We came for our anniversary and it was a wonderful night. I think the wine pairings on the tasting menu was over priced, you are better off buying a nice bottle of wine, Bc the pours are tiny.
I would definitely recommend a visit, the food and service were excellent.

I was really looking forward to trying the Botanist, particularly their experimental cocktail series, which has been featured in most reviews and media coverage. Although they really need to specify on their website that these particular cocktails are ONLY available at the bar, as I only managed to find one article that mentioned that. We opted to go for their tasting menu and hit the bar afterwards to try the Candy Cap Magic. They informed us it was a 6 course tasting menu that would take 2.5 hours, which we were fine with as it sounded well paced. However, the courses came out far faster than advertised, about 1 hour faster, and we felt they could have allowed more space between courses. There were some delicious dishes that were poorly plated, and very well plated dishes which fell flat, such as the carrot salad which had a toasted marshmallow on it.... Which we felt did not belong either on it's own or as a component of that dish, as the flavour was a complete outlier. After a so-so meal, we headed to the bar to end my birthday celebrations with their Candy Cap Magic cocktail, only to be told they didn't have the ingredients for it. The other cocktails didn't appeal to me, so instead, I left disappointed. But given the hit and miss nature of the meal, it's possible I would have been equally as unimpressed with their $30 cocktail, so maybe the universe saved me some money that evening.
I wen there with my friend while visiting Vancouver for the weekend! It was absolutely incredible. The service, the food, the presentation, the drinks and the atmosphere were TOP NOTCH! Would 100% go back here in a heart beat.
The food was good, but for $40 plus plates we expected to be wowed more or at least be a memorable meal. Sadly that wasn’t the case. Service was a little slow and the timing of drinks and dishes seemed off. Again for the price we expected a much better experience.

Prettiest dining room I've ever experienced, that it made up for the average food that came along. The food was not out of this world, but definitely good enough to come here and grab a bite to eat and enjoy the atmosphere!

My boyfriend and I chose this as our first date night in Vancouver. This was by far the best meal, cocktails (for any gin lover, you need to try the B&T) and service I have ever encountered. I will be making a reservation at Botanist every time I am in Vancouver.
We had the Scallops, Lamb and Rib Eye and they were so wonderfully delicious and full of excitement in every bite. Also indulge in their cocktails especially Poetry In Motion.
Botanist definitely lives up to its name with the outdoor solarium brought indoors. The food was also excellent.
The services was really poor. Waiting over 15 mins for the server comes and over half hour to complete our orders. We asked for water, she brings a pot of boiling water, without drinking cups. Overall, if the server get more training, the restaurant I may visit again.
The food was great. The ambiance was amazing. I only have one complain. The waitress wasn’t as friendly. She made us uncomfortable with her attitude. She barely smiled and even if she did it was a fake smile ( very obvious). For me having a sweet nice server is one of the most important part of dinner.
I have been to Fairmont lobby lounge few times and servers there are beyond amazing.

Our first time at Bontanist and we were not disappointed. Really nice folks and excellent food. We rec'd a hand signed anniversary card to start and then excellent and friendly service with very high quality and interesting food. My wife had the lobster dish which she remarked as being one of the few times she's had lobster where she didn't think the lobster was tough. I had the duck breast which was amazing. One of the tastiest morsels I've ever placed in my mouth. Highly recommended.
Visiting for few days and since we consider ourselves foodies we decided to try this restaurant for dinner. Beautifully decorated in calm nature ambiance but open area dining can get loud as no absorption of the noise fro conversations. There are separate closed door rooms for larger parties which is nice to have if needed. Service was attentive. Couldn’t here the piano nor singer due to overwhelming noise Menu is limited but playing was artfully beautiful however the amount of food served is small and price is way up there for what you get. Dissapointed
Great experience. My wife and I loved the mid-century modern feel and our waiter had the best demeanor. We went to celebrate my birthday and the staff wrote a happy birthday card to me. Loved the attention to detail.

The food was, in general, quite delicious. However what I ordered wasn’t to my own preferences. Though not the fault of the restaurant, our server was so kind to have taken care of it for us; I really appreciated their service.
Partner and I ordered tasting menu and wine pairing. The Sommelier was knowledgeable and engaging. Our server, Chris, was attentive and accommodating. Live music was fun and never overbearing. Our table faced the kitchen, which my partner found distracting; however, there were many other lovely seating options.
Food was delicious. I give it 4 stars because we were both underwhelmed by the halibut plate.
While we have had more memorable meals at this price point, the dinner was a success and we both thoroughly enjoyed our experience.

Omg ! This place is incredible. First of all their ambiance is beautiful. Feels like your in heaven. The service was excellent. I ordered the crab and avocado Benny and holy moly ! This is by far the best I ever had. The place is located at the Fairmont Pacific Rim hotel which is also beautiful. Amazing amazing amazing! A must if you are visiting Vancouver.

While the food was good, the ambiance is cold and a bit pretentious. The food is overthought and desperately nouvelle cuisine. A good place to impress a boss, but not a place to have a comfortable meal.
What a delightful dining experience! My friend was having his birthday celebration and the restaurant was extremely attentive and went well above and beyond recognizing this event. The quail egg appetizer was incredible! The sable fishNd the halibut were cooked to perfection! The service was impeccable! There is a reason why this restaurant is number one in Vancouver!

The mushroom tagliatelle was delicious, as well as the rib eye.
However, the lamb I ordered to be cooked medium rare came out medium well to well done, way overcooked and very disappointing, the watercress salad was also lackluster.
Botanist is absolutely stunning! The team has put together a thoughtful, creative, scrumptious experience. From the finest of details, to ambiance, to deliciously crafted meals Botanist was the best brunch experience I've had in Vancouver. No wonder it's won so many awards in such a short amount of time. The garden room feels like you're dining in an elegant jungle, and the details leave you in awe. We went for an early mother's day experience and can't wait to return to experience the cocktails and dinner.

We had made a reservation on advance to celebrate my wife’s 60th birthday based on the reviews and appearance of the restaurant in the photos. On our arrival we were politely greeted and coats checked and seated at a table for two. The first thing we noticed was an extremely loud sound level in the restaurant, due to hard surfaces and also the live hotel style music. We found the menu to be interesting, we tried some of the custom cocktails which were quite good as was the signature bread. On the menu you only have a choice of an appetizer and the main or a tasting menu, so we opted for the foie gras and then my wife had the ribeye and I had the sablefish. Here is why our rating is only three for the food even though everything but the steak was well presented and had good flavor. Her ribeye looked like a London broil a.k.a. a top sirloin cut and had no marbling and was chewy. For $49 for the entrée this was really unacceptable. We did ask if this was indeed the ribeye and we were told yes. We do not believe that was true, as we order ribeye on a regular basis and this was not one. Again everything else including the two desserts that we chose were wonderful, and we really appreciated the personal birthday card signed by the staff presented to my wife. The steak is the only reason why we cannot give it a higher rating. Total meal with tip ran over $300 Canadian, about $70 of that was alcohol. At this price level our expectations are high and were only partially met.
I found the food a but fussy. The basic ingredients are top quality, but the accompanying sauces and garnishing are rather overwrought, as if the kitten tries to hard to impress with exotic ingredients. That said, mt scallops and duck breast were cooked perfectly. Portion sizes were very good for an upscale restaurant, which is my writing means that they were a moderate size to serve one person at dinner with out being meant to fill a "doggie bag" for a second meal at home.

Very tasty food, interesting environment (being in a hotel) and exquisite service
I wanted to love it, but it just wasn't good enough. The $25 cocktails in the lab sounded adventurous and different, however they were a huge letdown. I'm all for experimenting and pushing the limits, but it has to taste good as well. The tasting menu was just o.k.
My wife and I dined on Saturday, 1pm, in the Garden Room, which has no view of the water, yet is quite attractive and relaxing. The Garden of Quarth cocktail is both smoky and fruity, & contains fennel. It works. I recommend it. Those appetizers/small plates on lightly toasted bread come on thick slices with fresh, chewy crusts. The veal bolognese is hearty yet not overly salty. The french toast uses a brioche so the flavor of the carmelized bananas comes through.
