my boyfriend. We sat down in a secluded area with 3 other tables-- exactly what we wanted.
Service started off okay, waitress didn't fill our water glasses until 10 mins after our drinks arrived but we shrugged it off-- it was probably a busy night.
The food was fantastic. Delicious and perfectly cooked. Slightly smaller portions than what we were expecting for the price.
Since we sat in the corner we could see the waitress servicing other tables. We were checked on once and our water was refilled once. Other tables were checked on at least 3 times in the same time span as us. We found it odd but again, gave her the benefit of the doubt.
When we finished our meal we were waiting on the waitress to come and clean our plates and offer us the dessert menu. 15 mins we waited with no service. In those 15 mins, again, the waitress services the 3 tables surrounding us but ignores our table full of empty dishes. Eventually, one of the managers came by and cleared our plates. Waited another 6-7 minutes for her to come by with the dessert menu but we soon got tired and just flagged her down for the bill. She soon comes back with the credit card machine when she saw my boyfriend take out his credit card (mind you this is the fastest service we've received all night), inputs the total, and roughly drops it in front us. We were both taken aback by the loud and rude gesture. To top it off, while we were paying, she never once asked us how our meal was nor said thank you for coming, leaving this awkward silence in between.
Hesitant to come again and recommend the restaurant to others. It was a delicious meal but for the price that we're paying, I shouldn't need to constantly look for the waitress just to get a water refill. In the end, the service we've received really ruined an exceptional dinner and put a damper on our special night.
