Helmed by Botanist Executive Chef Hector Laguna, the menu represents the abundant botany of British Columbia and the Pacific Northwest, where ingredients sourced from their natural landscape are coupled with contemporary techniques; designed to showcase the best version of themselves, making people go to the gathering place for our culinary community.
Located in the heart of Coal Harbour inside Fairmont Pacific Rim, this casual fine dining restaurant offers four distinct areas with their own robust personalities; a bar, garden, dining room and lounge – all inspired by the principals of botany.

We had the weekend brunch. It was so delicious. And their drinks have so much alcohol we got drunk. The service is really good and you really feel you're eating in a luxury hotel restaurant. The only problem with ambience is being so close to the kitchen. It doesn't feel really high class to look into a kitchen. I would go back. The price was worth it.

From the beginning to end of our dinner, the staff made us feel welcome and safe. Larry was a very patient and kind server; Stephanie was so friendly and went above and beyond with explaining our wines. The tasting menu was delicious and beautiful. Thank you for a great evening - we want to come back with more people once we can!

Awesome food, tad bit salty for my taste but the balance of the flavour is top notch. With no exaggeration, food here is as best as it gets in Vancouver. Service of the servers are good-average but the asian guy in glasses (he looked like the manager) has over the top customer service.I love it here because of the airy ambiance which is always kept consistent even with the holiday rush.
Very open space, protocol in place, you feel secure and the greenery makes you feel in a winter garden.
Hugo, attention to detail and professionalism, the best service we had in Vancouver for long time, however the female servers need more training.
Brunch menu: the steak tartare like in Paris, eggs benedict close to perfection.

Food is fresh with very creative presentation
Food was incredible as expected! The ambiance was stunning and unique! However, our server was quite dismissive and not welcoming. I went with my partner for her 30th birthday because it is one of her favourite places and we experienced a lack of fine dining service.
We were looking forward to trying new cocktails but unlike the table next to us that was offered last call, that courtesy was not extended to our group. Instead our drinks were whisked away. It made us uncomfortable and so we did not stay for dessert. When it came to ordering our meal, my friend wanted the burrata salad, to which the server responded curtly, “that’s all you’re getting.” (She has various food limitations and love of burrata so she is careful when ordering). We also were not checked on when food did come which is an expectation at any restaurant. I felt like I needed to bring this up because we were all excited to either return or try The Botanist for the first time and I don’t know if we would return.
Amazing food, we did the tasting menu paired with wine and it was unreal. I couldn’t have enjoyed myself more. Will be going back again.

Arrive early and enjoy a uniquely crafted cocktail at the bar. If you are in the mood to be truly spoiled, indulge in the chef's tasting menu with wine pairings - it will not disappoint!
The tasting menu was great value, dishes were well creative, well composed, and consisted of great ingredients that highlight the Pacific Northwest. One standout dish was the beets with nori and XO sauce. Great service throughout the night and a wonderful sommelier who educated us on the wine we were drinking.
it was our first visit to botanist and it was amazing. all the staffs were friendly and helpful.
Went there for brunch, post covid-19.
The service was fantastic. The food and mixology was excellent. The fact that it's reduce capacity was nice, because tables were spread apart which provided added privacy. Noise level is as expected, don't expect quiet.
