Enjoyed a very nice meal at Botanist for an early Valentine's Day. Fresh local ingredients used, and beautiful presentations, without being in your face about how local they are. They just let you enjoy the beautiful presentations. Quantities are adequate to good, and didn't leave hungry. Good attentive service. Would have liked more chocolate options on the dessert menu (Chocolate comes from a plant, right?) Would come back again for a special dinner
I went to Botanist yesterday for dinner and had an incredible experience. The restaurant is beautiful, the service is top notch, and the food delicious. They even gave me a birthday card signed by the staff. My husband said his lamb entree was the best lamb he’s ever had and my sablefish was perfect.

Extremely impressed with the high level of professionalism and service both before and during our meal. I'm on a 30-day diet so I contacted the restaurant ahead of time to see if they could accommodate. They were friendly and helpful with their menu item suggestions. Our hostess and server were both friendly and very informative. Only downside is that they charge hotel prices for things like pop/soda water ($5) /tea/coffee ($6). Something to keep in mind if you're the DD, pregnant or not wanting to try one of their fantastic wines/cocktails. Definitely a must try!
Came in at 1:30pm, we’re given the breakfast menu for some reason. Service was alright -wasn’t warm, maybe our waitress wasn’t feeling well.
Scent of the hotel messed up with the nature of the restaurant - or if you like to eat oak and flowers in your food, might be for you. didnt get that west coast inspiration from the ambiance’s but definitely in the food. Maybe talk about fairmont about this.
Overall maybe just not suited for us or got that “home away from home” vibe.
I absolutely loved this place. The décor was beautiful, the service excellent but personable and warm so not stuffy like in typical high end restaurants. The food was exquisite and every bite was a party in my mouth. I had the octopus chorizo starter, rib eye and gnocchi main and shared the croissant dessert and the banana mousse dessert. Everything was presented like a work of art. It is of course expensive but worth it for a special occasion or if you want to treat yourself on a date night.
Poor execution of the dishes. Tartare was overly salty, even paired with the bread. I ordered flank, which was slightly over medium rare, but edible . When I got to the vegetables, I noticed they were completely burnt on one side. However, the cooks had placed all the burnt sides face down on the plate. Friend had sablefish, but they found the fish excessively salty. Couldn't taste saffron in his mashed potatoes. House bread and butter was ok. We found the pouched egg /mushrooms ok as well. Really nice ambiance and presentation, but food not cooked well. Would not return.
Botanist, your food was gorgeous and delicious. So impressed by the interior décor of the restaurant and all the accessories/finishing touches on the table. The aesthetic is uniquely grand and service was impeccable. The food was up to par with the presentation, which isn't always the case. The celeriac sauce under the albacore tuna was out of this world.

My Partner and I went with another couple to Botanist on Saturday night. Overall, we were very satisfied with the food, but I was disappointed with the service that we received. For the prices that this restaurant charges, I would expect similar customer service compared to a place like Hawksworth (i.e. 5+-star worthy service). It was obvious that the 4 of us were each ordering 1-appetizer and 1-entree each, but the server clearly took poor notes, and ended up serving (and charging) us 5 appetizer dishes. It would have been nice to get the pre-warning on us ordering 5 appies for a group of 4, even though each of us also ordered a separate entree also (this is just common sense).
For appies, we ordered: the burrata beet salad, scallops, tagliatelle, foie gras torchon -- and were erroneously served the watercress salad. Irrespective of the poor judgment call made by the server, we still enjoyed all five dishes very much. Following the appies, the entrees were also very satisfying (our table had 2 orders of the rib eye, the seared sablefish, and the mustard crusted chicken). I had a nibble of my friend's chicken and found it a bit dry, but the sauce was flavorful. The seared sable fish and rib eye were both very delicious and cooked to perfection.
Drinks were tasty as well, but of course overpriced for what they give you - but this is what you would expect from a place like Botanist.
Would I come back to Botanist? Probably, for the food.
Would I select the 25% tip button? No.
Service was great and quality of food was there. Beautiful presentation but definitely hotel prices. I hope they do better than Oru. I think for repeat customers they will need to make the prices a tad bit more competitive and ensure they rotate the menu regularly. Enjoyed the dinner but Vancouver is a tough fickle market.
